Dhaba style Aloo paratha recipe

Dhaba style aloo paratha recipe, with video and step by pictures, potato stuffed popular punjabi Whole wheat flat bread recipe. I have shared aloo paratha recipe long back and as much as i love to eat parathas, i love to cook them too. I love all stuffed parathas and i have good memories of eating hot parathas smeared with generous amount of butter in road side dhabas. Though i make good aloo parathas, somehow never got the taste of the ones i have tasted in the road side dhabas. Recently when i was running late in the morning, i made this potato filling, with the ingredients available in hand. Also usually i saute the stuffing and cool before making it, but this time made it just by mashing the cooked potatoes. Wow! the very first bite took me back to the parathas i tasted on the Highways from Delhi to Haridwar. I don't know the authentic way of making the punjabi dhaba style paratha, but the one i am sharing will definitely bring in that taste. So ahead and make the Aloo paratha and do let me know how it turned out.

Palak paneer paratha recipe

Palak paneer paratha recipe with step by step pictures, dough made using palak puree and scrambled paneer stuffed inside the paratha. Those who are reading Jeyashri's kitchen for a long time, know my love for parathas. I love to have it any time of the day. Palak and paneer is a wonderful combo and i have posted palak paneer recipe and also palak paneer biryani recipe too. Many times i wanted to post the recipe of this palak paneer paratha, but somehow it never happened. Few days back i got a bunch of palak leaves and fresh paneer tried at home. Kids loved this palak paratha. If you are looking for some recipes with palak, then try this paratha or give and attempt to make my palak puri recipe. I made it as a no onion no garlic version. You can add onions to the paneer stuffing and add some more spices of your choice too. Do try this and let me know how it turned out.

Zucchini paratha recipe, Paratha recipes

Zucchini paratha with step by step picture, no onion no garlic paratha recipe, an easy to make Indian flat bread. I usually make it by squeezing the excess water from the vegetable and add it to the atta and make the dough. Recently when i visited my friend's place for lunch, she made lauki paratha. She told she made it just by adding the lauki into the flour, without squeezing the extra water. It was very soft and it tasted so yum. I just casually tried the same with zucchini last Sunday for breakfast. It turned out very well.
I realised the key is to just add very few drops of water to the dough, which helps in making a non sticky dough. Since it is a no onion no garlic paratha recipe, i thought i will share this during this time. Check out our Complete collection of No onion no garlic recipes.

Schezwan Paneer Paratha recipe

Schezwan paneer paratha, paneer cooked in schezwan sauce stuffed inside paratha. Recently i tasted Schezwan paneer in a restaurant here in Singapore and wanted to try that at home. But always making of Schezwan sauce is a lazy thing for me, yes the garlic chopping part is the laziest one for me. Finally few days back i overcome my laziness and made this Schezwan sauce in a bulk quantity. Yes my kids love the flavour of schezwan sauce so i made little extra so that i can make fried rice nd noodles for them. I first wanted to post Schezwan paneer tikka but then later felt, stuffed paratha will be more flavourful and kids also will enjoy it after they come back from school. So tried Schezwan paneer paratha and it turned out so well and being a ardent fan of parathas i just finished one paratha immediately after clicking the pictures. Peas Paratha recipe| Matar Paratha

Peas Paratha | Peas stuffed paratha,with green peas and fresh masala powder. Peas paratha i have tried many years back but some how didn't like the way i made,and after that i have never attempted to make Green peas paratha. Few months back, when we organised a meet up,we ordered Peas Kachori from a friend here. It was so awesome and when i asked for the recipe, she passed on a box of peas filling which she made,to me. I tried Paratha with that filling and it tasted so yum. Later i got the recipe from her and finally today i tried Peas paratha following her recipe. She told that this is basically a Bengali peas kachori filling recipe, which she learnt from her friend's mother in law. I loved the aroma of the freshly spice mix used in this paratha. Check out my

