New Year Eve is around the corner and in most of the Indian homes we plan for some family get together, potluck parties with friends. It's always fun to have friends and relatives around on the New year's Eve and share the joy with them. Many of us plan for potluck ideas and we have a huge collection of wonderful party recipes in Jeyashri's Kitchen. Easy eggless Chocolate pancake recipe with video and step by step pictures, pancake made using whole wheat flour and cocoa powder makes a perfect kids friendly breakfast recipe. I have shared this recipe in my Kutties kitchen cook book. This pancake is always a super duper hit recipe in our house. I have shared the recipe using plain flour| maida in the cook book, but tried using whole wheat flour in this recipe. Only thing i need to add is extra little water for mixing as the batter was bit dense. The pancakes turned out so fluffy.

I have been thinking to post some cookie or cake recipe before Christmas, finally decided to post this Oats cookies recipe, which is a super hit at home. I have bookmarked this recipe long back from here. I got a pack of Gula melaka, a Malaysian palm sugar, from my friend. I decided to use it up for this Oats cookies recipe. It turned out so well and kids enjoyed it a lot. The addition of choco chips in this Oats cookies makes kids friendly too. Palak paneer paratha recipe

Palak paneer paratha recipe with step by step pictures, dough made using palak puree and scrambled paneer stuffed inside the paratha. Those who are reading Jeyashri's kitchen for a long time, know my love for parathas. I love to have it any time of the day. Palak and paneer is a wonderful combo and i have posted palak paneer recipe and also palak paneer biryani recipe too. Many times i wanted to post the recipe of this palak paneer paratha, but somehow it never happened. Few days back i got a bunch of palak leaves and fresh paneer tried at home. Kids loved this palak paratha. If you are looking for some recipes with palak, then try this paratha or give and attempt to make my palak puri recipe. I made it as a no onion no garlic version. Methi matar pulao, easy pulao recipes

Methi matar pulao recipe with video and step by step pictures, pulao made with methi leaves and green peas, a perfect one pot meal and and ideal pulao for lunch box too. If you are looking for a healthy and easy pulao recipe, then try this methi matar pulao. You can use frozen peas or fresh peas which is in season now. I have posted corn methi pulao, this simple pulao recipe is similar to that one, but with slight variations. Methi and matar is always a winning combo, i have already posted methi matar malai recipe. If you have a fresh bunch of methi leaves at home, then try this pulao. Usually whenever i buy methi leaves from the market, i make methi thepla, which we all love. Though i love the methi pakora kadhi but sometimes i feel lazy to make it. Do try this one pot meal and let me know how it turned out.

    Basmati rice  1 cup
    Oil   3 tsp
    Butter  1 tblsp
    Green chili  2
    Cloves   3 (optional)
    Cumin seeds   1 tsp
    Onion  1 thinly sliced
    Ginger garlic paste  1 tsp
    Water  1 and 1/4 cup
    Salt  as needed
    Green peas   1/2 cup
    Garam masala  1 tsp (optional)
    Methi leaves  1/2 cup (chopped)
    Coriander leaves   1/2 cup (finely chopped)
    Mint leaves   1/4 cup (finely chopped)

Method :

  • Wash and soak the basmati rice in 1 and 1/4 cup water for 20 minutes.
  • In a pressure cooker add the butter and ghee.
  • Add in the cloves, cumin seeds and slit green chili.
  • Saute for a few seconds and add in the onions.
  • Cook till translucent. 
  • Add the ginger garlic paste and cook till the raw smell goes off. 
  • Cook in a low flame. Ensure not to burnt it. 
  • Add the chopped methi leaves, coriander leaves and mint leaves.
  • Saute for a minute.
  • Add the green peas. I used frozen peas, you can add fresh peas too.
  • Add salt.
  • Add garam masala, if adding and mix well. 
  • Add the  soaked rice and the water.
  • Mix well and cover the cooker. 
  • Let this cook till 1 whistle and then simmer it to the lowest flame possible for 10 minutes.
  • Switch off the flame after 10 minutes.
  • Once the pressure is automatically released, open the cooker.
  • Gently mix the rice without breaking it. 
  • Serve hot with any raita of your choice. 
  • We had with dhaba style paneer with the methi matar pulao.  


