Aloo paneer recipe, Aloo paneer masala

Aloo paneer masala recipe, paneer and potato cooked in rich tomato based gravy, recipe with step by pictures and video. Paneer masala always goes well with chapati, naan and rotis. We generally make different varieties of paneer gravy such as Paneer butter masala, shahi paneer, paneer do pyaza... Recently during our Hong kong trip, we ordered food from a dhaba wala guy and tasted the combo of paneer and chole masala. I loved the idea of paneer with chole and rajma. I wanted to try the combo of aloo and paneer. The aloo paneer masala turned out so well and was a super hit at home too. We had with rotis, you can serve with kulchas or lachha paratha too.

Dahi Bhindi recipe

Dahi bhindi recipe, with step by step pictures, creamy yogurt based gravy using ladies finger, pairs well with roti, jeera rice or plain basmati rice. I have tried this Dahi bhindi recipe for a cookery demo here in Singapore. It was pretty much loved by the participants who attended the demo. A creamy gravy loved by everyone at home, paired it up with Plain basmati rice. Generally bhindi | ladies finger is loved by everyone at home. We make South Indian style Vendakkai curry or Vendakkai sambar or mor kuzhambu with vendakkai. If i want to make a North Indian version, i always make Kadai bhindi only. This Dahi bhindi is a must try recipe using ladies finger.

We always make South Indian version of Poori kizhangu also called as Poori masala, or sometimes we make channa masala too. This North Indian version though i have made couple of times at home, this time i clicked the pictures to share the recipe in Jeyashri's kitchen. Poondu thokku recipe, Garlic thokku

Poondu thokku recipe| garlic thokku, with step by step pictures and video, a simple and easy to make thokku recipe made using garlic. I have got a reader request to post this recipe of poondu thokku long time back. I have already posted garlic pickle recipe but somehow i couldn't get any satisfying thokku recipe. Recently when i visited my friend Lakshmi's mom, she made an amazing Poondu thokku and i immediately noted down the recipe from her. The only toughest part is peeling the garlic but it is worth the effort. The poondu thokuu tasted so yum.
Generally we don't consume pickles so much. I always make in small batches whenever needed. My mom makes maavadu in bulk, for a year and also mango thokku for 6-8 months too. In my in laws house we don't eat much of pickles, so i didn't take up the tradition of making variety of pickles in Summer. But i have posted few popular South Indian pickles like, Instant Lemon pickle, Gooseberry pickle, Avakaai mango pickle, mango thokku and few more.
Amma used to make maavadu in bulk and send it to my athais too, during my childhood days. The maavadu we get in Madurai will be so good and also the prices will be less compared to the ones in cities.

Restaurant style Vellai kurma recipe, White kurma recipe

Learn how to make South Indian restaurant style Vellai Kurma recipe| Parrots kurma, a side dish for chapathi, parrota and poori, made using veggies.  Generally we make kurma with the addition of tomato, but for this kurma we don't add tomato. the kurma will be in bright white color and it is quite popular in Restaurants in Tamilnadu. During our childhood days, kurma is the only option we get in restaurants for chapati and parotta. Later only my athai taught my mom, how to make channa masala.  This kurma is quite common in chettinad cuisine and the make this for idiyappam too. If you are looking for a perfect kurma recipe.

  • Cook time: 25 Minutes
  • Serves: 3-4

  • Description: Learn how to make South Indian restaurant style Vellai Kurma recipe| Parrota kurma, a side dish for chapathi, parrota and poori, made using veggies.
     Mixed  veggies*  2 cups
     Oil  4 tsp (preferably coconut oil)
     Onion  1
    Green chili  2 
    Cloves 2-3
    Star anise  1
    Milk 1/2 cup
    Yogurt  3 tsp
   To grind
   Coconut  3 tblsp
   Fennel seeds  1 tsp
   Green chili 2 -4
   Cashew nuts 10- 12
   Garlic   1 pod (optional)

 * I used Carrot, beans, potato and green peas.  


