Oats chocolate chip cookies recipe with step by step pictures, an eggless cookies recipe made using oats, wheat flour and brown sugar. I have been thinking to post some cookie or cake recipe before Christmas, finally decided to post this Oats cookies recipe, which is a super hit at home. I have bookmarked this recipe long back from here. I got a pack of Gula melaka, a Malaysian palm sugar, from my friend. I decided to use it up for this Oats cookies recipe. It turned out so well and kids enjoyed it a lot. The addition of choco chips in this Oats cookies makes kids friendly too. Whole wheat coconut cookies, Eggless cookies recipe

Whole wheat coconut cookies recipe with step by step pictures, crispy coconut cookies. Some time back i tasted a coconut cookies from Haldirams and it was too delicious. I have posted an eggless coconut cookies recipe few years ago. Few days back while meeting up with some friends, they were talking about the celebration of Ganpati in their place. Generally in South India we make modakam, ulundu kozhukattai, sundal, vadai and payasam for Ganesh Chaturthi. But in Maharastra, apart from making the traditional Ukadiche modak, they make varieties of sweets, pedas and even cookies for this festival. Also i have seen kids cut birthday cake for Ganesha. I really love the way kids do the pooja everyday and enjoy the festivity. Though i have few innovative ideas for kozhakkati stufing, i am pretty sure, they are hardly tried by anyone at home as we make only the traditional stuff. Jowar Chocolate chip cookies, eggless cookies

Jowar chocolate chip cookies, eggless, butterless, no sugar cookies using healthy Jowar millet flour. A healthy jowar cookies using Karupatti, palm jaggery, with step by step pictures and Video. I have already posted Thinai cookies(foxtail millet cookies) The same recipe i used for this jowar cookies but used chocolate chip and replaced jaggery with Karupatti, palm jaggery. The cookies turned out so well and i felt so good for giving the kids a healthy snack. When i saw a pack of Karupatti, Pure Palm jaggery in Sri Murugan stores, i bought the small 200 gm packet. They have 500 gms packet as well. I decided to make Karupatti paniyaram and Karupatti appam but then i decided to make the cookies as i had a lot of  jowar flour with me.
  For my friends in Singapore, we get Karupatti, palm jaggery in Sri Murugan stores. I got this from the recently opened one in Simei. They are available at affordable prices. Sri Murugan stores do home delivery also. I always shop my grocery there as i always find them fresh and value for money.

Yogurt brownies|Chocolate brownies, almost fat free brownies as no butter or oil is used in this recipe. These brownies were tasted awesome and when it is approved by kids then we can call it as a no fail yogurt brownies recipe. Now a days i am slowly reducing the consumption of store bought biscuits. I try to bake some healthy goodies at home for the kids snack box. Even sometimes if i use plain flour,at least i feel it is better than the store bought biscuits and cakes. When they wanted something chocolate based, i decided to make Chocolate brownies for them. This recipe attracted me a lot as it doesn't involve any butter or oil in this. The yogurt only gives the smooth texture to the fudge brownies. I used Alvas Natural curd to make this Yogurt brownies.

Oven- roasted Vegetables recipe

Oven roasted veggies,I always used to drool at the pictures of these whenever i see in Instagram and Food gawker. Some how it was big mind block for me to try my hands on Oven roasted veggies. When i did a cookery demo here in Singapore, i once attempted a Veg shaslik in barbecue sauce, which was made on tawa. Oven roasted veggies is similar to this only. Few weeks back, while i was chatting with my school friends, one of my friend told that she makes oven roasted vegetables on a regular basis. I got the tips from her and she clarified all my silly doubts and finally i made the oven roasted veggies, with a simple seasoning of salt and pepper. Try this at home and enjoy your meal.

