Nalla karam podi | Andhra style nallakaram podi recipe
Nalla karam podi is a variety of idli milagai podi, made with coriander seeds, red chili as the major ingredients. This is a popular andhra style podi. As we all knows Andhra style podis are more famous and quite spicy too. I have heard a lot about this podi but never tasted or tried even once. During our holiday, we met a mom and daughter, who are basically from hyderabad. Suddenly it flashed me to ask the recipe from her and messaged her yesterday. She replied back to me that her mil is expert in cooking and today morning gave me the recipe. Actually her mil wrote down the recipe in telugu and took a picture of it and sent to her. So sweet of her, she translated that and messaged me back. It turned out very well and i am waiting to have with my dosa , for tomorrow breakfast. I just had this with rice ghee and a little podi. It tasted very nice.

This recipe of andhra style paruppu podi | kandi podi, i learnt from my friend. I have already posted a Pottukadalai podi too. This podi was too flavourful. I didn't make it very spicy but if you want you can add extra few red chilly. This is a simple and quick podi recipe, taste divine when mixed with hot rice and ghee.

CURRY LEAVES POWDER |KARUVEPILLAI PODI RECIPE |PATHIYA SAMAYAL
Curry leaves powder when mixed rice smeared with ghee or sesame oil will taste awesome . a simple roasted papad will be a great accompaniment to this.

PREPARATION TIME: 5 MINUTES . COOKING TIME: 10 MINUTES. MAKES : 3/4 CUP
INGREDIENTS:
CURRY LEAVES |KARUVEPILLAI | 1 CUP (Tightly packed) |
URAD DAL | 1/4 CUP |
RED CHILI | 7-8 |
TAMARIND | A SMALL LEMON SIZED |
SALT | AS NEEDED |
ASAFOETIDA | 1/4 TSP |
OIL | 1/2 TSP |
METHOD:
- Wash the curry leaves and pat dry them using a kitchen towel.
- Spread this for some time.
- In a pan add the urad dal and red chilli till golden brown and keep it aside.
- In the same pan add oil and add the tamarind and asafoetida saute for 2-3 minutes in a low flame.
- Keep it aside. Now add the curry leaves and saute for a minute. The curry leaves will slightly shrink. Add salt to this and switch off the flame.
- when cool, grind this into a fine powder in a mixer. ensure that the mixie is dry.
- If you want to add garlic you can crush 1 or 2 garlic and roast this while roasting dals and grind it along.
- If you want this a coarse powder, grind the dal into fine powder and lastly add the curry leaves and just pulse it once or twice.
- I remember my mother in law adding half portion of urad dal and half portion of channa dal to this.
- Store this in an airtight container and always handle this with a clean ,dry spoon.
- This can be kept in room temperature for 15 days.

Thengai podi recipe, coconut podi
Thengai podi is a simple recipe, quite popular in Tamil brahmin houses, made with roasted urad dal, red chili and coconut as main ingredients. Coconut podi is generally mixed with hot rice, smeared with ghee or sesame oil. In our house we all love Thengai podi. In fact we love all podi varieties and i have posted Andhra style paruppu podi, Angaya podi, Karuveppilai podi, Kothamalli podi and many more.
Some times on a lazy day or when you are pressed out of time for cooking, podis come so handy. They pair well with any curry and kootu. A simple appalam will be a perfect for podi rice. I still remember my grandmother makes this thengai podi in bulk and store in the refrigerator. Also she makes Thenga milagai podi too. And those days we don't have any machine to grate coconut, she grates them manually with hands and makes these podis in bulk. Now i use the grinder attachment for grating the coconut, but i always make podis in small quantities.

