Capsicum Sambar recipe, Paasi paruppu sambar

Capsicum Sambar recipe| Kudamilagai sambar| Paasi paruppu sambar, recipe with step by step pictures, no onion no garlic version of Sambar, pairs well with idli, dosa, pongal and also with rice. We usually add ladies finger, drumstick, small onions, brinjals, Pumpkin to Sambar. During my childhood days, capsicum is a rare thing to find in our place. Also it used to be very expensive too. So whenever we get capsicum in our market, amma makes Capsicum bajji. After i got married and moved to chennai, capsicum used to be available in most of the shops at reasonable price. I was introduced to Capsicum Sambar by my mil. She loves capsicum and puts in aval upma, sambar.. The smell of capsicum sambar used to be so divine for me, i still enjoy making sambar with capsicum.
This sambar i made using yellow moong dal | paasi paruppu. Generally sambar is made using toor dal in our homes. Paasi paruppu sambar is made for Tiffin items like idli, dosa and pongal. Do give this sambar a try and let me know how it turned out.

Paneer fried rice, manchurian, Lunch menu 23

This week's Lunch menu is an Indo Chinese menu. Fried rice and Manchurian combo takes place rarely in my Kitchen, as personally i am not a fan of big fan of it. I was left with Paneer and a packet of baby corn in my refrigerator, so decided to go for this combo. To make it complete, i made fruit custard, one of my most favorite dessert. Right from the childhood, i love fruit custard. My mom makes this so often during mango season. Those days it was so rare and unique and so we look forward to this custard a lot. I happened to see some mango in the market yesterday, so wanted to include this in the menu.

Homemade Garlic naan on stove top, without yeast, a popular Indian flat bread, recipe with full video and step by step pictures. Garlic naan is loved by everyone at home. Though i have never attempted making this at home, i always love to give it a try. I have posted Plain kulcha recipe and a Homemade Peshwari naan, with yeast. I just followed my Kulcha recipe for this recipe, as it doesn't contains any yeast. But this tried using half portion of whole wheat flour and half portion of all purpose flour. I turned out really well and my son who is a fan of garlic naan, loved it very much.
We served this Garlic naan with Green peas masala. Though paneer masala or chole is the usual combo for naan, trust me, the green peas masala combo turned out so well.

Celebrating 10 years of Jeyashri's Kitchen

10 years of Jeyashris kitchen

Jeyashri's Kitchen is turning 10 today, 19th August 2019. When I started Jeyashri's Kitchen 10 years ago, I never knew that this journey will take to here. I am so grateful to you all who supported me from the beginning and traveling with me for these past 10 years.
An exciting journey with exploring new things everyday, and adapting to new technological changes has shaped me a lot. Living in Singapore, exposed to so many friends from different states of India, has given me a good exposure to variety of cuisines. I learnt  a lot and still a learning a lot from each and every person I meet.
Needless to say, this journey is never complete without the support of my family. Many times I am asked how my family helps me in my work. Many assume that my husband takes the pictures and makes videos. They generally don't interfere in what I am doing and I am free to do anything without asking permission from anyone. This is a huge support for me as I was not questioned for any of my activity. Jeyashri's kitchen is fully managed by me and from cutting veggies to cleaning the vessels and editing videos and taking pictures, is solely managed by me.

This space gave me many new friends and i gained much more confidence too in this journey. When I started Jeyashri's kitchen 10 years back, I never thought that I will write cook books, do television shows, live cooking demos, cookery classes and all. Every new milestone, though I feel so nervous, it boosts my confidence and shapes me in a better way.

Trusting the grace of the Almighty which is carrying me in this entire journey, marching towards the new beginning and excited to share many more new recipes with you all in the coming up years.
Whenever I feel like quitting or giving up, the motivational messages I get from you all, gives me confidence. Feeling so responsible for all your love and I will continue to give my best in my work.
Looking forward to your continuous support as always.
Follow Jeyashri's kitchen on Facebook, Instagram and Youtube to get updates on new recipes.

Pavakkai pitlai, eggplant fry, lunch menu 19

This week's lunch menu is loaded with veggies as i had to clean up my fridge before leaving for a short vacation. In the plate i have my favorites, yes i love pavakai pitlai a lot. I still remember the pavakkai pitlai, my grandmother makes. The magic touch of her hands makes this dish so yum. Even after many years, i could recall the taste and smell of the pitlai she makes. My mom also makes it so yum, but i got the exact recipe and the technique of making bitter gourd pitlai from my sister. She clearly explained me the difference between arachuvitta sambar and pitlai and the right amount of spices for both. And coming to the  pan fried eggplant, i am a huge fan of eggplant and this one i love it a lot. And incidentally this happened to be a no onion no garlic menu platter.

