Mor rasam, is a simple rasam made in just 5 minutes with minimum ingredients. This rasam is made with butter milk. I have heard about this easy rasam from many friends, but never tried or tasted it anywhere. Recently my friend's mom gave me this recipe and told that she makes this quite often. As the rasam has ajwain | omam as one of the ingredient, it is perfect for winter. I tried this last week and was totally addicted to the taste and simplicity of the rasam. Buttermilk 1 cup
Besan | Gram flour 1/2 tsp
Omam | Ajwain seeds 1/2 tsp
Salt as needed
Turmeric powder 2 pinches
Asafoetida a pinch
Ghee 1/2 tsp
Red chili 1
Green chili 2 (optional)

Asafoetida a pinch

Method:
- Add besan | gram flour (kadalai maavu) to the butter milk and whisk this without any lumps.
- Adding this will avoid curdling of the buttermilk.
- You can add rice flour instead of gram flour.
- Add salt to this and mix well.
- In a pan add ghee and add the omam(ajwain), red chili, asafoetida and green chili.
- Saute it till the omam slightly pops up.
- Add the buttermilk to this. Add turmeric powder.
- Cook for a minute or till it is heated. Do not boil.
- In a pan add ghee and add the omam(ajwain), red chili, asafoetida and green chili.

- Mor rasam is ready.
- Serve this with any spicy curry or thogayal.
Notes:
- Adding green chili is optional, but i prefer the mor rasam that way, so i added.
- You can add some freshly ground pepper to the ghee also.
In our home we call this as omam mor kuzhambu and make it with the same ingredients but little thicker like our regular mor kuzhambu..we grind the curd+besan mixture with green chillies by adding required water and boil till frothy and then add the tempering..

ReplyDeleteTo roast : 2 teaspoonful pepper
2 teaspoonful coriander seeds
2 red chillies
1.5 teaspoonful Kadalai Paruppu
Roast till golden brown and add 1 teaspoon of unroasted jeera and grind coarsely
Butter milk should be sour and should be of medium consistency ( not too watery and not too thick). Add Salt beat well and mix the powder to it. We do not add turmeric.
Keep it on stove between 5-7 mins and do not let it boil too much.
For seasoning: in ghee,add mustard, hing and curry leaves
