Nilgiri Kurma recipe| Side dish for chapathi

Nilgiri Kurma recipe, vegetables cooked in mint coriander based gravy a perfect side dish for  chapati and poori. I wanted to try a side dish for chapathi with the base we prepare for making vegetable biryani. I have tasted a similar version of korma in a restaurant buffet, and they named it as Nilgiri kurma. So i named it the same. Later when i googled, i came to know that there is a recipe for popular Nilgiri Chicken kurma. This Nilgiri Veg kurma turned out so delicious and it pairs very well with rotis and pooris. The addition of coconut milk in the end gives a nice taste to the kurma. The best crowd pleaser recipe, also goes well with Kuska biryani too. I made this Nilgiri kurma in my new Prestige Pressure pan(4 litres).

Veg Salna recipe | Parotta salna recipe

Parotta salna is a famous street food in Tamil nadu, espeically in my native town Madurai. Though i have never tasted the salna in road side shops, i used to admire the sound of Kothu parotta and the mesmerizing smell of the salna made in the shops. Most of the salnas are non veg and so i never attempted to try that there. I remember tasting Chilli parotta from a famous road side shop in Madurai, which our friend bought once for us. Recently i got the recipe of vegetarian salna from our neighbor aunty, who gave me the recipe of kuska, kurunai vadai.. Aunty sent me the handwritten recipe through what's app and i tried it immediately the next day. It tasted so yum and we had with Kuska biryani and kids had with store bought frozen parotta. This parotta salna goes well with chapathi too.

Channa Kurma recipe | Side dish for chapathi

Kurma is an excellent side dish for chapathi, poori, kuska biryani or parotta. I have posted peas kurma, paneer korma and many other kurma recipes. Generally at my place kurma is preferred less compared to channa masala.  Channa kurma | Chickpeas kurma, i have tried few months back and it was liked by every one at home. So after coming back from my vacation, i tried this kurma again. I have posted this channa kurma recipe with a quick video and step wise pictures too. Try this South Indian version of Channa masala at home and let me know how it turned out.

Beetroot Kurma recipe |Side dish for chapati

Kurma| korma is an easy side dish for chapathi | poori. I have posted many chapathi side dish recipes and kurma variaties, but for the first time, I am trying kurma with one of my favorite veggie beetroot. If you are not a beetroot lover, try the same kurma with mixed vegetables or peas or paneer. My mom is a regular viewer of the Venkatesh bhat show and she was hooked by his kurma recipe. This episode was telecasted almost an year back. From then she was telling me to try this recipe but finally i tried the same style by replacing veggies with beetroot and green peas. We all loved the recipe and it paired well with poori and chapathi too. I am back from my 3 weeks vacation to chennai. Slowly coming back to routine. Stay tuned for interesting recipes coming for this Pongal season.

Peas Kurma recipe | Pattani kurma

Peas- kurma
Green peas is in season now. I have given this kurma recipe for Aval vikatan supplement, which i did a year back. This peas kurma| peas korma| pattani kurma, goes well with poori, chapathi and even for biryani too. I have given this for the book as Mushroom peas kurma. But now i didn't add mushroom in this recipe. This peas kurma is a super hit at home. Right now i am in chennai on vacation . So please bear with delay in replying your mails. Potato Kurma is an easy and delicious side dish. I have given this recipe in Aval Vikatan supplement in August 2014. This can be had with poori, chapathi and also for biryanis too. I want to post all the recipes i have posted in the supplement books so far, here. Since many of my non tamil readers are asking me to post them, i will be posting them here one by one every week. This restaurant syle potato kurma recipe is a must one to try, also potatoes can be replaced by mixed vegetables too.

NAVRATAN KORMA RECIPE | NAVARATNA KURMA RECIPE | SIDE DISH FOR ROTI

Navratan- korma

   Navratan korma | Navratna kurma is a rich Mughlai gravy. It is slightly sweetish in nature and so  generally we never order when we go out for eating in restaurants. i have few requests for this Navratan korma and i remember watching this recipe in a video too. Though i forgot the source, i noted down(scribbled)  the recipe roughly in my notebook and made this finally last week. It was very tasty . The original recipes includes the addition of pineapple, but i skipped adding it. so the navratan korma was not so sweet as i expected. Try out this easy korma recipe .

