Kalyana Sweet pachadi recipe | Mixed fruits pachadi| Pazha pachadi is generally served in Tamil Brahmin weddings. We also serve this during festivals at home. As today is Ugadi festival, i thought i will share this recipe in Jeyashri's Kitchen. I learnt this from a cook mami, who came to our house for cooking, during the time of my son Varun's upanayanam. She used only apple for this pachadi. I have already posted a tomato Sweet pachadi, which is my mom's signature dish. Generally in weddings they add a pinch of food colour, but since i don't want to add the food colour, i didn't add. Check out my other Wedding style recipes:

Sago Moong dal Payasam recipe| Javarisi Payasam with jaggery

Sago moong dal payasam | Javarisi pasi paruppu payasam with jaggery and coconut milk. Recently during Ganesha Chaturthi we visited one of our friend's house for Ganesh Dharshan. Her mom made this yummy sago moong dal payasam. The flavour of coconut milk and moong dal combo was truly awesome and the bites of sago pearls in between was a treat to the taste buds. I asked her for the recipe and she messaged me few days back. I always want to javarisi payasam with jaggery so i was waiting to try this out. Kadala paruppu payasam | Chana dal kheer

Kadala paruppu payasam | chana dal payasam made with coconut milk and jaggery is used for sweetness. Generally in most of the Tamil brahmin homes we make paruppu payasam for all occasions. We make it using paasi paruppu and jaggery. Some people add little chana dal to that. Recently one of my friend shared this kadala paruppu payasam, in kerala they call it as kadala parippu pradaman. Generally Keralites make it in traditional uruli(a heavy bottomed brass vessel), as the kheer needs to boil for a long time. I don't claim this as authentic kerala pradaman but we all loved it a lot. I was about to post caramel payasam today but the video didn't turn out well. Will post it soon. Since tomorrow is Tamil new year | Vishu, make this kadala paruppu payasam and celebrate the New year.

Neem flower- rasam

Neem flower rasam |vempam poo rasam is made in all South Indian homes on Tamil New year | Tamil varusha pirappu. I have already posted the veppam poo rasam of my mil's version few years back. Though i am not a big fan of this neem flower rasam, this version i loved it very much. I learnt this from my cousin who taught me when she visited me few months back. I have posted a garlic rasam(with coconut milk), which i learnt from her. This is yet another flavourful and tasty neem flower rasam, which is her signature recipe too. Wish all readers a Happy Gudipadwa and Ugadi. Ugadi (Telugu new year) and Tamil new year are around the corner. Generally we make a menu which has all the six tastes,sweet, sour, salt, spice, astringent and  bitter with naturally available ingredients. I have posted neem flower rasam, mango pachadi, raw mango rice, mango pickle and obbatu |poli recipes. Since mangoes started coming in the market i decided to make mango payasam. I love vermicelli payasam so i decided to make mango vermicelli payasam.

Paal payasam is a popular south Indian dessert and it is always served in South Indian weddings. I have already posted paal payasam recipe, my special first post in jeyashris kitchen. This Kerala paal paysam is a special recipe served in Onam sadhya menu. I have already posted  palada payasam and ada pradaman recipe which is served in Onam sadhya menu. This recipe my friend Raji  taught me,  and also was sweet enough to pass the Kerala unakkalari rice too. Wishing all Malayalee friends a Happy Onam . Godhuma rava payasam

Godhumai rava payasam is a simple and easy payasam made with samba wheat rava, milk and jaggery as the main ingredients. I tried this last week itself but somehow struck with editing the video and by the time i finished editing it was too late . So i decided to post the recipe of Samba rava payasam today. Generally we use dalia | samba rava | godhuma rava for making upma or porridge . But this is a creamy and delicious payasam with godhuma rava . As i have mentioned in one of my recent posts, i am taking skype class for a group of 30 people, who are learning sanskrit and vedas (from a different teacher). As a part of their class, traditional cooking is being taught. I am previlaged to share my cooking knowledge with them by showing them how to cook traditional recipes. Chakka varatti recipe | Jack fruit preserve | jam

