Pastamania Style Agilo olio pasta

Agilo olio pasta, a simple pasta recipe without any sauce, tossed in olive oil, chilli and garlic.
Pastamania is a popular food joint here in Singapore. They have few vegetarian options and among them we love the agilo olio pasta very much. I have posted a agilo olio pasta during my initial days of blogging which has with bread crumbs. I personally love this spicy agilo olio as it does not involve any pasta sauce. So if you are looking for  pasta recipe without sauce, then this agilo olio is the best one. This is a perfect recipe for bachelors and students who stay in dorms. Do give it a try and let me know how it turned out. Generally agilo olio is made using spaghetti pasta, but i love it with penne pasta or fussili pasta.

Baked arrabbiata pasta

Baked arrabbiata pasta recipe with video. Penne arrabbiata is a popular recipe and recently i tried the baked version of the pasta with arrabbiata sauce. Few weeks back when we went to Chennai,Varsha experimented this version of pasta and sent me the picture. She is a great fan of spicy food,but since Varun doesn't eat that much spicy food,i normally make don't make too spicy food. She wanted to do a guest post again for Jeyashri's kitchen but thank god,school reopened for her from today. Two days back i made this same baked pasta for her friends who came home and posted the picture in Jeyashri's kitchen Instagram too. Many of the readers messaged me and asked for the recipe. It is similar to the lasagna recipe but the sauce is different in this recipe. Try this easy baked pasta recipe at home. I am sure kids and adults also will enjoy this cheesy baked pasta in arrabbiata sauce. For arrabiaata sauce i referred this recipe.

Pasta Primavera recipe | Easy Pasta recipes

Pasta Primavera is basically a pasta loaded with fresh vegetables. We don't use any pasta sauce in this  pasta recipe. I adapted this recipe from a magazine, the book i had bought 4 years back. After i bought i kept it inside by book shelf and totally forgot about that. Recently while cleaning the entire book shelf found this magazine and wanted to try out this Pasta Primavera recipe from that. It was super easy and the main part is kids loved this very much. I used zucchini, sweet corn and capsicum in this recipe, you can use broccoli, carrot, olives and veggies of your choice also. Pasta, veggies, cheese, what else can we need to make the kids happy. Make this kids friendly pasta recipe and let me know how it turned out.

Spinach-tomato pasta
Creamy spinach tomato pasta made with spaghetti pasta. Two days back, when I and Varsha were browsing in Pinterest, found many interesting vegetarian pasta recipes. We both decided to go for the spinach tomato pasta after browsing lot of recipes. After seeing many recipes in that category, we both come up with our own recipe, which sounded so easy for me to try it out too. I have a box of cute baby spinach recipes, which i got from Fairprice. I made this for my lunch today and reserved a portion for Varun too and he had the pasta after coming back from school. Varsha couldn't taste this as she went to her friend's house today. But i promised her that i will make this again for her tomorrow.  Make this simple delicious creamy spinach pasta and enjoy your meal.

Filipino fruit salad | Easy dessert recipes

Filipino fruit salad |Buko salad, is similar to the Indian fruit cream recipe. This easy and exotic dessert was introduced to me by my helper Joann, 2 years back. Also the mango float recipe also she only taught me. Most of my guests had tasted this yummy dessert and tried at home too. I made this for the guests who came for my cookery show in London. Everyone was impressed by this surprise dessert and asked me for the recipe. And many guests who tasted this asked me whether i have this recipe of fruit salad in jeyashris kitchen, so finally i have made this one day to make a post . In this recipe i used the tinned fruit cocktail, where as you can replace with fresh fruits like pineapple, pomegranate, grapes, mango and apple. Do not use fruits which are very sour. Also i have used the nata de coco, which i get here in tetra packs in the local Singapore fair price shops. You can chop the tender coconut meat (ilaneer thengai) and add to this. Try out this easy dessert recipe and impress your family and guests. A perfect dessert for potluck parties, where you can make this ahead and keep it in the refrigerator, as it tastes best when chilled.

Tomato pesto pasta

Sun dried Tomato pesto pasta is a simple pasta  recipe, made with sun dried tomatoes as a base. I have got few varities of pasta from Italy, during our Europe trip. And now slowly exploring interesting pasta recipes too. I have a pack of sun dried tomatoes lying in my freezer for some time. Few days back when my cousin shared a picture of a pasta in Instagram. As the name sounded interesting, i asked her the recipe. She messaged me quickly and on seeing that itself i somehow felt, i should try this soon . She made the pasta with store bought basil pesto. But since i have sun dried tomatoes wanted to make use of it and tried with that. Generally pesto recipes uses parmesan cheese in it. But since they say it is not suitable for vegetarians, i just omitted the parmesan and added olive oil in that place. Check out my other pasta recipes.