Notes:
  1. You can add carrot and beans along with green peas.
  2. Along with cloves few other whole spices like cardamom, bay leaf, star anise can be added.
  3. Methi matar pulao serves tastes nice even when it is not hot, so you can pack for kids lunch box too.

Dill leaves Dal recipe, Shepu or Suva dal recipe

Dill leaves dal | Shepu or Suva dal, with step by step pictures, using moong dal and dill leaves as the main ingredient, a popular dal variety of Karnataka. Dill leaves, i have seen in the market but never attempted to pick the pack and cook it at home. For us Vegetarians, dal is a staple food, which i include in my daily meal. I usually make Dal palak or Green moong dal sabji. Traditionally in karnataka they put dill leaves in Akki roti. I have heard from many that dill leaves give an acquired taste and a pungent smell too. Recently my friend shared a small portion of dill leaves with moong dal. That was the first time i tasted dill leaves dal. I liked the taste and i wanted to give it a try. I got a small bunch of dill leaves from the nearest Indian shop and tried the Dill leaves dal also called as Shepu|suva dal. I was waiting for the response from the family but everyone had the dal without any complaints. Generally dill leaves is given for lactating mothers. It has lots of health benefits too. Ghee Podi idli recipe, How to make podi Idli

Ghee podi idli recipw with step by step picture and video, a delicious snack made using left over idlis or even with fresh idlis.  Idli smeared with molagapodi is one my most favorite breakfast | snack. Even my kids prefer to have podi idli for lunch box. Recently i have tasted Ghee podi idli in few different places and i wanted to recreate that version at home. You can make this with whole idlis but i have made by making the idli into cubes. If you have left over idlis at home from morning breakfast, you can make this for tea time snack. Pavakkai podi recipe, Bitter gourd podi

Pavakkai podi recipe, Karakaya karam, Bitter gourd podi is a simple and easy podi made using bitter gourd, pairs well with hot rice and even curd rice too. I have tried this recipe twice at home but never clicked the pictures. Recently when i got a bunch of bitter gourd from the nearby Indian shop, i thought i will attempt to make a click of the pavakkai podi also called as Karakaya Karam in Telugu. I adapted this recipe from my favorite Vahchef and everytime i make this podi, it turns out so yum. I have given some tips and slight variations in the notes section, so please check the post till the end to read those tips.

Ulundu kali recipe, Ulundu kali in Tamil,video and step by step pictures,  it is a traditional dish made using rice, black urad dal and karupatti. It is an authentic Tirunelveli style recipe, made for breakfast and this is very high in protein too. Generally it is given for newly delivered mothers and girls who attained puberty, as it it strengthens the hip bones. Paneer Sandwich, Easy Sandwich recipes

Paneer Sandwich recipe with video and step by step pictures, Paneer cubes marinated in Indo Chinese style and made with a creamy potato spread, a perfect party snack and a lunch box recipe too. I have tried this recipe few times from a cook book which i bought many many years back. Recently when i was arranging my shelf, i saw this recipe again, I have all the ingredients with me and wanted to try for kids. This paneer sandwich is again a super hit at home and kids loved it a lot. Paneer can be replaced with Tofu in this recipe. Do try this recipe at home and let me know how it turned out.

