Ridge gourd dal recipe - Peerkangai dal

Ridge gourd dal | peerkangai paruppu is a simple dal recipe, perfectly accompanies with rice and roti. Ridge gourd, takes place more often in my kitchen always in the form of thogayal. Few days before i got a pack of 4 super fresh ridge gourd from a nearby Indian store. They were tiny and too fresh and i wanted to try out a new recipe using ridge gourd. Already i have posted a andhra style mango dal recipe and tried a recipe similar to this using ridge gourd |peerkangai. It turned out very well and we all enjoyed this for lunch along with hot steamed rice.

Kadamba chutney recipe | Vegetable chutney

Kadamba chutney | vegetable chutney is a easy South Indian chutney recipe, made with mixed vegetables. When amma was living in an apartment few years agao, they used to celebrate a festival there. During that time, there will be bulk cooking in a common place for all of them. On the last the day of the festival, they made this kadmaba chutney with all the left over veggies. Hooked by the taste of chutney she asked for the recipe and noted down too. Though i have heard the recipe from her, never attempted to make it at home. Few weeks while clearing up the refrigerator, i tried out this chutney. We all loved it with idli and dosa. Veg saagu recipe | Mixed veg sagu

Veg sagu is a kannadiga special recipe made with lots of vegetables in aromatic gravy with Indian spices. Though i have never tasted Veg sagu in MTR restaurant here, i have tasted this in my friend's place long back but couldn't remember the taste. A reader and good friend of mine shared her traditional recipe of making Veg saagu with me. I tried it yesterday and we all loved it. This veg sagu pairs well with set dosa and poori.

Radish masala recipe | Side dish for chapathi

Radish masala | mullangi masala is a easy and delicious gravy made with radish and serves as a perfect side dish for chapathi | roti and even for dosa too. It even goes will with jeera rice too. I learnt this recipe from my friend's mom. When i went to her house to learn the triangle samosa recipe, i saw her cooking this radish masala. I noted down the masala recipe and this recipe i have given in the Aval vikatan Supplement magazine which i gave in 2014. We always make make radish sambar, radish paratha and sometimes add in salads but this side dish for roti is quite simple and yum too. I have slightly altered the recipe given by aunty. Lauki kofta curry recipe | Side dish for roti

Lauki kofta gravy is a tomato based creamy gravy pairs well withe roti | jeera rice . Lauki | bottle gourd| sorakkai| dhoodi, it's a very healthy vegetable and lauki koftas are very popular too. I tried this lauki kofta 2 weeks back, when my friend and her mom visited us for lunch one day. I couldn't click pictures of the kofta curry on that day as i was in a hurry to finish my work.  This is a healthy version of koftas which is not deep fried but cooked in appe pan. Beetroot Kurma recipe |Side dish for chapati

Kurma| korma is an easy side dish for chapathi | poori. I have posted many chapathi side dish recipes and kurma variaties, but for the first time, I am trying kurma with one of my favorite veggie beetroot. If you are not a beetroot lover, try the same kurma with mixed vegetables or peas or paneer. My mom is a regular viewer of the Venkatesh bhat show and she was hooked by his kurma recipe. This episode was telecasted almost an year back. From then she was telling me to try this recipe but finally i tried the same style by replacing veggies with beetroot and green peas. We all loved the recipe and it paired well with poori and chapathi too. I am back from my 3 weeks vacation to chennai. Slowly coming back to routine. Beans aloo sabzi recipe | Punjabi aloo beans sabzi

Beans aloo sabzi is a popular dry sabzi in punjabi cusine. They make Gajar mutter sabzi, aloo capsicum sabzi too. When i went as a judge for a cookery competition here last month, i happened to met a punjabi lady, who was also in the judging panel. I came to know that she is a wonderful cook. She is very humble and very soft spoken. When i asked her for the recipe of this dry punjabi sabzi, she patiently explained to me the recipe. Thank you pooja for the recipe. I tried it out the next day itself and it turned out very well. Try out this easy punjabi beans aloo subzi as an accompaniment for roti| rice. You can make a dal also as the sabzi is a dry one.

