Mango salad recipe, Mango recipes

Mango salad recipe with step by step pictures, a healthy salad made using ripe mango and other healthy veggies, with a simple salad dressing. I always add raw mango in my salads, but this time i was so excited to try a salad using ripe mangoes. The Organic banganapally mangoes which i got from Wild seed Singapore were too tasty. So i tried this mango salad using their delicious mangoes. We all loved it and my little one who is a bit choosy, when it comes to new food, enjoyed it a lot and asked me for one more serving. The salad dressing balanced the sweetness of the mango.

Fruit sundal

Fruit Sundal is a new and different variety of sundal which i tried recently. Few years back i tried a pineapple salad in Hotel Green park ,chennai. I loved it very much and also tried at home. I have given the recipe in my Kungumam Thozi supplement 2 years back. I just added some chickpeas and other fruits to the same recipe and it turned out very well. Vegetarian Salad with easy dressing ideas | Indian style salad

Salads as we all know, are very healthy but making it interesting is a tough task. Many ladies who want to lose weight, will stick to salads, at least one meal a day but after few days the interest in eating salads will come down . Also one more major block here is we cook usual meal for the family and after all that we will eat salads . So over a period of time we will start craving for the daily meal. Now you can add sambar, rasam, vathakuzhambu, paruppu podi, karuvepillai podi, paruppu usili and if you are a north Indian, you can add  dal, kadi or some spicy subzi which you make daily. Avoid adding deep fried items to the salad. You can add roasted papad too. After experimenting many combos at home, I  finally came up with a  super easy vegetarian salad recipes. For the past 2 months I am having salads for one meal a day, mostly for dinner. I feel so complete and full and never crave for regular food. You can add 2 spoons of rice or pasta or noodles into the salad.Be creative and make your salads interesting. Check out my diet plan with Indian recipes. Pineapple i love the most next to mangoes. Generally i like eating fruits,also i would love to add them in my salads too. Usually i add fresh pineapple cubes to my daily salad along with some cucumber, carrot, some legume (chick peas, red kidney beans..) lettuce, papaya, watermelon and some nuts. Every day i pack a big bowl of salad for suresh, for his evening snack and also i reserve  a portion from that  for me and kids to have in the evening . This grilled pineapple salad i have seen in a restaurant menu long back and suddenly while eating the pineapple in my salad, it came to my mind. So i made this today. While writing this post, i am enjoying a bowl of grilled pineapple salad too. This salad is similar to grilled pineapple salsa, so you can serve with tortillas too. I was planning to post this sundal recipe next week. But i have already started receiving invites from my friends for navaratri 2015. So i thought it will be easy for them to plan the menu if i post it now itself. Check out my collections of Navaratri recipes. Generally in most of the Tamil brahmin houses and other people who keep golu make the traditional sundal. This sundal is a different one from the usual sundal we make.This recipe idea i got from a friend during last Navratri itself. Summer is in peak and many of us wanted to make the food simple and quickly come out of the kitchen. I have given this mixed bean salad recipe for kungumam thozi last year. Though i clicked step wise also while making this  salad forgot about that. Today i wanted to post something simple as i was running out of time. While checking the pictures in laptop saw this mixed bean salad. Though it will be perfect for this summer. It tasted very well too and i have made it few times at home too. Diet watchers can have this healthy filling salad . I served with tacos which tasted like a mixed bean tacos.

Beetroot salad is a very healthy one and super easy one to make. The recipe of this healthy Indian version of beets salad was given by my friend very long back. I love beetroot and so even kids too love beetroot. I have posted beetroot vadai, beetroot curry, beetroot pulao and many other recipes with beetroot. Some how raw beetroot never fascinated me and never tried this salad for a long time. When we had a casual dinner at my house few months back with her family,i made beetroot vada for starter. He was telling he is not a big fan of beetroot and the salad which she makes only he loves in beetroot. And complimented me for the vada too. Then i thought i should give this salad a try. That time only i was writing Salads and Soups article for Kungumam Thozi. I made it the next day and it was awesome. After that the beetroot salad is a regular one in my weekly menu. Try out this simple and healthy salad in your meal.