BABY CORN KURMA| SIDE DISH FOR CHAPATI

Baby corn , whether i make baby corn masala or baby corn puloa or baby corn kurma we all love it very much. Though i have tried  baby corn kurma few times at home, never had a chance to click it but last week i made a bit early and clicked the kurma for the sake of blogging. Though kurmas are not the favorite dish among my kids but this baby corn kurma was appreciated by everyone and kids liked this too. Do you have baby corn lying down in the refrigerator just go ahead to make this baby corn kurma. Even this kurma can be served with VEGETABLE BIRYANI

PREPARATION TIME: 15 MINUTES . COOKING TIME: 20 MINUTES
INGREDIENTS:
BABY CORN 10-15
ONION 1-2
TOMATO 1
CASHEW NUTS 5-6
GREEN CHILLI 2-3
FENNEL SEEDS| SOMBU 3/4 TSP
MILK 1/2 CUP
ELACHI | CARDAMOM 2
GARLIC 3 PODS
COCONUT(GRATED) 1 TBLSP
OIL 2 TSP
SALT AS NEEDED

METHOD:
  • Wash and clean the baby corn.Chop the baby corn into small pieces and pressure cook it by adding 1/2 cup of water and little salt.

  • Finely chop the onions and tomato. Keep half of the tomato aside for grinding.
  • Grind the green chilli, coconut, garlic pods,fennel seeds(sombu),cashew nuts and tomato.

  • In a pan add oil and add the cardamom pods and add the onion and saute it till they turns pink. Add in the half of the finely chopped tomatoes and saute till they turn mushy.
  • Add in the cooked baby corns. Add it along with the water in that.

  • Now add in the ground masala and mix well. Let it boil for a minute.
  • Add in the milk now and if you find the kurma thick add little more water to reach the right consistency. Boil this for 5 minutes in a low flame.

  • Switch off the flame. Garnish with coriander leaves or curry leaves.
  • Baby corn kurma is ready to serve.
Note:
  • Sombu can be tempered in the beginning.
  • Cashew nuts can be replaced with 2 tsp of pottukadalai |chutney dal.
  • You can even replace the baby corn with green peas.

CAULIFLOWER PEAS KORMA RECIPE | SIDE DISH FOR ROTI

     Usually kurmas are doesn’t take place in my kitchen frequently, though i make chapathi almost everyday. Me and my hubby are not a great fan of korma and my kids too. One day when i made rotis for dinner, I was very clueless what to make as a side dish for roti and finally i landed up in making cauliflower and peas korma. Without any much complaints everyone had this.

INGREDIENTS:
CAULIFLOWER( MEDIUM SIZE) 1 NO
GREEN PEAS 1/4 CUP
ONION 1 NO
TOMATO 1 NO
CORIANDER SEEDS 1 TSP
FENNEL SEEDS 1/4 TSP
COCONUT SHREDDED 3 TBLSP
CURRY LEAVES FEW
CARDAMOM 1 NO
OIL 1 TBLSP
CASHEW NUTS 7-9 NO
GREEN CHILI 2 NO
GARLIC PODS 2 NO
CUMIN SEEDS 1/4 TSP
SALT TO TASTE

METHOD:
  • Cut the cauliflower into small florets.
  • Cook the cauliflower and peas ( i used the frozen peas) in a pan adding little salt to that.

  • Drain the water and keep it aside.
  • chop the onions finely.

  • In a pan add little oil and add the onions and saute till golden brown.
  • When it is done add the tomato and saute for 2 minutes.

  • since i added tomato paste i didn’t saute this.
  • Add green chilli, garlic, fennel seeds, cardamom , coriander seeds, cashew nuts and coconut to this and grind this into a smooth paste.

  • In a pan add oil and throw in the cumin seeds and add the curry leaves and immediately add the ground masala.

  • After a minute add the cooked cauliflower and green peas to this , mix well and let this boil for 2 minutes in medium low flame.

  • Garnish with coriander leaves and serve with rotis.

I very rarely make kurma at home,since my family is not a big fan of kurma. But this version i learnt from my friend,and when i tried it everyone at home liked it .So now i am here to share the recipe of this simple and easy  Vegetable kurma. The recipe doesn’t involve the addition for Garlic. Check out my potato kurma and baby corn kurma recipe.