Margherita Pizza recipe, Pizza Margherita

Pizza Margherita | Margherita pizza is a classic cheesy pizza uses mainly cheese and tomatoes for topping. Generally we add veggies like capsicum ,sweet corn, baby corn, olives for pizza topping. I have posted Tandoori paneer pizza (with video)too which is again a classic pizza with Paneer toppings. This morning i planned to make pizza for kids when they are back from school. I asked them about the topping options and Varsha suggested Margherita pizza and Varun too agreed to that. Approval form both the kids for a dish is a bliss. Moms with 2 kids will vouch for this. Veg lasagna recipe | Easy Lasagna recipe

Lasagna is similar to pizza but made with lasagna sheets. We first tasted veg lasagna during our Europe trip in France border. Then i tried it at home during few months back and posted in Jeyashri's kitchen Instagram too. After that Varsha's friends who are all in Instagram asked me to make lasagna for them. So after their board exams got over i called all of them home and made lasagna for them. So finally i decided to make lasagna for Jeyashri's kitchen and posted the step wise recipe here. Make this at home and let me know how it turned out. I wanted to cottage cheese lasagna too, will post  the Indian version of Paneer lasagna soon.

If you are following jeyashirs kitchen on Instagram, you must have seen this in my story. As varsha bakes a lot now a days, it has been a long time since i baked anything. Paneer pizza | paneer tikka pizza is a Indian version of veg pizza. Here in Singapore we get only one option for vegetarian in Pizza hut. So whenever we go to India we ordere paneer pizza and enjoy. A very good friend of mine who always bakes cake for all occasions, is an expert in making pizza too. Recently she gave us a pizza party for her husband's surprise birthday party. The tandoori paneer pizza was the highlight of all the pizzas. She followed the recipe from Tarla dalal recipe book and passed on the book to me. Also she patiently explained all my doubts and gave me few tips to get the pizza perfect. I adapted the pizza base recipe from The Kitchn, and the paneer topping recipe from the tarla dalal book. I was literally jumping out of joy as my pizza turned out so perfect. My food crictic in my home, my daughter Varsha gave me  👍👍for this paneer pizza. What else do i need. We are here enjoying our rainy day dinner with pumpkin soup, pizza and fruit custard.

Donut mug cake recipe | Easy eggless desserts

Donut mug cake is an easy microwave mug cake recipe topped with chocolate ganache. This is perfect dessert for a valentines day celebrations. Valentines day is more special to us as it is out little Prince Varun's birthday too. I have planned to make eggless doughnuts for him but i had to attend to few other work, which was not planned before. So made this donut mug cake for valentines day and an eggless double chocolate chip cake for his birthday. I decorated the cake with whipped cream icing and m and m candies. Thumbprint cookies recipes | Eggless cookies recipes

Thumbprint cookies, if i remember well, this is the first one i baked when i got my new oven 7 years back. The simple easy cookie me and my daughter baked again for the last working day of this year, before their school holidays. I used my puppy faced cookies for the base and made these thumbprint cookies. The eggless cookies turned out so beautiful and everyone in the class loved it very much. As the Christmas season is nearing, you can bake this easy eggless thumbprint cookies at home and enjoy the holidays. We are off for vacation to Chennai in a few days, so i will be scheduling few simple posts during my vacation. Check out my



Thumbprint cookies

  Preparation Time : 20 mins | Baking Time : 10-12 Mins |Makes: 18-20 cookies

     All purpose flour | plain flour | maida   1 cup
     Butter    1/2 cup
     Vanilla essence   1/4 tsp
     Sugar  1/4 cup
     Jam   1- 2 tbslp approx 
     
     


Thumbprint cookies
Method:
  • Soften the butter and powder the sugar. Add both together in a bowl and mix this nicely.
  • Add vanilla essence to this. 
  • Add the flour to this now and knead this into a pliable dough. If you feel that the dough is bit dry add 1-2 tblsp of milk to this and knead well without any cracks.
  • Make them into small lemon sized balls and slightly flatten it. 
  • Microwave the jam for 45 seconds and keep it ready. 
  • If you do not have a microwave you can keep the jam in a bowl of hot water.  
  • I used kissan fruit jam. You can any jam of your choice.
  • Make a dent in the center using your thumb and fill the dent with jam. Do not add too much jam, else it will over flow and spoil the appearance of the cookie when it is baked.
  • Alternatively you can use a cookie press to make shapes. 
  • Bake the cookies in an oven for 10- 12 minutes at 160 degree Celsius. 
  • Allow this to completely cool. The cookies won't change colour. 
  • Thumb print cookies are ready . Cool this completely in a wire rack and store the jam cookies in an airtight container.

