Pottukadal vadai | Instant vadai recipe made using pottukadalai| chutney dal, easy to make crispy snack, recipe with full video and step by step pictures. Generally we make ulundu vadai or masala vadai by soaking dals and grinding it into a batter. This pottukadalai vadai is an instant one which doesn't needs any soaking, just grind the chutney dal and make the vadai. This is similar to the pattanam pakoda i posted some time back. Mushroom sandwich recipe

Easy to Mushroom sandwich recipe with step by step pictures and video, perfect for kids lunch box and back from school snack. Also this sandwich paired with a hot soup is a perfect one for a weeknight quick dinner too. I had some left over mushrooms after making Mushroom biryani. Last week one of my friend visited us home and she was talking about Mushroom Sandwich, then i decided to make this with my left over button mushrooms. It turned out so well. The most satisfying thing is the Mushroom sandwich was a super hit among kids. I added some cheese and they enjoyed a lot.

Avocado Taco chaat recipe

Avocado Taco chaat, yet another fusion recipe, with step by step pictures, a perfect party starter. We used to buy avocado rarely. As i am not a big fan of avocados and also feel it very heavy for tummy, i rarely buy them. But kids love Avocado milkshake. This time i bought the avocados to make an interesting toast. But the plan totally changed when the kids wanted Tacos. They tasted tacos in Chennai during our visit last month. But somehow they didn't like the outer shell and was asking to make it at home with the tacos available here. We decided to something using avocado and finally ended up in this Avocado Taco recipe. We all enjoyed the texture and taste of avocado in this fusion chaat recipe. I used the frozen red kidney beans and it will quite handy for us during such unplanned moments.

This medhu bonda recipe is a softer one and we can see this on the road side tea shops around Tamil nadu. For the past 2 weeks i was on a vacation and traveled to my home town Madurai, for a couple of days and to Trichy for 2 days. The trip brought back memories of  child hood. Khakra chaat recipe

Khakra chaat recipe, a simple and easy to make chaat recipe, using methi khakras as the base. This is a perfect one for parties and potlucks. Just keep every thing in hand and assemble before serving. You can make this Khakra chaat using home made khakras or store bought ones too. Just as masala papad, we are making this chaat with khakra as base. I have used store bought khakra for this recipe. If you want to mkae Methi khakra at home do check out my recipe. I used the samosa chutney and the green chutney with raw mango for making this khakra chaat. You can use the sweet chutney and green chutney too.

Paneer Tikka in Oven, Mango Paneer tikka

Paneer tikka in Oven, Mango paneer tikka with step by step pictures, paneer cubes marinated in mango fresh mango masala, cooked in an oven. It's summer and mangoes the king of fruits are in season now. Though i love to eat mangoes as it is, i love to try out different recipes out of mango too. I have posted many Mango recipes in Jeyashri's Kitchen. This time also i have listed few interesting mango recipes. Paneer and mango combo is so awesome and i wanted to try this out last year itself. I got the idea from here and bookmarked it too. For the first time i made Paneer tikka in Oven and i am so happy with the results. I have posted Hariyali paneer tikka on stove top sometime back. This Mango one is a great hit at home and kids too loved it.

Gulab Jamun mix pakora recipe

Gulab jamun mix pakoras, crispy pakoras made using left over gulab jamun mix, recipe with video and step by step pictures. Recently i made a cookery show for the promotion of a popular brand of gulab jamun mix. I was instructed to make Gulab jamun using the mix but i suggested instead of making that, which is very common, some interesting recipes with gulab jamun mix. The team was excited and i curated 3 recipes using Gulab jamun mix. The cookery demo was a super hit and the team was overwhelmed with the response. This pakora using gulab jamun mix was a super hit, i will share the others in the coming up posts.
I got the idea of making pakora using from here, just experienced with my own measurements. Also there few sweet and savory recipes which i tried using gulab jamun mix. Everything turned out so well and gained a good response. I will share the dessert recipes using gulab jamun mix in the coming up posts.