Millet recipes are getting popular now a days and i am posting recipes with various types of millets| sirudhaniyam here every Monday. I have explored many recipes using millets. Foxtail millet salad is one among them . Actually i wanted to post  a chaat recipe with millet but since i made salad today i am posting this healthy foxtail millet salad. Stay tuned for more interesting recipes with millets every week. Foxtail millet is  called as Thinai arisi in tamil | ( Kangni in Hindi, Kora in telugu | Navanne in Kannada |Thina in malayalam ). This salad will be very filling and ideally can consume this for breakfast or lunch. Perfect recipe for weight watchers. I just added the ingredients available with me, so feel free to add up more fruits or vegetables of your choice. Instead of thinai you can make this with quinoa or couscous too.

THAI CUCUMBER AND PINEAPPLE SALAD

Recently i got a Thai vegetarian cook book from a friend and i saw many interesting Thai recipes in that book and i noted down few interesting recipes  which i will post one by one. This Pineapple and cucumber salad which i tried 2 days back turned out totally awesome.I can say it is a perfect and refreshing salad and a must try salad at home for this summer.

INGREDIENTS: [SERVES 3-4]
PINEAPPLE (CUBED) 1 CUP
CUCUMBER 1
RED CHILLI FLAKES TO TASTE
SOYA SAUCE 1/2 TSP
ROASTED PEANUTS 1/4 CUP

I didn’t make any step wise pictures as i was very easy to make and no cooking is involved.
METHOD:
  • Cube the pineapple and cucumber.( i used the Japanese cucumber)
  • If using the Indian cucumber, scoop out the seeds if you don’t like and peel off the skin too.
  • In a wide bowl, combine the pineapple, cucumber and add the soya sauce and red chilli flakes.
  • Crush the roasted peanuts in a mixer coarsely and add to the salad.
  • Mix well. since the peanuts i used the salted roasted peanuts i didn’t add salt.
  • Serve immediately.  If serving later, add the peanuts before serving.

SPROUTED MOONG BEAN SALAD RECIPE | SPROUTS SALAD

When i posted the recipe of HOMEMADE SPROUTS i wanted to post the recipe of this salad too as sprouts are available in my kitchen almost everyday. Since my hubby is preparing for the Singapore Marathon which is coming up this weekend i wanted to include more of salads, spinach and green veggies in the diet. So i made this salad two days back and the lovely wooden bowls which Raji bought for me from Bali complimented the clicks.

INGREDIENTS
HOME MADE SPROUTS 1 CUP
CARROTS 1(CUBED)
CABBAGE 1/2 CUP(FINELY CHOPPED)
CAPSICUM 2 TBLSP( CUBED)
TOMATO 1/2 (CUBED)
CHAAT MASALA A PINCH(OPTIONAL)
SALT TO TASTE
BLACK PEPPER POWDER TO TASTE
LEMON JUICE 2 TSP
Sprouts salad

METHOD:
  • In a big wide bowl combine all the ingredients and toss well to get uniform mixing.
  • Serve immediately.
  • If you want to serve it later, do not add the salt , pepper and lemon juice. Just add them before you serve.
  • While adding tomatoes de seed them by scooping out the seeds with a spoon and cube it.
  • You can add chopped onions too.
  • Addition of veggies depends on you choice and the availability of the veggies too.
  • If you don’t like the sprouts raw, you can steam it in a idli steamer for a minute and add to the salad. do not steam more than a minute.

CHICKPEAS SALAD WITH THOUSAND ISLAND DRESSING

RECIPE FOR BOTH- a LOW FAT VERSION OF THOUSAND ISLAND DRESSING WITHOUT EGGS

Salads are always a super hit at my place. When i soaked channa for making Channa pulao i felt it was little extra and kept a  1/2 cup of soaked chickpeas aside for making salad. Suddenly i thought of making the salad with a dressing and i adopted this Thousand island dressing from Tarla dalal’s cook book. Though we get ready made Thousand island dressing in super markets, most of them contains eggs. So i wanted to try it out at home and it is a low fat version of Salad and diet watchers go ahead to try out the recipe of chickpeas salad with Thousand island dressing.