Peas Paratha recipe

  Preparation Time : 10 mins | Cooking Time : 25 Mins |Serves: 5 parathas

     Green peas  1/2 cup
     Turmeric powder  1/4 tsp
     Salt as needed
     Sugar  1/2 tsp
     Oil  2 tsp
     Green chili  1
     Ginger  a small piece
     Atta | Whole wheat flour  1 cup 
    Ghee or oil  to smear on the paratha
     Asafoetida  1/4 tsp
For the spice mix
    Red chili  2-3
    Cloves   2
    Elachi | cardamom  1
    Coriander seeds  2 tsp
    Cumin seeds  1 tsp 
    Fennel seeds | sombu  1 tsp
    Cinnamon  a small stick
Method:
  • Knead the dough and keep it aside. Divide this into lemon sized equal dough balls.
  • I used frozen peas. If using fresh peas, pressure cook for 2-3 whistles. Drain the water completely and keep aside. Let this cool completely.
  • Dry roast the coriander seeds,red chili,cumin seeds,cinnamon,cloves and cardamom for few minutes in a low flame.
  • Switch off the flame and add the fennel seeds.
  • Allow this to cool.
  • Grind this into a powder. This powder only we are using as Paratha masala. It yielded 4 tsp of masala.
  • Grind the peas, green chili and ginger into a coarse paste.
  • In a pan add 2 tsp of oil and add asafoetida. Now add the coarsely ground peas mixture.
  • Add 2-3 tsp of the spice mixture, the parantha masala, turmeric powder and salt.
  • Mix well and cook till the mixture becomes dry.
  • Switch off the flame and let this completely dry.
  • Take one dough ball and dust this with dry flour.
  • Roll this into a thick disc.
  • Place 1 tblsp of Peas mixture on this.
  • Cover this as how we do for modakam,by bringing the edges together.
  • Dust this in the dry flour and roll this gently into parathas.
  • I always love my parathas bit thinner, if you want this thick roll accordingly.
  • Heat a tawa and cook the paratha on both sides. 
  • Smear oil or ghee on both sides.
  • Serve hot with plain yogurt.      
   The filling was perfect for 5 parathas. I was left with one dough ball. So you can add 2 tblsp extra peas to make the filling more for that extra dough.

  • I used frozen peas. If using fresh peas, pressure cook for 2-3 whistles. Drain the water completely and keep aside. Let this cool completely.

  • I added 3 tsp but felt it was bit more. So reduce to 1.5-2 tsp.
  • Mix well and cook till the mixture becomes dry.
  • Switch off the flame and let this completely dry.

  • Take one dough ball and dust this with dry flour.
  • Roll this into a thick disc.

  • Place 1 tblsp of Peas mixture on this.
  • Cover this as how we do for modakam,by bringing the edges together.

  • Heat a tawa and cook the paratha on both sides.

Notes:
  • The same can be made as kachori. For making kachori, check out my Dal kachori recipe for the outer cover.
  • I made this peas paratha slightly spicy, if you want this mild spice, add 1-2 red chili or skip the green chili.

Beetroot Thepla recipe

 Thepla is a traditional Gujarati dish and i have posted a Methi thepla recipe long back. Recently when i learnt the Gujarati Methi thepla recipe from our Gujarati friend(who gave me the recipe of Bajra vadi). The interesting part in this recipe adding cooked rice to the dough. She said that it brings softness to the theplas. I wanted to make it as a beetroot thepla, so followed the same recipe by adding some grated beetroots to that. They turned so well and since we all love beetroot, we liked the theplas so much. Try this beetroot theplas at home and let me know how they turned out.

Ajwain paratha | Easy paratha recipes

Ajwain paratha, is made with whole wheat flour and ajwain | omam in Tamil |carom seeds. It is a very simple North Indian paratha, can be made for breakfast or lunch or even dinner too. A perfect one to pack for Lunch box too. Last week, while i was busy with Diwali preparations, saw this ajwain paratha in Veggie wok's Instagram story. It was super tempting and i decided to make this soon. Finally today before making this ajwain paratha, cleared my silly doubts with anamika and made the parathas. Me being a huge fan of parathas, loved it and the ajwain flavor complimented the paratha well. Check out my


