HOW TO COOK BROWN RICE| BROWN RICE IN PRESSURE COOKER

This post on how to cook brown rice is a long due for me. I got the brown price from the fair price shop here last month itself but somehow couldn't try it. As my mom always say, the auspicious time to cook that hasn't come yet . lol.!!. Finally i cooked it yesterday and wanted to post the recipe yesterday itself. But it was too busy yesterday and i couldn't sit and write a post on it. I made the brown rice in pressure cooker. As we Indians are highly dependent on pressure cookers, and without the whistle of it our mornings will never be complete.There are so many varieties of brown rice available in market and basically each one takes it own time to cook. I have used 2 varieties of brown rice so far and both were extremely different. So unlike normal white rice, i can't give exact measurement but few tips may give you an idea of how to cook brown rice. The water quantity i have given is for the brand i used. It consumed very less water whereas the one i used last time consumed more water.
   Brown rice are high in fibre, it promotes weight loss too. It is good for diabetic people too And also helps to lower cholesterol too

SWEET BEEDA RECIPE | MEETHA PAAN RECIPE

When i posted the recipe of Paan juice , i told i will post the recipe of sweet beeda too. I got the gulkand and cherries from India during my trip quick trip in February first week. Before this Chinese New year long weekend holiday here, i went to the Indian shop to buy veggies. Saw betel leaves over there and thought this will be the right time to buy this and make a post for meetha pan. Me and my hubby do not eat paan or any supari too. In our friends group all of them love paan. So we had a get together during the long weekend holidays and so i clicked this before going to the party and took it for them. Gulkand played a wonderful role in the taste of paan(as said by my friends). GREEN CHUTNEY FOR CHAATS AND SANDWICHES | CHAAT CHUTNEY

I have already posted a version of green chutney in my Khaman Dhokla recipe, but Green chutney is a simple and no onion and garlic one, shared by a punjabi friend. This green chutney goes perfectly all Indian chaat and sandwiches. I didn't give stepwise pictures for this recipe as it is just grinding of all ingredients. Also i have another recipe for green chutney with yogurt, which can be used as a dip for paneer tikkas |kebabs too. Will post that soon.

Wheni started this Indian Kitchen basics series, this post for how to freeze peas was in my list. I was waiting for the green peas season. Though i got lot of them during my vacation in India, i couldn't click as it was very busy. Last week, during my trip to little India market here, i got the fresh green peas and made this post. Though we get frozen peas in many cities , still when we make it at home we feel so happy and good. This frozen peas at home can be stored in the freezer for 6 to 8 months. We can just straight away use this frozen peas from the freezer . No need to pressure cook the peas.You can use this peas for pulaos, curry and gravy too.

GAJAR HALWA RECIPE | MICROWAVE CARROT HALWA RECIPE

Gajar ka halwa | carrot halwa, a very popular Indian sweet | dessert, though i have tried it few times, this is the first time i am trying in Microwave. Before going to vacation, i have few carrots lying in the refrigerator and half litre of milk too. Thought i will make carrot kheer but milk will not be sufficient to make for all of us. So planned to try carrot halwa in Microwave. It turned out so well and we all enjoyed this with Vanilla ice cream.  Yes we all love this combo of vanilla icecream with carrot halwa. Check out my stovetop version of gajar halwa | carrot halwa with condensed milk. You can add condensed milk to this gajar halwa too to make it more rich.

HOMEMADE CHAI MASALA | TEA MASALA RECIPE

Tea masala | Chai masala is an aromatic masala, added in Indian tea. I have seen in many Northindian friends house, they keep the chai masala and their tea will always be awesome. I have already posted how to make tea in this Indian Kitchen basics series. Suresh is not a big fan of masala chai but i love mild masala added to chai. I was looking for a perfect recipe for tea masala. I have tried few store bought brands too but all turned out bit spicy and too strong.
I saw the recipe in show me the curry and thought i will give it a try. Wow i got the perfect chai masala recipe. Try this out at home and i am sure you will love this masala tea.

Carrot poriyal | carrot curry is a simple curry, which can be made in both stove top and Microwave too. I wanted to post the Microwave version, as it is very simple and can be done by bachelors too. I remember some 12 years ago when i went to Hongkong with Suresh, in that hotel room we just survived with the help of microwave and rice cooker for cooking. I am not so much used to hot plates too. I make tea, poriyal, curry in microwave only. Even microwave was so new to me. I just explored on my own. Here in Singapore, even after 6 years, i just bought a basic microwave 2 weeks back only. just for the purpose of reheating, especially when i have guests at home.

As diwali is fast approaching, i wanted to post the make a detailed post on how to check the sugar syrup consistency. I am getting queries from  readers as how to check the sugar syrup consistency. Dosai or Dosa is widely popular as a staple South Indian breakfast or snack. It can
also be had at times for dinner. Dosas are basically thin, crispy crepes made of rice and
lentils. It can be accompanied with varieties of chutney or sambar. We also make it a
point to always have it with molaga podi (a spicy powder made using roasted lentils
and dry chilles and mixed with generous amounts of sesame oil). Some like soft, thick
dosas while most love it to be restaurant style crispy. My dosais became a hit
amongst my friends when I recently made them for her kids and there was a demand
from them for dosai batter recipe. This recipe gives detailed instructions on making the
dosa batter in a mixer/grinder and tips on getting fail proof mouthwatering crispy
dosas every time. You can also try making delicious dosais with Idli batter after slightly
diluting the batter. There are a many options for side dish for dosa to make it even
more interesting.

  Coconut milk generally , my mom makes at home. After coming to Singapore, we get coconut milk in different forms. We get fresh coconut milk, in tetra paks and also coconut powder too. So it was too convenient for me and i rarely make it  at home. But the taste which we make it at home is truly amazing, and it is very easy too. I realised this when i made this at home yesterday. I used this coconut milk for Paal kozhukattai. You can have coconut milk for Aapam or Idiyappam too. I have used coconut milk for my Tomato biryani.

Paneer | Indian cottage Cheese, i generally buy from the Indian shop. This is the first time i making paneer at home. I was thinking for a while to make paneer at home but some how it has been getting post poned. The reason may be i get good paneer here. Last week when i  went to the Indian shop the usual paneer brand which i buy, the Kohinoor, was not available. I picked up Vadilal, luckily i bought a small packet. It was very hard and rubbery. So immediately the next day i tried paneer at home, it came out pretty well for the first time. I learnt few things in this process which i should follow the next time.  Home made rice flour is generally made in  most of the houses for making savories | bakshanams for festivals. As the festival season is about to start i thought it will be very useful for many of us to know about this basic recipe - home made rice flour.  Though we get store bought rice flour and many of us use store bought flour for making murukku,thattai,seedai , kozhukattai etc, but home made flour gives more crispiness to the dishes. The outer layer of  kozhukkatai gets nice bright white colour if we use home made flour.

This week in the series of Indian microwave cooking | Kitchen basics,  i have come up with the  recipe of Instant Tomato rasam. This rasam is so easy to make and a perfect recipe for bachelors too.This instant rasam needs no rasam powder or tamarind paste.Even you can have this as a soup too. My kids were down with cold and cough for the past 4 days. I made this instant rasam and gave for them as a soup. Try out this easy tomato rasam.

Those who follow Jeyashri's kitchen regularly, know that i have started the Indian kitchen basics , Microwave recipes and Bachelor recipes, few weeks back. Check out this series  HERE .
This week i am posting the instant vathal kulambhu podi. Just add this powder to the tamarind paste and water and bring it to a boil, yummy vathal kulambhu is ready. It was very flavourful. you can make puliyodarai with this podi too.
