Custard powder pancake with banana puree, these soft fluffy eggless pancakes was my breakfast yesterday morning. I got the idea of Custard powder pancake, i got after seeing this Instagram post. She used pumpkin puree in that and i replaced that with banana puree. It turned out so soft and tasted so yum. We have 2 pancake fans at our home, the moment i say pancake, the eyes will wide open with happiness, one is Varsha and another one is my helper. Somehow me, Suresh and Varun are not a great fan of pancakes but we still eat whenever we make it at home. This Custard powder pancakes were so flavourful and me being a big fan of fruit custard loved the pancakes. I used the measurements of my Eggless Whole wheat pancake recipe.
Preparation Time : 10 mins | Cooking Time : 2 Min per pancake |Makes: 7-8 pancakes
Vanilla Custard powder 1/4 cup
Plain flour 3/4 cup
Baking soda 1 tsp
Butter 2 tsp
Salt a pinch
Banana 1 (i used long variety)
Milk 1 cup
Sugar 4 tsp

Custard powder banana pancake

Method:
- Puree the banana in a mixie.
- In a wide bowl, add the custard powder, plain flour, baking soda, salt, butter, sugar(i used raw sugar) and the banana puree.
- You can add 2 pinch of cinnamon or nutmeg also if you want.
- Add the milk to this and beat this well into a thick idli batter consistency.
- If needed add 1-2 tblsp of water to bring it to the right consistency.
- Keep it aside for 10 minutes. If you are running out of time, go ahead and make the pancakes.
- Heat a dosa griddle and pour a ladle of pancake batter to this.
- It will spread on its own, no need to spread that as we do it for dosa.
- Cook till you see bubbles on the top.
- Flip it and cook it for few seconds.
- Take out from the pan once done.
- Repeat this for the rest of the pancake batter.
- I used my iron dosa pan for making pancakes and it turned out really well.
- Serve hot with some pancake syrup or some choco chips on the top.

Notes:
- You can use millet flour or whole wheat flour instead of plain flour.
- I used vanilla flavour custard powder. You can use banana flavour too.
- The sweetness was perfect for me, if you need more sugar you can add 1-2 tblsp extra.
- You can serve pancake for breakfast or pack for kids lunch box too.
Jus tastes perfect. My daughter loved it.