INGREDIENTS ( FOR THOUSAND ISLAND DRESSING)
YOGURT 1/2 CUP
MUSTARD POWDER 1/2 TSP
SUGAR 1/2 TSP
TOMATO KETCHUP 1 TBLSP
CHOPPED ONION 1 TBLSP
GREEN CHILLI 1/2 NO
CHOPPED CAPSICUM 2 TBLSP
SALT AS NEEDED
FOR SALAD:
CHICKPEAS|CHANNA(BOILED) 1/2 CUP
POTATO(BOILED) 1/2 NO.
CARROT 1/2 NO.
CABBAGE(SHREDDED) 1/4 CUP
ONION 1/2
PEPPER POWDER 1/2 TSP
THOUSAND ISLAND DRESSING

FOR THE DRESSING:
  • Combine all the ingredients mentioned in the 1st table .
  • I used the mortar and pestle to make mustard powder.

  • Chop the carrots, onions and combine the boiled chickpeas, boiled chickpeas, cabbage and pepper in a wide bowl.

  • Just before serving combine all the salad and thousand island dressing.
  • Mix well. Serve immediately.

Note:
  1. Vegetables used in the salad is truly optional. I just added the veggies which i had in my hand.
  2. The dressing has to be consumed on the same day. Do not store for more than 5 hours.

MANGO SALSA RECIPE

      Mango salsa recipe is a easy recipe made basically with ripe mangoes . This can be had as a salad and also can be served as a starter along with  chips or nachos.I tried this with a couple times and even i tried with raw mango too. I loved that crunchiness too.

INGREDIENTS:

MANGO 1/2 NO
CAPSICUM 1/2 NO
ONION 1 NO
TOMATO 1/2 NO(DESEEDED)
MINT LEAVES FEW
CORIANDER LEAVES FEW
SALT TO TASTE
GREEN CHILLLI 1 NO
CHAT MASALA A PINCH
PEPPER POWDER A PINCH
LEMON JUICE FEW DROPS
SALSA

METHOD:

  • Peel the skin of the mango and cut it into cubes.
  • Chop the capsicum into small cubes.

  • Chop the onions finely. Deseed the green chillies and chop them finely.
  • Deseed the tomatoes and chop them finely.
  • Chop the mint leaves and coriander leaves finely

  • In a wide bowl mix all the ingredients and toss well.

  • Salsa is ready to serve.

Note:

  1. Finely chopped pineapple and pomegranate seeds can be added.
  2. Fresh corn kernells can also be added to the salsa.
  3. Red chilli flakes can be replaced instead of green chillis.
  4. Finely chopped strawberries , cucumber and avocado can be also be added.

Here is a picture of mango salsa which i tried with raw mango too. Even semi riped mangoes will taste yum.

KOSUMALLI – CARROT AND CUCUMBER SALAD – RAMA NAVAMI RECIPE

     Kosumalli or kosambari or vada paruppu is a traditional dish prepared in our family during all festivals and grand feasts. During rama navami also they prepare this along with neer mor(spiced butter milk) and panagam. Though i wanted to post the panagam recipe, when i was about to make this i noticed that i was running out of jaggery which is the main ingredient of making panagam. So i headed upon to post the recipe of kosumalli.

INGREDIENTS:

YELLOW MOONG DAL 1/4 CUP
CARROT 1 NO
CUCUMBER 1 NO
SALT AS NEEDED
OIL 1/2 TSP
MUSTARD SEEDS 1/4 TSP
ASAFOETIDA A PINCH
GREEN CHILLI 1 NO
COCONUT GRATED 1 TBLSP(OPTIONAL)
LEMON JUICE 1 TSP
CORIANDER LEAVES FEW

METHOD:

  • Boil a cup of water nicely and when it comes to a rolling boil, switch off the flame and put the yellow moong dal to this and let this sit for 15 – 20 minutes.
  • Drain the water and add the transfer this to a wide bowl.
  • Grate the carrots and cucumber and add to the dal.
  • Add salt and temper with mustard seeds, green chili , asafoetida and coriander leaves.
  • Mix well. Add lemon juice and mix nicely.
  • Add the grated coconut(if using) just before serving.