Ajwain paratha

  Preparation Time : 10 mins | Cooking Time : 20 Mins |Makes: 5

     Whole wheat flour| atta  1 cup
     Salt as needed
     Oil  few drops
     Ajwain  1 and 1/2 tsp
     Red chili powder  1 and 1/2 tsp
     Ghee or Butter   as needed (to make parathas)
Method:
  • In a wide bowl add the wheat flour and little salt. 
  • Add water little by little and make a soft dough.
  • Divide this into equal big lemon sized balls.
  • In a bowl mix the red chili powder with 2 pinches of salt and mix well.
  • Take one dough ball and dust it with dry flour.
  • Spread this into a roti.
  • Add few drops of ghee on this and spread it.
  • Sprinkle red chili powder and spread it on the rolled roti.
  • Sprinkle some ajwain on this and press it gently with your fingers.
  • Fold this into a semi cirlce and then bring both the edges together.
  • If you want to make it as a square paratha follow my masala square paratha recipe.
  • Dust this with atta and roll it into a triangle roti. 
  • Heat a pan and cook the rotis on both sides and drizzle with ghee or a dollop of butter.
  • Cook till you see nice golden brown spots on both sides.
  • Repeat this for the rest of the dough.
  • Serve with plain yogurt or some pickle.
  • You can have this ajwain paratha with tea /coffee too.

  2. To make it very simple, knead ajwain and red chili powder to the dough and make the parathas.

Masala paratha recipe | Square paratha

Parathas| Indian flat bread, those who know me personally, will vouch my love for both cooking and eating parathas. . As such i am a great fan of one pot meal and to me Paratha is a also an one pot meal😋. When i posted the triangle paratha, i wanted to try out the square paratha. But somehow missed it. Last week when i was scrolling in Instagram, i happened to see this masala square paratha in a restaurant page. This paratha can be packed for lunch box too as it stays soft even after few hours. So finally i tried this today for my breakfast. You can have this for lunch or dinner too.  I have posted this Square paratha recipe with a quick video, so that it will be easy for beginners to get the shape.

Pumpkin paratha recipe | Paratha recipes

Parathas are Indian flat bread generally made by stuffing veggies like aloo, cauliflower or paneer and  many more. I recently came across a tarla dalal book in my friend's house and had a glimpse of the pumpkin paratha in one of the pages. I got the idea of making pumpkin idea from that and the casual watching of Venkatesh bhat show yesterday, for few minutes gave me few more inputs. So i made this Pumpkin paratha last evening. Pumpkin paratha is the best way to make the kids eat pumpkin without any fuss. The addition of mint leaves, spices makes it more tasty and a simple spiced yogurt will make a good accompaniment to this paratha.

Mexican paratha | rajma cheese paratha is a kid friendly easy lunch box recipe. Even this can be served hot, when the kids are back from school also. i have used the same filling for making a wrap, when i did a cookery show in London. Now wanted to try out paratha with the same filling , so made it today for my lunch. Also the kids when they come back from school, will have this yummy cheesy paratha. Mango parathas

Mango paratha is a interesting recipe which flashed me, while i was having my lunch with my friends yesterday. We went out for lunch yesterday in Kailash parbat restaurant here, and they have a wide variety of fresh mango recipes in their menu card. Being a hardcore fan of mangoes, i was simple gazing at the list and one of my friend ordered a mango drink from that list. Though it is a juice, they added little crushed cumin seeds in that. I tasted that and was quite impressed by its taste. On our way back picked up of big bag full of mangoes and today morning, with my own creativity, did this simple mango paratha. Gobi Mutter paratha recipe | Spicy Peas cauliflower paratha

Punjabi Gobi mutter paratha is made with cauliflower and green peas. I have already posted gobi paratha, but wanted to post this winning combo of gobi and mutter. Since both cauliflower and peas are in season now, i thought it would be the right time to post this recipe. I made this bit spicy and flavourful by adding tomato puree and chili powder to the dough. The parathas turned out awesome and i packed few for my kids lunch and the i had also for my breakfast along with masala chaas. Do try out this paratha and let me know how it turned out. DAL PARATHA RECIPE | EASY PARATHA RECIPES

Dal paratha is yet another easy stuffed paratha which i tried recently. Last week when Suresh was out of town . I packed  pasta for kid's  lunch box and was thinking what to cook for me for lunch. I don't have any proper veggie at home too and lazy to go out and buy too. Suddenly this dal paratha idea flashed me . Since it was raining wanted to have something spicy too. PALAK LACHHA PARATHA RECIPE | PALAK PARATHA

When i bought a bunch of spinach last week, i wanted to try Palak paneer paratha. But last minute i noticed paneer was very less and was in no mood to make paneer at home too. So thought i will make palak phulkas and ended up with making lachha parathas. I have already posted laccha paratha recipe. You can also make palak poori also with the same dough. Try Palak paratha at home and shre with me how it turned out. You can make this as plain parathas too instead of lachha paratha.