     Bread     10 slices
     Paneer cubes  250 gms
     Garlic  1 tbslp (finely chopped)
     Soya sauce  1/2 tsp
     Ginger  1/2 tsp (grated)
     Pepper powder  1/2 tsp
     Salt  as needed
     Butter  1 tsp
    For the potato spread
    Potato  1 cup (mashed)
    Tomato ketchup  1 tblsp
    Pepper powder  1/2 tsp
    Butter  2 tsp
    Salt  as needed

Method :

  • In a wide bowl add the paneer cubes. If it is frozen, bring it to room temperature. 
  • Add the ginger, garlic, pepper powder, salt and soya sauce to this.
  • Mix well and let this marinate for 5-10 minutes.
  • In a pan add butter and add the marinated mixture. 
  • Saute for 5 minutes and keep it aside.
  • Let's make the potato spread now.
  • In a bowl add the mashed potato. Ensure there is no lumps. 
  • Add the tomato ketchup, pepper powder and butter to this. 
  • Mix well.
  • Keep a sandwich maker ready.
  • Butter a bread and keep the buttered portion down on the sandwich maker. You can make this on a tawa too. 
  • Spread the potato mixture on the top side.
  • Place little portion of  paneer mixture on it.
  • Butter another bread on one side.
  • Place the buttered portion up and keep on the top. 
  • Cook till it turns crisp and brown.
  • If making on stove top, flip on both sides and cook on a medium low flame. 
  • Once done take out and cut them into triangles or squares. 
  • Serve the sandwich hot or you can pack them for lunch box too. 


Notes:
  1. You can make the potato spread and paneer ready the previous day night and make the sandwich the next day morning for breakfast or lunch box.
  2. Sweet potato can be replaced for potato. 
  3. Tofu can be used instead of  paneer.
  4. Paneer Sandwich can be made on stove top too.

Tomato Saaru recipe, Mangalore style rasam

Tomato Saaru recipe | Mangalore Rasam  with step wise pictures, an aromatic, delicious udipi style rasam recipe made using freshly ground rasam powder. Rasam is a very staple food in most of the South Indian households. I have posted different varieties of rasam recipesin Jeyashris kitchen. This mangalore rasam, recently i tasted when we had a potluck with friends after deepavali. I instantly fell in love with that Mangapore rasam also called as Tomato Saaru. When i asked her for the recipe, she sent a detailed recipe with perfect measurements. After that i tried this twice at home. It has become our family favorite now.
I was so surprised to see that they don't add black pepper in this rasam. Also they boil the rasam after adding the dal water, which we usually don't do for our Tomato rasam recipe. And tempering is made first and then after that the rasam is boiled for 20 minutes. Generally this rasam is served as a soup and also along with rice in Mangalore weddings. As such i love to try out traditional recipes from other States of India, so this recipe is a super hit among them. Do try this rasam and let me know how you liked it.

Pirandai KaruveppilaiThuvaiyal recipe, in tamil we call it as pirandai, it is called as Adamant creeper in English and Hadjod in Hindi. Pirandai thuvaiyal recipe with step by step pictures, pairs well with dosai and hot rice. Generally pirandai thogaiyal is made during srardams in Tamil brahmin houses(prayers offered to ancestors) Somehow from my childhood i never tasted this thogayal. The name Pirandai itself makes me to feel uncomfortable, don't know why😃. Pirandai has lots of health benefits. It aids in digestion and also a good source of Calcium. It is very good for joint pains. I got the cutting of Pirandai plant from my friend here and it started beautifully growing up. I asked my mom for the recipe and she shared her way of making the Pirandai thogayal. If you want you can add more pirandai, but i have less in my home garden, so i used little only. It tasted nice with hot rice and also tasted yum with curd rice. The ones we get in shops are bit thick. Look out for a tender ones and make the thuvaiyal.

Thinai maavu Nei appam recipe, Easy appam recipe

Millet flour nei appam recipe with video and step by step pictures. Easy and Instant Nei appam made using millet flour, over riped banana and brown sugar, easy recipe for bachelors and working women. Generally we make nei appam with rice or rice flour or wheat flour. I have posted many varieties of nei appam in Jeyashri's kitchen. I wanted to try the recipe using the Thinai maavu i got from Sri Murugan stores.

Khoya Matar recipe, Side dish for chapati

Khoya matar recipe with video and step by step pictures, a popular rich gravy made using mawa and peas pairs well with chapati, roti and naan. I had a small portion of khoya with me after making Diwali sweets, i wanted to try a gravy using khoya for a long time. So i tried yesterday the popular Khoya matar, generally paneer will be added to the gravy but i don't have stock of paneer so i skipped it. The gravy was finger licking delicious and creamy and tasted very similar to a Restaurant style Khoya matar.