Method :

  • In a pressure cooker, add oil and add the cloves and star anise.
  • Slit the green chili and slice the onions. 
  • Add the slit green chili and sliced onions. 
  • Saute till the onions becomes translucent. 
  • Do not change the color. 
  • Add the veggies. Cut the veggies according to your preference. 
  • Add the veggies to the pressure cooker.
  • Now grind the ingredients, given under the "To Grind" list, in the ingredient table. 
  • Grind into a smooth paste by adding little water while grinding. 
  • Add the ground paste to the cooker. 
  • Add the yogurt to this. 
  • Mix well.
  • Add salt and 3/4 cup of water. 
  • Cover the pressure cooker and cook for 1 whistle. 
  • If the whistle comes very quickly in your cooker, cook till 2 whistles. 
  • Once the pressure settles down, open the cooker. 
  • Mix well.
  • Add the milk. Use full cream milk for best results. 
  • Once it comes to one boil, switch off the flame.
  • I used raw milk. Do not use hot milk. If using boiled milk, add room temperature milk. 
  • Switch off the flame.
  • If needed you can garnish with coriander leaves.
  • Check the consistency of the kurma. It tends to thicken slightly after it is cool. So if you are packing for box or consuming after 2 hours, make it a bit thin, so that it will be perfect when you consume it. 
Notes:
  1. As we add cashew nuts and milk, you can add 4 green chilis while grinding. I felt mine less spicy. 
  2. Kalpasi | stone flower can be added while grinding to enhance the flavour. Do not add more, just a small piece will do. 
  3. You can add baby corn, paneer and some cauliflower florets to the kurma. 
  4. White kurma goes well with Chapati and poori.

Dill leaves Dal recipe, Shepu or Suva dal recipe

Dill leaves dal | Shepu or Suva dal, with step by step pictures, using moong dal and dill leaves as the main ingredient, a popular dal variety of Karnataka. Dill leaves, i have seen in the market but never attempted to pick the pack and cook it at home. For us Vegetarians, dal is a staple food, which i include in my daily meal. I usually make Dal palak or Green moong dal sabji. Traditionally in karnataka they put dill leaves in Akki roti. I have heard from many that dill leaves give an acquired taste and a pungent smell too. Recently my friend shared a small portion of dill leaves with moong dal. That was the first time i tasted dill leaves dal. I liked the taste and i wanted to give it a try. I got a small bunch of dill leaves from the nearest Indian shop and tried the Dill leaves dal also called as Shepu|suva dal. I was waiting for the response from the family but everyone had the dal without any complaints. Generally dill leaves is given for lactating mothers. It has lots of health benefits too. Khoya Matar recipe, Side dish for chapati

Khoya matar recipe with video and step by step pictures, a popular rich gravy made using mawa and peas pairs well with chapati, roti and naan. I had a small portion of khoya with me after making Diwali sweets, i wanted to try a gravy using khoya for a long time. So i tried yesterday the popular Khoya matar, generally paneer will be added to the gravy but i don't have stock of paneer so i skipped it. The gravy was finger licking delicious and creamy and tasted very similar to a Restaurant style Khoya matar.

Paneer Masala recipe, a Dhaba style paneer masala an aromatic paneer gravy prepared by marinating paneer in basic spices and cooked in an onion tomato based semi gravy. I have noted this Dhaba style Paneer recipe from Chef Venkatesh Bhat show, 2 years back. I very rarely note down recipes, and this is one is among them. I tweaked the recipe to suit our taste buds. Yesterday while i was checking for something in my old note book, happened to see this recipe. I have a pack of fresh paneer at home and wanted to try out this paneer masala recipe. It was a super duper hit at home and kids loved it a lot. Do try this Dhaba style paneer masala at home and I am sure you will love it.