Sweet corn pasta recipe | easy pasta recipes


Sweet corn pasta , this is  a creamy tomato based pasta cooked with sweet corn and other veggies of your choice. I have recently tasted this pasta in my friends house. Few weeks back she invited us for dinner and the spread was amazing. She is a very good baker and the menu had a wonderful spread of varieties of recipes. She made delicious Pizza, Soup, noodles and this pasta too. Without fail i noted down the recipe of the sweet corn pasta from her. This recipe she adapted from Tarla Dalal cook book. Pumpkin sauce pasta is a easy pasta recipe made with pumpkin puree as a main base. I have already posted home made pasta sauce recipe and white sauce pasta. This pumpkin pasta sauce i have once tried, very long back but somehow didn't turn out well. Last week when i was looking for some pasta recipes, my friend told me this recipe,which she recently learnt from her friend. She personally tried it at home and sent me pictures of them too. So i tried this today and it was very yum. The pumpkin sauce pasta was very creamy and at the same time was not bland. Generally creamy pasta will be bit bland and especially for us Indians, who are used to spicy food, can't eat the bland pasta.  Try this for a weeknight dinner and let me know how they turned out.  This is truly a kids perfect pasta recipe. MUSHROOM PASTA IN WHITE SAUCE| EASY PASTA RECIPES

LAst month when we celebrated my daughter's birthday, we took her and her few friends for bowling and followed by a lunch in Pasta Mania here. Somehow me and my hubby don't prefer pizza huts or pasta mania now a days. But as kids love those outlets once in a while we take them. We both munched on a pasta and kids enjoyed pizza, pasta and cold drinks. My helper who also joined us, ordered for al funghi for her. As soon as it came, she told me to take little from that as it was bit more for her. I was bit hesitant as i always feel pasta in white sauce will be very heavy. But the blogger in me was so active !!. And i tasted it. Last week i bought mushrooms and made it for her. The taste was very similar to the one we tasted in PAsta mania. BASIL WALNUT PESTO PASTA | PASTA RECIPES


As mentioned in my previous post of Basil Walnut pesto i am posting today the recipe of the basil walnut pesto pasta, that is pasta made with pesto. Before going to the post i want to share with you all that Jeyashri’s Kitchen has been featured in India today (tamil weekly magazine) . INGREDIENTS
PASTA (I used penne) 1 cup
OLIVE OIL 1 TSP
TOMATO OR CHEERY TOMATOES 1/2 OR 2
BASIL LEAVES 2-3
WALNUTS 1-2 TO GARNISH
BASIL WALNUT PESTO 1/4 CUP
CHEESE 1 TBLSP (TO GARNISH)

METHOD:
  • Cook the pasta as per the instructions.
  • In a pan, add olive oil and the basil leaves. Half the cherry tomatoes or if using normal tomatoes, cut them lengthwise.

  • Saute for a  minute. Let the tomatoes be crunchy.
  • Add in the pesto and saute for few seconds.
  • Add the cooked pasta and mix evenly. Let the pesto be evenly coated with the pasta.
  • Garnish with walnut bits.

  • Just before serving add the cheese and always serve hot.

NOTE:
  1. always saute the tomatoes and pesto in a low flame.
  2. I used penne pasta. You can use Fuseli , spaghetti or any other pasta of your choice.

BASIL PESTO RECIPE | PESTO RECIPE


BASIL WALNUT PESTO
Whenever i make pasta i make with the usual tomato sauce or with the white sauce. Few months ago, i have tasted basil walnut pesto pasta in a friend’s place. Long time i have been thinking to make this but some how i have never come across Basil leaves when i visit the local super market. They say it be available after 11 am and gets immediately sold off too. Last week when i visited a cold storage here, i saw a fresh box of basil leaves. I picked it up and after coming home called my friend and noted down the recipe. This basil walnut pesto is a easy one to make and i loved the fresh smell of basil too.

INGREDIENTS:
WALNUTS 5-6
BASIL LEAVES 1/2 CUP (TIGHTLY PACKED)
SALT TO TASTE
CHEESE 2 TBLSP
GREEN CHILLI 1-2
OLIVE OIL 2 TBLSP
Walnut -basil -pesto
METHOD:
  • Wash the basil leaves and pat dry them. Keep aside 3-4 leaves for making the pesto pasta.

  • Grind the leaves along with rest of the ingredients into a fine paste.( basil leaves, salt,green chilli,cheese,walnut and olive oil)

  • With clean dry hands or spoon transfer it to a container and use it up within 3 days.  Basil walnut pesto is ready.

Note:

  • I used parmesan cheese. You can use any variety of cheese.
  • Blanched almonds can be used instead of walnuts.
  • I added 2 green chilies and find the recipe spicy .

INDIAN STYLE MASALA PASTA , EASY PASTA RECIPES

Indian style pasta
Pasta made with Indian spices and masala, to give it a desi Indian touch. Generally i make pasta  for kids with  Home made pasta Sauce , and being bored with the usual style i wanted to try a new version of pasta. My daughter Varsha came up with the idea of this Desi Masala pasta and i tried with a small batch of pasta last week for her and she enjoyed it a lot. AGILO OLIO PASTA RECIPE | AGILO OLIO RECIPE

Whenever we go to Pasta Mania we have few options for vegetarians and one among them is this Simple Agilo Olio pasta . I wanted to try this agilo olio pasta , a simple vegetarian pasta recipe at home for a long time and finally made few days back. Let us see how to make Agilo Olio Pasta recipe also called as Spaghetti Aglio e Olio .