Coconut Chutney with Urad dal, Chutney recipes

Coconut chutney recipe, made with urad dal and green chili as main ingredients. We make many varieties of coconut chutney, and mostly we add roasted gram or channa dal for making coconut chutney. We South Indian brahmins make Thengai thogayal with coconut, red chili and urad dal. Recently one of my friend told that she tasted coconut chutney with urad  dal and it tasted very nice. I had 2 coconuts lying down in my refrigerator and i immediately thought that i will try it out for sure. It turned out quite good and we had with Tomato Dosai. Puliyodarai Podi recipe, How to make puliyodarai podi

Puliyodarai podi,with step by step pictures, a dry podi made using dhaniya, channa dal, red chili and tamarind as main ingredients, to make the popular South Indian Puliyodarai. I have seen MTR Puliyodarai podi and tasted too in my friend's house too. Few months back, i got to taste it in a friend's house. Her mil got it from a wedding caterer, but it was not like a dry powder. Roughly she gave an idea of the recipe, i noted it down but didn't attempt it. Later, during Navaratri, when i visited my neighbour's house, she made super spicy puliyodarai and while i was talking to her, she told that she made it using puliyodarai podi. I somehow mistook that as store bought podi, as i had a  feeling that it can't be made at home. I always pre assume many things like this. Few years back i thought, Pav Bhaji can only be made in restaurants and we can't make at home😆.  She then clarified that it is home made and her mother in law makes it quite often and it is a super hit recipe. I felt that it is perfect for working moms and perfect for travel too. I was bit skeptical about the grinding of tamarind, as it will be wet, but when i tried it few weeks back, it turned so well. I tweaked the recipe as per the ingredients i used for Iyengar puliyodarai recipe, but followed her method. You can use this puliyodarai podi for making Puli sevai and puli aval too.

That brought me so many childhood memories. Those days garlic in cooking was so rare at home so once when i asked my grandmother to make garlic flavored ribbon pakoda, she gave a weird look and told me that we don't make those stuff at home. My friends at school bring Garlic sev and Garlic Ribbon pakoda and i used to enjoy it. We lived in Madurai and so we used to get the famous Sattur seeval, Arupukottai seeval from friends who travel to these places quite often. These cities are quite closer to Madurai and the snacks taste so yummy. They use a traditional seeval kattai for making this ribbon pakoda. But since we don't have it at home, i used the achu which i used for making the Coconut ribbon pakoda. Do try this Garlic ribbon pakoda recipe at home and let me know how you liked it. Rava Gulab Jamun recipe, Diwali Sweets

Gulab jamun recipe using Rava| sooji, soaked in sugar syrup a perfect dessert for diwali, Recipe with Video and step by step pictures.  Gulab jamuns are a must in most of the Indian families for Diwali. We always make Gulab jamun using Instant Gulab Jamun mix available in stores. We also make Khoya Gulab Jamun, Milk powder Gulab jamun, Paneer gulab jamun too. This Gulab Jamun is made using Rava| sooji| semolina. It is super easy to make and tasted so delicious too. So if you don't get any Gulab jamun mix in your place or running out of time in the last minute, just go ahead and make this Easy Rava gulab jamun.

Ragi Butter Murukku recipe,Murukku recipes

Ragi butter murukku| Finger millet murukku, crispy murukku using ragi| finger millet flour, perfect for Deepavali. I have tried savory recipes using ragi flour. Though they turn out crispy, somehow i feel the slight bitter taste after tasting the murukku. Even i have tried murukku using millet flour like samai, thinai and varagu. I have never tried the traditional way of making flour, using the store bought flour only. Today i tried Ragi butter murukku by adding some rice flour to it. It was very crunchy and bitter taste was not there in this murukku. I don't say it is a healthy version of murukku, as we add millet flour to this, but i am sure, it is definitely a different version to try out for this Deepavali.