SWEET CHAPATHI RECIPE| TRIANGLE PARATHA

Chapathi, my mom used to make it very rarely when we are kids. Dosa will be the most  made tiffin at home and we all enjoy dosa like anything. Chapathis amma will make once in a month when she has off day. Though appa is diabetic, she makes more of Godhuma dosa , also he doesn't like chapathi much. Even if she makes chapathi,veg kurma will be the only side dish she knows to make and later she learnt channa masala from my athai. Sometimes she makes simple onion tomato gravy or coconut chutney too. We used to scold her if she makes coconut chutney for chapathi. But nowadays i like that combo.  But whenever she makes chapathi, she makes this sweet chapathi for us and it is our most favourite one too. My paati makes this sweet chapathi in triangle shape and mom do it in round shape. My mil makes regular chapathi like triangle parathas and later we changed it to phulkas as they are healthy.
 Few days back when me and my hubby were talking about the childhood food memories, we both remembered about this sakkara chapathi . So i thought i will post this recipe here. SEV PARATHA RECIPE | PARATHA RECIPES

Parathas are always loved by al at home. I normally make aloo paratha for kids lunch box or even for dinner. This sev paratha recipe i have seen in chef at large forum in facebook. The paratha recipe was posted by a blogger. I tried this few months  back. Today when i saw little sev left over in the packet i thought i will make this paratha and post it here. This tasted very awesome. A spicy paratha with a glass full of punjabi sweet lassi was my lunch today. I adapted the recipe from here. Even if you don't have any veggies at home, you can make this sev paratha at home.

CORN CHEESE PARATHA | EASY PARATHA RECIPES

Corn and cheese is always a winning combo and i already posted corn cheese balls recipe but this corn cheese paratha i gave for Kungumam Thozi magazine. It got published in first week of March. Parathas will be in the lunch box menu of kids every week. Mostly i make aloo paratha or gobi paratha for them. When i made this one day for dinner both my kids loved it and requested to make the same for the lunch box too the next day. Liking a same dish by both kids is not easy at my home. I think moms with 2 grown up kids will vouch for it. Try this easy paratha recipe at home and i am sure your teenage kid or the little one will enjoy this corn cheese paratha.

RAGI ALOO METHI PARATHA | MILLET RECIPES

Ragi also called as Kezhvaragu in tamil | Finger millet in English , is an easily available millet everywhere. Generally my mom makes puttu with ragi and also dosai and adai too. Though i have tried these all, wanted to try something new with ragi flour. This ragi aloo methi paratha i have tried for the mangayar malar book . Ragi is an excellent source of calcium and very good diabetics. It is a very good source of iron too. You can make this as a stuffed aloo paratha too.

PIZZA FLAVORED PARATHA | PARATHA RECIPES

Pizza flavored parathas, the thought just flashed me when i was cleaning my freezer. I saw some sun dried tomatoes lying in my freezer and was thinking to make some savory buns using that. Then suddenly this idea of making pizza flavored parathas flashed me and tried it the next day. It turned out quite well and i am sure kids will love this for sure. For a change from regular parathas, you can give this for kids lunch box. Somehow i felt while writing this Sour cream dip will pair with this paratha very well.

Plain-paratha

   As South Indians, we always make idli, dosa, upma for breakfast but parathas rarely take place in our menu for breakfast. Some times when i make aloo paratha for kids lunch box and keep the same for me for breakfast. During our trip to Delhi, ( i know i am talking too much about the trip, please bear with me) we happened to have parathas for breakfast on most of the days. But we all enjoyed as whenever we go for an international holiday we end up eating cornflakes, bread and juice for breakfast. Few years back when we go for a North India trip we hunt for places to have South Indian food , but now a days Indian Vegetarian food is more comfortable for us ,especially for me. These plain parathas i have added in my last week's cooking for guests menu. So if you have guest, you need not not make lot of chapathis, just few parathas you can make as they are thick.