Paneer Tikka Masala | Side dish for roti

Paneer tikka masala, is a popular paneer recipe, which i saw for the first time in Sanjeev kapoor's recipe book long back. I tried my own version few months back, when i have my friend's family for dinner, the paneer tikka masala was a super hit with kulcha. I have a small pack of paneer left in the freezer and wanted to finish off before i go for my vacation. So made this paneer curry few days back and everyone at home loved it. I have already posted paneer tikka dry recipe and hariyalai paneer tikka recipe, stove top version. The tandoori barbeque flavour can be easily be infused in the paneer masala using the charcoal method which i have used in Dabba style dal. Try this recipe and let me know how it turned out.

Paneer tikka masala recipe

  Preparation Time : 15 mins + 30 mins marination | Cooking Time : 40 Mins |Serves: 5-6

     For marination
Paneer cubes   2 cups
Red chili powder  1 tsp
Coriander powder |dhaniya  1/2 tsp
Cumin powder | jeera 1/2 tsp
Tandoori masala  3/4 tsp
Thick yogurt   2 tblsp
Salt  as needed
Kasoori methi  2 pinches
 
   For the gravy
Onion   4
Garlic  5 pods
Cashew  10
Oil   1 tblsp
Tomato puree 1/2 cup
Red chili powder  1 tsp
Coriander powder  1/2 tsp
Cumin powder   1/2 tsp
Garam masala   1 tsp
Salt  as needed
     
     


Paneer tikka masala
Method:
  • Bring the paneer to room temperature.
  • In a wide bowl add the paneer, hung curd, kasoori methi, red chili powder, tandoori masala (or garam masala), salt, cumin powder and coriander powder.
  • Mix this well and ensure the masalas are evenly coated. 
  • Marinate this paneer for 30 minutes. You can marinate for 2-3 hours too. 
  • While marinating keep this inside the refrigerator. 
Lets make the gravy for the paneer tikka masala, while the paneer is getting marinated.
  • Chop 2 onions finely. Take out the skin of the garlic. 
  • In a pan add 1 tblsp of oil and add in the onions, garlic and cashew nuts. 
  • Cook in a medium flame till the onions gets nicely browned. Be careful not to burn this. 
  • Allow this to cool completely and grind this into a smooth paste. 
  • Keep this aside.
  • In a pan add 2 tsp of oil and add in the chopped onions (2 onions)
  • Cook till they turn translucent. 
  • Add in the ground paste to this. Add in the tomato puree to this.
  • Add the red chili powder, jeera powder, coriander powder, garam masala powder, salt and mix well.
  • Add 1/2 cup - 3/4 cup of water to adjust the consistency. Since we have added cashew nuts and also the addition of paneer in the last will make the gravy thicken. So add water accordingly.
  • Boil this for few minutes in a low flame and stir this in between.
  • Switch off the flame. Or you can either do the paneer tikka side by side.
  • Grease a tawa and cook the marinated paneer. Alternatively you can do it in the oven. But i have no experience on cooking paneer tikka in oven.
  • Cook this on a medium flame on all sides till you get them nicely browned.
  • Add the cooked paneer tikka to the masala and add the kasoori methi to the gravy.
  • Bring this to a boil. Check for the consistency.
 
  • Add the fresh cream or milk (room temperature) to the gravy and mix well.
  • If you have charcoal, you can go ahead by heating the charcoal on open flame and keep it in a small bowl and put a tsp of butter on it and immediately close the pan with a lid.
  • Keep the flame very small and cook for 5 minutes. Switch off.
  • If you do not have charcoal, just switch off the flame after adding the milk or cream. 
  • If using charcoal, i highly recommend to use it , just before serving the gravy. In this way it retains the smoky flavour and gives nice taste of dabha style paneer tikka masala.

Notes:
  1. You can buy big block of paneer and cut them into cubes and do the paneer tikka masala.
  2. I used the ready made paneer cubes. 
  3. Adding tandoori masala gives a nice bbq tandoori flavour to the paneer. If not available add the garam masala. 
  4. You can add pan fried capsicum and onions also or you can marinate them along with the paneer and cook them on tawa.