Omavalli leaves rasam| ajwain leaves rasam recipe, a soothing comfortable easy rasam recipe made using freshly ground spices and omavalli leaves. This rasam can be had as a soup too. I followed my Kalyana rasam recipe. So i didn't use tamarind for this rasam. Traditionally rasam is made using tamarind, but we South Indians make different varieties of rasam, so for this rasam no tamarind juice is added. After the 9 days of festival food, we really need a comfortable food. Rasam rice is a super comfortable food and i can have it any time of the day. As the weather is also getting cold and raining most of the days, this omavalli rasam is a best one to control common cold and throat pain. Kerala matta rice, how to cook Palakadan matta rice, pressure cooker method, with video and step by step pictures. Though i know Kerala matta rice has loads of health benefits, somehow i never attempted to cook it as i am not very comfortable in changing my main course food. I am a hard core white rice eater but can be eat millets to some extent now. Recently one of my friend was telling about this Kerala rice and she told that her kids are quite comfortable eating the same. This was an eye opener for me, when small kids can eat this comfortably, i wanted to give it a try. She told me the procedure to cook the Kerala rice too.
I picked up a pack of Kerala Matta rice from Sri Murugan stores, Simei and tried the same. Surprisingly we all loved it and even the kids too didn't fuss much. Sri Murugan has 1 kg of palakadan Matta rice and also it is available in 5 kgs packet too.

 Karamani Sundal made using freshly ground spices, enhances the taste and flavour of the sundal, an easy Navaratri recipe. Navaratri 2018 is starting today. We make variety of Sundals for the Navaratri season and Jeyashri's Kitchen has a huge collection of Navaratri Sweets and Sundal recipes. This year also i planned to post few sundal and sweet recipes and got the Red eyed karamani to make sundal. I actually planned to make a simple basic sundal but some time back, one of my friend shared a Karamadhu podi recipe(the Iyengar style curry powder) with me and also shared his mom's recipe of the same. Though i got the recipe some time back, i didn't try it out. Suddenly after soaking the karamani sundal the idea of using the karamadhu podi in the sundal. We both discussed few other options of using the powder too.(see notes section) I am not a great fan of karamani, as even during my childhood days, whenever karamani sundal is made during navaratri, i will get so upset. I never like karamani, but the red one was still ok compared to the lobia beans. This podi was too flavourful and it took the lame karamani to a different level. Try this out with any variety of sundal and i am sure you will enjoy it as how we did.

Zucchini paratha recipe, Paratha recipes

Zucchini paratha with step by step picture, no onion no garlic paratha recipe, an easy to make Indian flat bread. I usually make it by squeezing the excess water from the vegetable and add it to the atta and make the dough. Recently when i visited my friend's place for lunch, she made lauki paratha. She told she made it just by adding the lauki into the flour, without squeezing the extra water. It was very soft and it tasted so yum. I just casually tried the same with zucchini last Sunday for breakfast. It turned out very well.

Mostly pumpkin i buy will be used for soup or i put them in Sambar. As Navaratri season is coming up i wanted to share some festival recipes and tried this Kaddu ki kheer and posting with step by step pictures and video. The payasam tasted so creamy and yum and it tasted just like the carrot kheer. Later i felt, i should have made the pumpkin payasam with jaggery as how i did for carrot payasam. Veg Makhani recipe, Veg Makhanwala

Veg makhani | veg makhanwala, no onion no garlic version with step by step pictures, a rich creamy gravy, pairs well with roti, rice. Makhani gravy is a popular Indian gravy. I have tasted Veg makhani in restaurants, recently attempted Paneer makhani gravy and shared the recipe too. This post also uses the same base for makhani gravy, a no onion no garlic version, to suit this navaratri season. The gravy turned out so rich and yummy and the flavour of the simple spices complimented the Veg makhani. No fancy ingredients needed, just make the Veg makhanwala with the ingredients easily available at home and enjoy this finger licking gravy.