CHUTNEY DAL PODI | POTTUKADALAI PODI RECIPE
Once in a while when we all friends meet for a weekday lunch, we just pool at any one of the friend’s house with the items which we cooked on that day and will have fun and of course over eating also. One among our friends, makes varieties of podis | powders and always keeps good stock of them and many times she will pack and send those powders on the day she makes it. I asked her the recipe of Chutney podi, which is made with simple 3 ingredients. It is very easy and handy to carry on days when you travel for a holiday,where you can get rice and yogurt and mix with this podi and can have with chips. So ladies out there even if you are going to your mom’s place for vacation, make chutney podi and keep this for your hubby. So here is the recipe for the easy chutney podi .
INGREDIENTS: (GIVES 1 AND 1/4 CUP PODI)
POTTUKADALAI |CHUTNEY DAL | ROASTED GRAM | 1/2 CUP |
KOPARAI |DRY COCONUT | 1/4 CUP (GRATED) |
RED CHILLIS | 9-10 |
OIL | 1/4 TSP |
SALT | TO TASTE |
METHOD:
- In a pan, add oil and saute the red chilli till it turns brown.
- Switch off the flame. Put the chutney dal podi and koprai in the same pan. No need to roast. Let this sit in the hot pan for some time.
- When it is cool grind this into a fine powder along with salt.
- Your chutney podi is done. Enjoy with hot rice smeared with sesame oil and roasted papad as accompaniment.
Notes:
- You can add 1-2 garlic pods while grinding to enhance the taste.
- the pottukadakai and kopra are slightly on the sweeter side , so do not lessen the red chillies.
- This podi was not spicy, you can even add more red chilli too.
- You can store it in cool dry place for 2 weeks and handle always with clean dry spoon.

PARUPPU PODI RECIPE
Paruppu podi is one of the simplest recipe and we all love this podi with hot rice and papad. any variety of kootu will go will this. Check out my garlic paruppu podi recipe too.

Preparation time: 5 mins| Cooking time:15 minutes| Yields: 1/2 cup plus approx.
INGREDIENTS:
TOOR DAL | 1/2 CUP |
PEPPER CORNS | 1 TSP |
RED CHILI | 2 NO |
ASAFOETIDA | 1/4 TSP |
SALT | AS NEEDED |
- Dry roast the ingredients till the toor dal turns into a golden brown color.
- When it is cool, grind it into fine powder.
- Enjoy with hot rice.
- Garlic flakes can be added while roasting if you like the garlic flavor in the podi

DRY COCONUT POWDER RECIPE
This is a very simple recipe i learnt from my friend after tasting this in her place one day when we are having lunch together after a tiring day of shopping groceries. She always keeps a lots of podis that can be mixed with rice and one among them is this Dry coconut powder also known as Kobbari Podi. Will soon share recipes of other varieties of podis also.
INGREDIENTS:
KOPRA|KOPPARAI|DRY COCONUT | 2 CUPS( GRATED) |
RED CHILLI | 8-9 NO |
GARLIC PODS | 3 PODS |
OIL | 1 TSP |
CURRY LEAVES | FEW |
MUSTARD SEEDS | 1/4 TSP |
ASAFOETIDA | A PINCH |
SALT | TO TASTE |
METHOD:
- Dry roast the redchilli in a pan.
- When this becomes cool, grind with grated kopparai and garlic.
- Add salt while grinding.
- In a kadai add oil and throw in the mustard seeds, curry leaves and asafoetida. When it crackles add the ground dry coconut mix.
- Saute for a minute and switch off the flame.

IDLI MILAGAI PODI RECIPE | SIDE DISH FOR IDLI|DOSA
Milagai podi- a spicy, flavourful powder made by coarsely grinding roasted lentils
and dry chillies. Milagai podi or Molaga podi or Idli podi (commonly referred in
restaurants) is a quick and easy recipe to pair with idli or dosa. We loved this since
our childhood days and have always insisted on having idlis and dosais with this
podi despite our mother making sambar or chutney. I fondly remember my mother
scolding us sisters for finishing off this podi in no time. As we say, history repeats
and now I find myself reprimanding my daughter for doing the same thing.