Notes:
  1. If you feel the cookies bit soft when you take out from the oven, just allow that to cool completely and see, if it is still soft then bake for 2-3 minutes more.
  2. Do not add more jam to the dent, else it will overflow and splash all over the cookies while baking and spoil the look of the cookies.
  3. You can follow my eggless custard powder cookies recipe also to make this thumbprint cookies.
  4. Instead of jam you can add nutella too.

Baked potato

Baked potato loaded with cheese and beans, is a classic recipe made with potato. I was introduced to this jacket potato by my brother in law, whom we visited this June. He was casually telling us that he will make make jacket potatoes for her daughter and it is very simple to make also. Honestly, i haven't heard the name before and was fascinated by it and asked him for the recipe. He laughed out loud and told me it is simple microwaved potato and served with butter and cheese. Also he told there are many other ways to eat that, but he always makes in this simple way. He also made it for us on the last day of our trip and i totally enjoyed it and the kids too loved it very much. It was exactly a month now and finally i am here with my own version of baked potato with cheese. See the notes section for few variations to this recipe. This can be done in microwave too. Eggless Chocolate Brownie | chocolate brownie recipe

Eggless brownie

Eggless chocolate brownie, i have tried this recipe quite a lot of times and every time it is a super hit. Few months back when i did a cookery show in a nearby community center, i made this eggless chocolate brownie along with the hara bhara pulao and potato halwa. All the recipes were super hit in the show. I have adapted the recipe for chocolate brownie from nag's space. This brownie was super hit among my kids and their friends too.  The color of the brownie depends on the brand of cocoa powder. This time i used the bake king brand and it turned out bit dark. Check out my other eggless baking recipes. As today is Varsha's birthday, i thought today i will post this brownie recipe.

Finally i tried this sometime back to post during Christmas. It turned out pretty well. In this recipe i have given both the option of making it in oven and pressure cooker. EGGLESS RAGI CHOCOLATE CAKE| MILLET RECIPES

Making cake with millet flour, is the one i always love. I have already baked a thinai cake and the recipe of which is in my recent cookbook. I wanted to make a cup cake with ragi|finger millet flour. Finally i made this vegan ragi chocolate cake and it was a super hit among kids. The recipe was slightly adapted from here . I packed this for their snacks and they really enjoyed it very much. I just topped the cake with a nutella galze. Since i had 1 tblsp of nutella lying in  the box, after trying a sandwich with nutella (recipe coming soon). I felt very satisfied for giving a home baked millet cake for kids to school.  Even if you do not have oven, you can try the same cake in pressure cooker too. Ragi chocolate cake

  Preparation Time : 10 mins | Cooking Time : 35 Mins |Serves: 16 square pieces

     Ragi flour   1 cup
     Whole wheat flour   1/2 cup
     Sugar    1/2 cup
     Cocoa powder  1/4 cup
     Baking soda   1/2 tsp
     Oil      5 tblsp
     Lemon juice   1 tblsp
    Vanilla essence     1 tsp
    Water    1 and 1/4 cup         
   For nutella glaze
   Nutella   1 tblsp
   Butter   1 tsp
   Milk    2 tblsp

Method:
  • In a wide bowl, sift the ragi flour, whole wheat flour, baking soda and cocoa powder.
  • Powder the sugar and in a bowl add the sugar, oil,lemon juice, vanilla essence and water.

  • Now slowly mix the wet ingredients and the dry ingredients together and whisk it gently without any lumps.