Cabbage sabzi for chapathi, a north Indian style sabzi recipe, with step by step pictures.
Generally we make cabbage curry | stir fry in South Indian style, but i always wanted to try a North Indian, Punjabi version of this Cabbage sabzi. Few weeks back i tried this cabbage recipe at home and everyone at home liked it. So it tried it again yesterday and made step wise clicks to post it here. The sabzi is quite simple and can be made in just 15 mins.

Pepper paneer gravy recipe | Paneer recipes

Pepper paneer recipe in coconut milk gravy, a delicious paneer dish pairs well with naan| roti. I tasted this for the first time in Zaffron banana leaf restaurant in Singapore. When i was invited there for food tasting in August 2017, i tasted this pepper paneer(which is called as Paalkatti milgaai pirattal). I asked the Chief chef there about the recipe and it sounded so simple too. Later in October 2017, i attended a cookery demo by Chef. Damu in the restaurant and was taught the same recipe. I learnt the exact recipe from the chef himself and it tasted the same, when i tried it on that day. It is actually Chef's signature recipe, which is made using Prawns. But since i was the only vegetarian in that group, he told me to replace it with Paneer. Try this pepper paneer gravy recipe at home and i am sure you will love the chettinad version of paneer gravy.
This post i have drafted few months back, but didn't post. I generally keep one recipe post in reserve,which will help me on days when i have no time on my disposal to write a post. As Kids are having their term break holidays,i don't have much time to concentrate on my work. So this post comes as a breeze for me today.

Gajar matar subzi recipe| Carrot peas subzi

Gajar matar subzi is an easy dry curry made using winter vegetables like Delhi red carrots and fresh green peas. I have never bought these red carrots. First of all,i came to know about these only after coming to Singapore. I have never seen this in Chennai, when i lived there. Generally they make gajar ka halwa with this carrots. As this gajar matar combo is a popular one i thought i will post this recipe using the red carrots which is in season now. You can use normal orange carrots which we get throughout the year. This subzi goes well with rice and roti too. I have posted punjabi aloo beans subzi,i adapted the similar recipe and made slight modifications in that recipe.

Veg Salna recipe | Parotta salna recipe

Parotta salna is a famous street food in Tamil nadu, espeically in my native town Madurai. Though i have never tasted the salna in road side shops, i used to admire the sound of Kothu parotta and the mesmerizing smell of the salna made in the shops. Most of the salnas are non veg and so i never attempted to try that there. I remember tasting Chilli parotta from a famous road side shop in Madurai, which our friend bought once for us. Recently i got the recipe of vegetarian salna from our neighbor aunty, who gave me the recipe of kuska, kurunai vadai.. Aunty sent me the handwritten recipe through what's app and i tried it immediately the next day. It tasted so yum and we had with Kuska biryani and kids had with store bought frozen parotta. This parotta salna goes well with chapathi too.

Sweet corn masala recipe, side dish for chapathi

Sweet corn masala, an onion tomato based gravy pairs well with roti and pulaos. I have tried a sweet corn masala gravy once for Aval vikatan supplement. This method is almost similar to my Paneer butter masala recipe. Yesterday i saw a pack of sweet corn lying in my refrigerator,generally i pressure cook that with salt and have it as is. But suddenly i thought i will make a masala gravy with that, to pair with roti. It turned out well and it was creamy and yum.
My kids who are fond of Sweet corn, loved this sweet corn masala. I made some kulchas for the kids and we both had with rotis.