Thai style bhel puri, popular Indian chaat bhel puri, made using home made thai sauce, a must try fusion recipe.  Generally i don't try much fusion recipes but this thai style bhel puri, i tasted in a restaurant recently. I was so impressed by the taste and the idea of recreating it at home was lingering in me. Last Sunday, i tried a small batch at home just for taste. It was a super hit at home and kids appreciated it very much. With some improvisations i could bring out the recipe of Thai style bhel puri, a recipe which never fails to impress your taste buds.

Onion Pakoda recipe | Vengaya pakoda in Tamil| ulli vada, a popular South Indian tea time deep fried snack made using Onions, gram flour, rice flour and other spices, recipe with step by step pictures and video. Onion pakoda not only pairs with tea or coffee, most of the houses we have it with rasam rice, curd rice and with any variety rice too. During my childhood days, appa used to but pakoda from a famous shop in Madurai, and we will look forward to it. Ghee Podi idli recipe, How to make podi Idli

Ghee podi idli recipw with step by step picture and video, a delicious snack made using left over idlis or even with fresh idlis.  Idli smeared with molagapodi is one my most favorite breakfast | snack. Even my kids prefer to have podi idli for lunch box. Recently i have tasted Ghee podi idli in few different places and i wanted to recreate that version at home. You can make this with whole idlis but i have made by making the idli into cubes. If you have left over idlis at home from morning breakfast, you can make this for tea time snack. So if you are looking for easy recipes using left over idli then it is a must try recipe. Also you can try the Idli tikka recipe which i have posted some time back. This flavourful ghee podi idli can be served along with a onion raita too. Though idli upma is my most favorite one, more than idli, recently this ghee podi idli tops my favorite list. Paneer Sandwich, Easy Sandwich recipes

Paneer Sandwich recipe with video and step by step pictures, Paneer cubes marinated in Indo Chinese style and made with a creamy potato spread, a perfect party snack and a lunch box recipe too. I have tried this recipe few times from a cook book which i bought many many years back. Recently when i was arranging my shelf, i saw this recipe again, I have all the ingredients with me and wanted to try for kids. This paneer sandwich is again a super hit at home and kids loved it a lot. Paneer can be replaced with Tofu in this recipe. Do try this recipe at home and let me know how it turned out.

Paneer Sandwich

  • Cook time: 25 Minutes
  • Serves: 4

     Bread     10 slices
     Paneer cubes  250 gms
     Garlic  1 tbslp (finely chopped)
     Soya sauce  1/2 tsp
     Ginger  1/2 tsp (grated)
     Pepper powder  1/2 tsp
     Salt  as needed
     Butter  1 tsp
    For the potato spread
    Potato  1 cup (mashed)
    Tomato ketchup  1 tblsp
    Pepper powder  1/2 tsp
    Butter  2 tsp
    Salt  as needed

Method :

  • In a wide bowl add the paneer cubes. If it is frozen, bring it to room temperature. 
  • Add the ginger, garlic, pepper powder, salt and soya sauce to this.
  • Mix well and let this marinate for 5-10 minutes.
  • In a pan add butter and add the marinated mixture. 
  • Saute for 5 minutes and keep it aside.
  • Let's make the potato spread now.
  • In a bowl add the mashed potato. Ensure there is no lumps. 
  • Add the tomato ketchup, pepper powder and butter to this. 
  • Mix well.
  • Keep a sandwich maker ready.
  • Butter a bread and keep the buttered portion down on the sandwich maker. You can make this on a tawa too. 
  • Spread the potato mixture on the top side.
  • Place little portion of  paneer mixture on it.
  • Butter another bread on one side.
  • Place the buttered portion up and keep on the top. 
  • Cook till it turns crisp and brown.
  • If making on stove top, flip on both sides and cook on a medium low flame. 
  • Once done take out and cut them into triangles or squares. 
  • Serve the sandwich hot or you can pack them for lunch box too. 