  • Grease a cake tin with oil and dust it with little flour.
  • Pour in the batter to this and genlty tap it to get rid of the air bubbles.

  • Bake this for 30 -35 minutes in a oven at 160 degrees. Insert a toothpick in the center and if comes out clean then it is done. Mine took 30 minutes . Timing varies from oven to oven. 
  • Allow this to cool completely. Cut them into sqares after pouring the nutella glaze.

  • To make the glaze, in a pan add nutella, milk and butter together.
  • Keep in a low flame and stir it. Let this get combined together. Once the butter is melted switch off the flame. It took 2-3 minutes for me to make this glaze.

  • when the cake is completely cool, pour the glaze over the cake and spread it evenly and genlty with a butter knife.

  • Then cut this into squares.

Notes:
  1. You can replace whole wheat flour with maida too.
  2. You can skip the nutella glaze and serve it plain also.
  3. The cake was bit dense but was very tasty and kids friendly too.
  4. You can add finely chopped nuts while mixing the flour.
  5. Chocolate chips can also be added.

It has been my long due to try the cake in pressure cooker. Though i have read in so many websites but still i don't have the guts to try it at home. Always my readers say, recipes from jeyshris kitchen gives us confidence to cook. But this post is the other way round. Few of my readers who tried cake in pressure cooker tempted me to try this cake. One of my friend sent me step wise picture for this cake and it gave me more confidence to try it. Also She tried it few times and every time it turned out perfect. So finally i tried my hands on pressure cooker cake taking all tips from readers and friends who tried it. so for all my readers who do not have an oven can enjoy home made cakes.

DOUBLE CHOCOLATE CAKE | EGGLESS CAKE RECIPES

Chocolate cakes are always loved by kids and my kids, Varsha and Varun are not an exception to this. In fact they love all my baking recipes. This is a double chocolate cake, which is always a super hit at our place. Few months back when we went for a beach picnic, a friend of mine baked this delicious double chocolate eggless cake. The original recipe is adapted from here. Varsha was too fond of the cake and was asking me to make this for her. I made once for her, and the next time when she asked i told her why can't you learn to bake it on your own. So here comes the post of eggless double chocolate cake from my sweet daughter Varsha suresh, who is turning 14 tomorrow. I just clicked the pictures for the step wise  pictures and the set up for the final picture was done by her.  Over to Varsha..
Update:
This double chocolate cake is updated by a video. I can proudly say that Varsha make this cake so well and always she bakes for all the parties. After reading more about basics on baking she altered few steps in the video. She skipped the lemon juice and she put the flour mix to the wet ingredients.
She used the parchment paper in the bottom instead of dusting with flour.

know who I am. I love to eat more than cooking. I enjoy baking cakes and muffins.
I'm the one who usually brings  the cake for any of my friend's birthday and hence

itself. It is the perfect choice for chocolate lovers. Most of my friends go head
over heels for chocolate (just like me :p), so I usually bake chocolate cakes. I've
baked this cake a couple of times.  Since many of my friends love chocolate I've
baked this cake for my friend's birthday, my teacher's birthday as well as for an
earth day fair. This cake has always turned out soft (for me) and remains soft even
when kept in the fridge overnight. When my teacher had tried it for the first time
she was very surprised to hear that an eggless cake had turned out to be very
soft. All of my friends love this cake.  Some have even asked me for the recipe . So
here is the recipe for a mouth watering double chocolate cake.

ATTA NAN KHATAI RECIPE |WHOLE WHEAT NANKHATTAI

Nan khatai is a Indian style short bread cookies. I have already posted the recipe of Nan khatai , also posted a version of saffron laced nankhatais too. Though i already posted 2 sweet recipes for holi, since today is holi festival i thought i will post some thing colourful. Suddenly thought of this atta nan khatai which i have bookmarked from Divya's space long back. I made this and added few drops of food colour to the dough to make it colourful.Wish you all a very Happy Holi.
The original recipe used only whole wheat flour for making nakhattai.