Cabbage poricha kootu recipe

Cabbage poricha kootu recipe, with step by step pictures and video, a traditional South Indian kootu recipe made using veggies, dal and freshly ground masala. Poricha kootu is a very common item made in Tamil brahmin houses. We make it almost weekly once or twice. I personally prefer to have this with spicy Vatha kuzhambu. During our childhood days, especially when we have summer vacation, my athai used to make mixed veggies Poricha kootu in a large quantity and fry papads and keep. That combo will be so awesome and without bothering about the carbs intake we used to have 3-4 servings of rice for that poricha kootu appalam combo.

We all enjoyed the texture and taste of avocado in this fusion chaat recipe. I used the frozen red kidney beans and it will quite handy for us during such unplanned moments.

Milagu Kuzhambu, Paruppu Thogayal, Lunch menu 15

A popular Tamil brahmin style lunch combo is chosen for this lunch menu. Milagu Kuzhambu, fondly called as molagu kuzhambu, mixed with hot rice, accompanied with paruppu thogayal and sutta appalam(fire roasted papad), a divine combo in our house. But generally in addition to this we make one kootu or curry to include one vegetable in our meal. Generally Milagu kuzhambu is made on Saturdays or Sundays, the day we take oil bath. The reason is the pepper prevents us from getting cold after an oil bath. Also milagu kuzhambu is a must in post partum food. We include garlic in milagu kolambu when making for newly delivered moms. This spicy pepper gravy pairs beautifully with Aviyal and Seppankizhangu roast( arbi fry).

Though this goes very well with idli| dosa, i personally loved this with hot rice, ghee and papad. Do check out my other popular podi recipes

Rice and Rajma, called as Rajma chawal is a super comfortable and one of our family's favorite meal. I always keep stock of soaked Rajma in my freezer so that i can make Rajma any time i want.  Mostly  i pack Rajma and rice for kids lunch box. Some times when i am not in a mood to cook and elaborate meal on a weekend, i make Basmati rice and rajma along with some lassi. So Today's lunch menu is Rajma chawal.

Millet Curd rice recipe

Millet Curd rice recipe with step by step pictures and video, a popular South Indian rice variety also called as Thayir sadam. For us South Indians, especially the Tamil Brahmin people, curd rice is a must one during our lunch meal. I have already posted a curd rice recipe and also shared the Temple style curd rice recipe. Generally raw rice or sona masoori rice is best suitable for making curd rice. Similarly we can make curd rice using Millets too. Varagu | kodo millet is the closest variety equivalent to raw rice. I make curd rice using millet many times at home . Even i have posted that in my Lunch menu 9 too. This Millet Curd rice i have done in my cookery demo once here in Singapore. It was super hit in the demo. A small variation from the usual recipe makes it more flavourful and yummy. Do check out other Millet recipe collections from Jeyashris kitchen.
For my friends in Singapore, we get good quality Millet from Sri Murugan Singapore. They have outlets island wide and they do home delivery too. We can order our monthly grocery through their Android and iOs app too. They have all varieties of millet and millet flour too.

So i tried this mango salad using their delicious mangoes. We all loved it and my little one who is a bit choosy, when it comes to new food, enjoyed it a lot and asked me for one more serving. The salad dressing balanced the sweetness of the mango.

Mor kuzhambu, Cabbage Paruppu usili, lunch menu 10

Mor kuzhambu and paruppu usili is a classic combo in Tamil Brahmin house. When i got married, most of the sundays will have Vazhaipoo paruppu usili and vatha kuzhambu. Though i love both the combo of vatha kuzhambu and mor kuzhambu for paruppu usili, most of the time i end making in Vatha kuzhambu only for paruppu usili.
The family loves both the combos and for them the veggie in the paruppu usili matters, especially the kids. We make usili with beans, cabbage, vazhaipoo, methi leaves and avarakkai. But some how it is difficult to make the kids vazhaipoo usili. So i always make kootu with vazhaipoo and they happily finish that.
Indian lunch menu

Coming to today's lunch menu, we have a simple platter but yet a very popular combo.

The onion vadam is home made by my mom. Her onion vadam is loved by all in the family and she always packs exclusively for my daughter, her only grand daughter(rest all are grand son) .
Stay tuned for the interesting recipes coming up in Jeyashri's kitchen in the coming week.

Samosa chutney recipe, Sweet chutney

Samosa chutney recipe, the sweet chutney| meethi chutney recipe made using jaggery and tamarind pulp pairs well with Samosa, dhoklas and cutlets too. This chutney can be used in other chaats too. I have posted the Sweet chutney using dates, but somehow i like the thin chutneys they serve in the chaat shops when we order samosa. Recently one of our friend got this chutney for a potluck party. She brought this to accompany Dhokla. From that day i was thinking to try this out. I adapted the recipe from her and made some modifications to suit my taste. It turned out so yum and tasted, smelled the same way as we get in street side chaat houses. This can be stored for 2-3 weeks in the refrigerator. For samosa recipe with video click here.

Green chutney with raw mango recipe

Green chutney for chaat and sandwiches, addition of raw mango in green chutney enhances the taste. I have posted few varieties for chaat chutney.