Notes:
  1. You can make the potato spread and paneer ready the previous day night and make the sandwich the next day morning for breakfast or lunch box.
  2. Sweet potato can be replaced for potato. 
  3. Tofu can be used instead of  paneer.
  4. Paneer Sandwich can be made on stove top too.

I have posted 3 varieties of Ribbon pakoda | ola pakoda recipe with video. I have posted garlic sev recipe too. Yesterday Varsha was telling me to make garlic flavored ribbon pakoda for Diwali. That brought me so many childhood memories. Those days garlic in cooking was so rare at home so once when i asked my grandmother to make garlic flavored ribbon pakoda, she gave a weird look and told me that we don't make those stuff at home. My friends at school bring Garlic sev and Garlic Ribbon pakoda and i used to enjoy it. We lived in Madurai and so we used to get the famous Sattur seeval, Arupukottai seeval from friends who travel to these places quite often. These cities are quite closer to Madurai and the snacks taste so yummy. They use a traditional seeval kattai for making this ribbon pakoda. But since we don't have it at home, i used the achu which i used for making the Coconut ribbon pakoda. Do try this Garlic ribbon pakoda recipe at home and let me know how you liked it. Ragi Butter Murukku recipe,Murukku recipes

Ragi butter murukku| Finger millet murukku, crispy murukku using ragi| finger millet flour, perfect for Deepavali. I have tried savory recipes using ragi flour. Though they turn out crispy, somehow i feel the slight bitter taste after tasting the murukku. Even i have tried murukku using millet flour like samai, thinai and varagu. I have never tried the traditional way of making flour, using the store bought flour only. Today i tried Ragi butter murukku by adding some rice flour to it. It was very crunchy and bitter taste was not there in this murukku. I don't say it is a healthy version of murukku, as we add millet flour to this, but i am sure, it is definitely a different version to try out for this Deepavali.

Rajma murukku recipe, Diwali recipes

Rajma murukku recipe, Red kidney bean murukku, crispy murukku recipe using cooked rajma(red kidney beans) and rice flour as the main ingredients, recipe with video and step by step pictures. Generally we make murukku using urad dal, besan flour and we south indians make many varieties of murukku too. Recently i came across Channa murukku recipe in a cookbook. I tried the same 2 weeks back using replacing rajma with channa. It turned out very well and i shared with my friends and they loved it too. Karamani Sundal recipe, with video and step by step pictures.
 Karamani Sundal made using freshly ground spices, enhances the taste and flavour of the sundal, an easy Navaratri recipe. Navaratri 2018 is starting today. We make variety of Sundals for the Navaratri season and Jeyashri's Kitchen has a huge collection of Navaratri Sweets and Sundal recipes. This year also i planned to post few sundal and sweet recipes and got the Red eyed karamani to make sundal. I actually planned to make a simple basic sundal but some time back, one of my friend shared a Karamadhu podi recipe(the Iyengar style curry powder) with me and also shared his mom's recipe of the same. Though i got the recipe some time back, i didn't try it out. Suddenly after soaking the karamani sundal the idea of using the karamadhu podi in the sundal. We both discussed few other options of using the powder too.(see notes section) I am not a great fan of karamani, as even during my childhood days, whenever karamani sundal is made during navaratri, i will get so upset. I never like karamani, but the red one was still ok compared to the lobia beans. This podi was too flavourful and it took the lame karamani to a different level. Try this out with any variety of sundal and i am sure you will enjoy it as how we did.

Green Moong dal vada recipe, no onion no garlic recipes

Green moong dal vada recipe, using split green moong dal, crispy no onion no garlic recipe, perfect snack during navaratri days. Few months back when i called my friends for Varalakshmi pooja, this  green moong dal  vada is a part of the menu. I have already posted moong dal bhajiya | pakora but that recipe includes potato and onion. This split green moong vada was a super hit and i served it with coconut chutney. Do try this during this festival season and let me know how it turned out.