Chakka varati

Chakka varatti is an authentic Kerala recipe made with jack fruit and jaggery. During my recent trip to India for my niece wedding, we as a group of family members were sitting and talking in the evening. One of my mami ,who is a native of palakad, was telling us that she sent few things for her daughter studying in abroad and one among them is her most favourite chakka varatti. Among the things sent to her, all the things reached except this chakkavaratti. Mami felt so bad and so as her daughter and she was sadly narrating to us this incident. When all of them were listening to this, i suddenly asked, "oh mami, how you make that and can you explain". For a moment everyone looked at me and we all burst into laughter. Then mami explained it well and i noted it down too. 2 days back i saw the local wet market selling jackfruit and i immediately bought and made the chakka varatti. It turned out very well and we all loved it. Its quite addictive too. Also mami shared the recipe of  payasam they make with this jackfruit preserve. Will post the recipe soon. Ripe Mango pachadi | Tamil new year recipes

Tamil new year is celebrated on 14th April every year. Generally we do raw mango pachadi, neem flower rasam for Tamil new year. While casually talking with my friend's mom few weeks back, she was telling about this ripe mango pachadi, and when she was telling about that itself i was so tempted to try it out. When i saw the ripe alphonso mangoes in the nearby Indian shop few days back, i immediately picked it up and tried it today at home. It tasted very well . For a change from the usual mango pachadi with raw maanga, try this ripe mango pachadi for this Tamil new year. PALADA PAYASAM RECIPE | PRESSURE COOKER METHOD

Palada | rice ada is the main ingredient of this payasam. Traditionally made in Kerala for Onam sadhya, I have posted ada pradaman recipe using jaggery and coconut milk last year. Two days back when i was cleaning my freezer, i found half packet of rice ada which i got last year. That night one of my friend visited us for dinner with her family. So i made this palada pradaman for her. We all enjoyed it. Since it is night i didn't click the pictures. So i thought i will make this again and post. Actually planned to post yesterday but couldn't make it as i was down with fever and cold. Today i made the palada payasam again and clicked too. Wish all my readers a very Happy Onam.

Palada payasam

  Preparation Time : 5 mins | Cooking Time : 30 Mins |Serves: 3-4

     Palada | readymade rice ada      1/4 cup
     Milk      2 cups
     Water     1 cup
     Cardamom powder   a pinch
     Condensed  milk    4 tblsp
     Cashew nuts    4
     Ghee     2 tsp

Method:
  • In a pressure cooker add 1 tsp of ghee. Add the ada and saute for a minute in a low flame.

  • Add 1 cup of water to this and boil for 5 minutes.
  • Be careful as it will burn if the water gets evaporated.

  • Add the milk to this and mix well.

  • Cover the cooker. After 1 whistle , keep the flame very low for 15 minutes. 
  • Switch off the flame.

  • Add condensed milk to this and mix well. If adding sugar add 3-4 tblsp of sugar.
  • Fry the cashew nuts in 1 tsp of ghee and add it to the payasam. Add the cardamom powder too.

  • Payasam is ready to serve. The payasam tends to thick when it is cool, os do not worry if it is slightly thin.

Notes:
  1. You can do it on stove top too. In that case cook the ada seperately drain the water and add it to the milk and cook till the milk reduces.
  2. Sugar can be added instead of condensed milk.

Thinai arisi | Foxtail millet ( Kangni in Hindi, Kora in telugu | Navanne in Kannada |Thina in malayalam ) is an easily available millet variety. My mom made kheer during our trip to India in june. I thought i will give it a try so that it will be helpful for those who make kheer | sweet everyday for Navratri . For my readers in Singapore, Thinai arisi is available in Mustafa center ( in the sugar section) and also in few shops in little india.  Check out my Navaratri 2014 combo recipes.

ADA PRADHAMAN RECIPE | ONAM SADHYA RECIPES

Ada pradhaman is generally made for Onam, a traditional festival of Kerala. Very long back i made this ada pradaman at home, as my hubby loves it very much. Some make this with jaggery and some with sugar and milk too. The one which is made with jaggery is ada pradhaman and the one with sugar and milk is Palada pradaman. Two days back when i went to the indian store, saw this rice ada packet and big nendram banana. So bought these 2 and made the ada pradaman  the next day itself. Will soon post the recipe of nendram banana chips.
  Instead of rice ada, you can add cooked channa dal and make Paruppu pradhaman too.
