Cauliflower kovakkai curry recipe, a simple south Indian version of curry made using Cauliflower and Kovakkai | tindora | ivy gourd and the home made sambar masala enhances the taste of this curry. This combo of cauliflower and Tindora i tasted for the first time in my sister's place last year. We all loved it and kids loved the most. Generally tindora| Kovakkai is not their favorite but still i make it a point to add in the menu once in 10 days. In this way of making, they never even realise that kovakkai is added in the curry. Once thing is it is quite laborious to chop them finely and the curry shrinks it's volume after it is cooked. But i can say it is worth the effort. The curry pairs well with South Indian gravies like Rasam, Sambar, Vathakuzhambu, Mor kuzhambu..
Cauliflower 2 cups (chopped small)
Kovakkai | ivy gourd | tindora 2 cups ( chopped finely)
Sambar powder 4 tsp
Turmeirc powder 1/2 tsp
Salt as needed
Mustard seeds 1/2 tsp
Oil 2 tblsp

Cauliflower Kovakkai curry recipe

Kovakkai | ivy gourd | tindora 2 cups ( chopped finely)
Sambar powder 4 tsp
Turmeirc powder 1/2 tsp
Salt as needed
Mustard seeds 1/2 tsp
Oil 2 tblsp
Method :
- Chop the cauliflower into big and put them in salt water for 15 minutes. We are not putting them in hot water as it will get par boiled.
- Putting in salt water is to kill the insects if any in the cauliflower.
- You can add turmeric powder also into it, if you want.
- Once done, wash it thoroughly and chop the cauliflower into very small pieces.

- Keep it aside.
- Wash the kovakkai | tindora into finely.
- Check the picture below for reference.
- In a pan add oil and add the mustard seeds.
- When it splutters add the chopped veggies.
- Add in the Sambar powder, turmeric powder and salt.
- Mix well and cook in medium flame for 25- 35 minutes.
- Keep stirring in between.
- Do not get it burnt.
- Once the veggies are cooked and slightly roasted switch off the flame.
- In the last if you like, drizzle some coconut oil and mix well.
- Iron kadai works well for this curry.
- This curry pairs well with Rasam rice, curd rice and any mixed rice too.
Notes:
- You can add finely chopped onions after adding the mustard seeds.
- The spice level was just fine, if needed more spicy can add 1 tsp of red chili powder or sambar powder.
