Chilli Garlic fried rice recipe

Chilli garlic fried rice, a simple fried rice recipe,easy to make and  perfect for lunch box
Chilli garlic fried rice, i saw this in Sangeeta restaurant menu, when we visited Chennai last month. As we were in a hurry ordered a dosa but noted down the name to try it at home. Last week when i had little time to cook, suddenly this name chilli garlic fried rice flashed up my mind and googled for the recipe. This sounded so simple and immediately made this chilli garlic fried rice. Kids had this when they are back from school. Both of them loved this fried rice and it was not too spicy. If you are running out of veggies, you can make this easy garlic chili fried rice.

Cook time: 20 minutes
Yield: 2 Servings
Ingredients: Basmati rice 1/2 cup Garlic 3 tblsp Red chili 3 Capsicum 3 tblsp finely chopped Sesame oil 1 tblsp Soya sauce 1 tsp Sugar 1 tsp Spring onion whites 1 tblsp Spring onion greens to garnish Salt as needed
Instructions: Cook the basmati with 3/4 cup of water in pressure cooker for 3-4 whistles. Add little salt and few drops of oil while cooking this.Once done, spread this in a plate and keep it aside. Left over rice works out best for this chilli garlic fried rice. In a pan add sesame oil and add the sugar. Adding sugar gives a balance of taste as we are adding chillis, also it gives a nice taste to the fried rice. In a pan add sesame oil and add the sugar. Torn this roughly or cut them into pieces using a kitchen scissors. Add chopped garlic to this. Saute this in low flame. Ensure not to burn this.Garlic gets cooked very fast so be careful. Add the spring onion whites. Saute for 1-2 minutes in a low flame and add the chopped capsicum.If you want to add some veggies add it now. You can add finely chopped carrots, frozen peas and chopped broccoli too. Saute for few minutes. Let the capsicum (veggies) be crunchy. Now add the soya sauce to this. I used dark soya sauce, you can use light soya sauce. Add the cooked basmati rice to this. Mix well gently and cook for 2-3 minutes. Garnish with spring onion greens. Serve chilli garlic fried hot with tomato ketchup or baby corn manchurian

Method:

Notes:
  1. Ensure that the rice is cooked with grains separate and not mushy.
  2. You can add some vegetables to this fried rice.
  3. Scrambled paneer can also be added. 
  4. If you want this more spicy add some chili paste after adding the garlic. 
  5. You can add olive oil or normal cooking oil. Sesame oil suits best for fried rice.
