Later when i moved to Singapore one day i suddenly remembered the vella dosai and attempted to make it at home. But it was a flop show. I couldn't get the perfect measurements and so the dosai got struck to the pan. Later i left that idea and moved on. I have posted Vella adai and it turned so well.
Few months back when our instagram friend Madhu posted about her grand mom's vella dosai with measurements, i noted down the measurements. Yesterday while going through the old notes in my phone, i saw this Lachu patti's version of Vella dosai. I want to share the recipe of no fail, instant vella dosai recipe today.
Jaggery | vellam 1/2 cup (powdered)
Wheat flour 1/2 cup
Rice flour 1 tblsp
Cardamom powder a pinch
Coconut 1 tblsp (optional)
Water to make batter
Ghee to make dosai

Wheat flour 1/2 cup
Rice flour 1 tblsp
Cardamom powder a pinch
Coconut 1 tblsp (optional)
Water to make batter
Ghee to make dosai
Method :
- In a mixie add the powdered jaggery, wheat flour,cardamom powder and rice flour.
- Add little water and grind this well into a fine paste without lumps.
- Add water as needed.
- Alternatively you can melt the jaggery in water by cooking it on stove top for few minutes.
- Filter impurities and allow it to cool completely.
- Then add this jaggery water to the flour mixture.
- Add coconut if adding.
- Mix well without any lumps.
- Ensure the batter is in dosa batter consistency.
- Heat a dosa pan.
- Pour a ladle of dosa batter and spread on a circular motion.
- Drizzle some ghee over this.
- Once it is cooked on one side flip on to the next side.
- Once done, take it out and serve hot.
- Repeat the same for the rest of the batter.
Notes:
- Do not add more water and make the batter watery.
- Always measure powdered jaggery. Else you will end up in adding more jaggery and dosas won't come out well.
- Vella dosai tastes best as it is or you can serve with a dollop of butter.