Home made sprouts recipe, How to make sprouts

GREEN MOONG SPROUTS
Learn how to make sprouts, with step by step pictures and video, a simple and mess free method followed in our home for more than 20 years.
   I don’t know  how i missed posting this recipe in my space, as it is a usual practice at my place to make sprouts twice in a week.  My husband and his brothers and even my mil used to eat raw sprouts everyday along with breakfast. Initially i was hesitant to eat the raw sprouts and later when i started eating them raw, i liked the taste and even slowly my kids started eating sprouts now a days. I learnt to make this easy way from my mother in law and i wanted to share the procedure of how to make Sprouts at home.

PASTA SALAD RECIPE

  When i saw Pasta Salad recipe in Tarla dalal ‘s space i was so tempted to make this and that was so colurful to eyes  and very was  filling for the tummy too. This recipe is a real treat for dieters.

INGREDIENTS:
FOR SALSA DRESSING:
TOMATO 2 NO
GREENCHILLI 2 NO
SALT AS NEEDED
SUGAR 1 TSP
CORINADER LEAVES FEW
DRIED OREGANO 1/2 TSP

OTHER INGREDIENTS:
PASTA 1/2 CUP
BEANS 1/4 CUP
CARROTS 1/4 CUP
CAULIFLOWER 1/4 CUP
TOMATO 1 NO
SALT TO TASTE

METHOD:

  • Chop the beans finely and cube the carrots.
  • Make the cauliflower into small florets.
  • Blanch the veggies.(Just immerse them in Boiling water for a minute)

  • Cook the pasta with salt in a heavy bottomed vessel for 7-9 minutes.
  • When it is done drain the water and run it in water by placing it in a colander.

  • Immerse the blanched veggies and pasta in ice cold water for 20 minutes.
To make salsa dressing
  • Chop the tomatoes , green chillies and coriander leaves very finely.
  • In a bowl, combine the ingredients(give under salsa dressing list)
  • Mash them  continuously with the back of a spoon.

  • Drain out the water from the veggies and pasta mix.
  • Deseed a tomato and chop it into cubes.
  • Mix it well with the veggies and pasta.

  • Keep the salsa and the veggie pasta mix separately in the fridge and mix them while serving, by adding salt to the veggies.
  • Serve immediately.

VEGETABLE SALAD IN CURD DRESSING

Normally i make salad just by adding all the vegetables in hand ,but this time i want to make a salad with curd dressing.That turned out very well and even my kids liked it.

We had it with an accompaniment for masala chapathi.
Will post the recipe for masala chapathi soon.
Here comes the recipe for salad:
INGREDIENTS:
CURD 3 TBLSP
CABBAGE 1/2 CUP
ONION 1 NO
CARROT 1 NO
CAPSICUM 1/2 NO
CORN 3 TBLSP
SALT AS NEEDED
PEPPER 1/4 TSP
CORIANDER LEAVES FEW
METHOD:
Chop the veggies finely. Hung the curd in a muslin cloth for 1/2 an hour.If u dont have a muslin cloth a normal  cotton handkerchief will do.Microwave the corn for 2 minutes.I used the frozen corn.Drain the water and add it to the chopped vegetables.
Add salt and pepper to the vegetables and toss well.
After half an hour,take the curd from the cloth.Don’t squeeze.Just add it to the veggies.Mix well. garnish with coriander leaves.Since i didnt have coriander leaves in hand i didnt add.
Keep in the fridge for 1/2 hour. Serve chilled .

Nice accompaniment for rotis and parathas.
You can use any vegetable of your choice.