Sweet corn masala recipe

  Preparation Time : 15 mins | Cooking Time : 10 Mins |Serves: 4

   Sweet corn kernels  1 cup
   Onion   3
   Tomato  2
   Capsicum  3 tblsp
   Garlic  5-6 cloves
   Yogurt   1 tblsp
   Oil  3 tblsp
   Red chili powder  1 tsp
   Cumin powder  1/2 tsp
   Coriander powder  1/2 tsp
   Garam masala   1 tsp
   Kasoori methi  2 pinches
   Cashew nuts  7-9
   Milk  1/3 cup
   Salt  as needed  
Method:
  • If using fresh sweet corn, pressure cook this by adding little salt and take out the kernels one by one.
  • Chop one onion into small cubes and the capsicum also into small cubes.
  • Chop another onion finely.
  • The remaining one onion chop roughly as we will grind this onion.
  • Chop the tomato into two and grind this in a mixie.
  • Soak the cashew nuts in warm water for 10 minutes. 
  • Drain the water and grind this into a smooth paste using the milk. Mix the remaining milk to this and keep this aside.
  • In a pan add 1 tblsp of oil and add the cubed onions and capsicum.
  • Saute this by adding little salt to this. 
  • Let the capsicum be crunchy and ensure it should not become soft.
  • Keep this aside.
  • In the same pan add little oil and add the roughly chopped onions and the garlic.
  • Cook this till it turns slightly golden brown colour.
  • Keep this aside.
  • Cool completely and grind into a fine paste. Add little water while grinding.
  • In a pan add 1 tblsp of oil and add the finely chopped onions.
  • Cook till it becomes translucent.
  • Add the onion paste to this. Cook for a minute.
  • Add the ground tomato puree to this.
  • Add the red chili powder, cumin powder, coriander powder, salt and garam masala.
  • Add the yogurt to this. 
  • Cook this in a medium low flame for 10 minutes, till the raw smell disappears.
  • The gravy will splutter as it shrinks, so keep it covered to avoid mess around the kitchen hob.
  • Add the sweet corn now, and add 1/2 cup of water.
  • Let this cook for 10 minutes.
  • Add the cashew milk mixture now and simmer the flame.
  • Add the sauted capsicum and onions.
  • Crush the kasoori methi and add to this gravy.
  • Mix well.
  • Switch off the flame.
  • Sweet corn masala is ready to serve.
  • Serve with chapati, pulao, naan or even plain basmati rice too.

  3. Instead of cashew milk paste, you can add fresh cream in the last too.

Paneer in white gravy | Malai paneer recipe

Malai paneer gravy | Paneer in white gravy, is a rich creamy white gravy, goes well with roti, naan and spicy pulaos. Generally i make paneer gravy with onion tomato base. Even for malai kofta also i make the same thing but recently during my India trip i happened to taste Malai kofta in white gravy, in a party. I tried this with biryani and naan and it tasted well with both. I tried the same with paneer yesterday. This is similar to the methi malai mutter. You can make koftas also with this White gravy as base. I adapted the recipe from Tarla dalal's website, with little changes. Even for parties or potlucks you can include this along another spicy tomato based gravy, it will be a great combo to pair these with naan, rotis and pulao.

Lasooni dal tadka recipe, Garlic dal recipe

Lasooni dal tadka | lasuni dal is a simple dal recipe made with the addition of lot of garlic. I have given this recipe for Aval vikatan supplement 3 years back. While i was going through those books, i thought i will post this easy dal recipe. This can be had as an accompaniment with plain rice or with chapathi or paratha. Adding lot of garlic gives a nice flavour to the dal and also enhances the taste.

Channa Kurma recipe | Side dish for chapathi

Kurma is an excellent side dish for chapathi, poori, kuska biryani or parotta. I have posted peas kurma, paneer korma and many other kurma recipes. Generally at my place kurma is preferred less compared to channa masala.  Channa kurma | Chickpeas kurma, i have tried few months back and it was liked by every one at home. So after coming back from my vacation, i tried this kurma again. I have posted this channa kurma recipe with a quick video and step wise pictures too. Aloo Gobi Mutter recipe

Dry version
Aloo gobi mutter is a popular north Indian subzi. Though i have tasted this combo many times in restaurants, this is the first time trying the recipe of aloo gobi mutter dry at home. This can be served with roti or with rasam rice too. After a month of holiday to India, all we need is a simple homemade food. I made this simple Potato cauliflower peas curry for lunch today along with Garlic rasam. The rainy weather complimented this delicious combo. Try this at home and let me know how it turned out.