INGREDIENTS: SERVES 2

SPAGHETTI 1/3 PACKET
GARLIC PODS 6-8
OLIVE OIL 1 TBLSP
RED CHILLI FLAKES | FRESH RED CHILLI TO TASTE
BREAD CRUMBS 2 TBLSP

Agilo Olio

METHOD:

  • Cook the  spaghetti pasta with 4 cups of water by adding enough salt to this pasta.
  • Do not add oil to this while cooking.
  • Once cooked drain the excess water and run the pasta through cold water.

  • Chop the garlic into thin roundels.

Agilo olio

  • If using fresh red chilli finely chop this finely.
  • Roast the bread crumbs in a pan till golden brown . Be careful not to get it burnt.

  • In a pan, add olive oil and when the oil is hot lower the flame and add the Garlic. If adding fresh red chilli add it now.
  • Toss the garlic gently in the oil without burning it. Do not change the colour of the red chilli.
  • Then add the cooked spaghetti and toss it gently.
  • Add the red chilli flakes (if using red chilli flakes) and bread crumbs too.

  • Mix it gently and put off the flame.

  • If you want you can add fresh parsley for garnishing.

Note:

  1. Bread crumbs give a crunchy taste to the pasta. But if you do not have in hand, feel free to skip this.

PASTA IN WHITE SAUCE | PASTA RECIPES

Pasta is a most welcoming dish at my home and i generally make it with Home made Sauce and usually pack it for kids lunch box or sometimes for weeknight Dinner too. Usually i make pasta in  this way but my kiddos love the pasta in white sauce too. Most of the times i make it either for lunch box or dinner and i couldn’t click the pictures, but two days back i made Penne pasta in White sauce and gave them for evening tiffin after they are back from school. Normally i try to include little bit of veggies in this as they will not fuss eating veggies if i put them in pasta.

INGREDIENTS (Serves 3 )

PENNE PASTA 1 AND 1/2 CUP
WHITE SAUCE 1 CUP
MIXED VEGGIES 3/4 CUP
OLIVE OIL 1 TBLSP
OREGANOPOWDER 1/2 TSP
BLACK PEPPER TO TASTE
SALT AS NEEDED
CAPSICUM (CHOPPED) 1 TBLSP
PARMESAN CHEESE 1 TBLSP(FOR GARNISHING)

METHOD:

  • Chop the veggies finely (i used carrot,green peas, corn and broccoli)
  • Boil the veggies in little water by adding little salt to this.
  • Do not over cook, let the veggies be crunchy.

  • Cook the pasta as per the instructions by adding salt and few drops of olive oil.
  • Drain the water and run the pasta thro cold water.

  • In a sauce pan, add oil and add the capsicum and saute for a minute.

  • Add the veggies to this and saute for few seconds and add the oregano and pepper powder.

  • Add the white sauce to this and mix well.
  • Let this boil for a minute.

  • Add the cooked pasta to this and give it a nice stir gently.
  • After 2 minutes switch off the flame.

  • Serve it hot by sprinkling little parmesan cheese on the top .( i didn’t have cheese in hand , so i didn’t add)

Note:

  1. You can soak the pasta in water for 10 minutes before cooking which will ensure easy and fast cooking.
  2. You can veggies of your own choice.
  3. You can add red chilli flakes to this while serving if you want this little spicy.

PENNE ARRABIATA RECIPE – PASTA RECIPES

  If you are looking for a easy weeknight dinner or even a simple lunch on lazy days , then this penne arrabiata is a perfect recipe. Whenever we go to pasta mania here in Singapore, as we are vegetarians we have very less options and since we don’t prefer any cheesy or creamy pasta we always end up ordering this penne arrabiata.  The best thing is my kids like this very much and so i have wanted to attempt this at home and it turned out well.

INGREDIENTS

PENNE PASTA 1 CUP
TOMATO 3 NO
ONION 1 NO
GARLIC 2 PODS
CHILLI FLAKES 1 TSP
OREGANO POWDER 1/2 TSP
PEPPER POWDER 1/2 TSP
SALT TO TASTE
SUGAR 1/4 TSP
OLIVE OIL 1 TBLSP
GRATED CHEESE 1-2 TSP( FOR GARNISHING)

METHOD:

  • Cook the pasta in 4 cups of water in a wide pan by adding salt and a tsp of oil.
  • When it becomes soft drain the water and run the pasta through cold water. Toss this with a tsp of oil and keep aside.( this is to avoid sticking of the pastas with each other)

  • Finely chop the onions, garlic and tomatoes.

  • In a pan add oil and the garlic and after few seconds add the onions.
  • When it turns pink add the tomatoes and and cook in a medium flame.

  • Add chilli flakes, oregana , salt, sugar and pepper powder.
  • Cook in a low flames till the tomatoes turn mushy  and it becomes a thick sauce.

  • Add the cooked pasta to this and mix well.

  • Serve hot with grated cheese on the top.