Undhiyu recipe | Gujarati Undhiyu

Undhiyu is a popular gujarati recipe made with veggies which are specially available during winter. In Tamilnadu we make 7 kari kootu and thalagam during winter season with speically available winter vegetables like mochai. A similar type of  mixed vegetable is made with seasonal veggies in Gujarati cusine too. Suruti papdi is one of the main vegetable in this undhiyu and it is similar to the mochai but smaller in size. The use the whole one as such in the Undhiyu. The main spice which gives flavour to the curry is the blend of ajwain(omam), coriander leaves, green chili and coconut. Also we can say the spice mixture is similar to the aviyal with the domination of coconut in it.
Though i have heard the name of this dish, never know how it is made. They make methi muthias and deep fry this or steam it and add to the Undhiyu.

 Last week a friend of mine messaged me that her hubby is going to mumbai and will get all the winter vegetable from there to make this Undhiyu recipe. She asked me whether i am interested to post the recipe in my jeyashri's kitchen. I readily accepted and she also taught me how to make undhiyu too. This is the recipe she learnt from her mil, so if you have any idea of more authentic version please leave it in the comments section.  As in my opinion, even if you do not have few ingredients, just try it out with the country veggies available in the market and enjoy this delicacy. Thsi is a semi dry masala,  generally served with pooris, we had with plain rice and papad. Just use a handful of all veggies, it will give a good volume.

Aloo Baingan recipe | Potato and eggplant subzi

Aloo baingan

Aloo baingan (urulai kathrikkai poriyal) is a north indian style dry subzi  with potatoes and eggplant. I have noted down few recipes which i tasted during our trip, to London and Europe, and more than all liked by the kids. This aloo baingan subzi, we tasted on our first day of our trip. We all loved it very much and kids who generally don't take eggplant, loved it very much. So i tried this last weekend at home, and it was a super hit. This goes well with both  chapathi and rice. Raw Mango dal | mamidikaya pappu is a popular dal recipe of andhra, the dal is cooked with raw mangoes and mild spices. As mango is in season, i thought i will post this mango dal recipe. the friend of mine from whom i learnt andhra pulihora taught me this mango dal too. It is a very easy recipe and it turned out very well. Try out this mango dal in this mango season and i am sure you will love this mamidikaya pappu . This goes well with rice and roti too. Paneer Lababdar recipe | Side dish for roti


Paneer lebabdar is a rich onion tomato based ,restaurant style paneer gravy. I have come across this name in Kailash parbat menu card here in Singapore. They have Paneer tikka lababdar in their menu. As i planned to post paneer tikka masala soon, i thought i will try Paneer lababdar and post the recipe. I don't know the exact recipe but i have noted down a recipe of a paneer gravy from a Cookery show which i watched in Delhi long time back during a holiday. Everyone at home loved the paneer gravy and we had it with peas pulao for a weekend lunch. You can serve this with roti|kulcha too. Though the recipe may look it has many steps but it is quite easy and worth trying too.

Pan fried eggplant | Pan fried aubergine  is a simple and easy recipe made using the big variety of eggplant. We generally make baingan bhartha or Kathrikkai gotsu using this big variety of eggplant. Amma makes bajji out of eggplants and we as a family loves the bajji a lot. From my childhood, we used to love eggplants and we get fresh home grown eggplants from one village lady, who delivers us regularly. This pan fried eggplant i wanted to try for a long time and finally made it last week. But that day i didn't have to time to click. Finally made it today and clicked the pictures. The first time i had with rotis and today i had with rice and rasam. Both ways it tasted yummy. See the notes section for variation of the recipe.

Pindi chole | Pindi chana is a popular one in Punjabi cuisine generally served with bhatura or Kulchas or pooris. When i came to Singapore 8 years back, i bought a ready to eat pindi chole masala of some popular brand. And it tasted horrible and i discarded it immediately after the first bite. Later after many years, i tried this at home but still not convinced by the output. Last week when i was again browsing for pindi chole recipes, got hooked up with this recipe by Vah chef and tried at home yesterday. It was a huge hit recipe at home. Kumbakonam Kadappa | Kadappa recipe

Kumbakonam kadappa| Kadappa , the name itself is quite new for many of us. It is a very simple gravy which pairs very well with Idli, dosapoori | chapathi. I have heard about this a lot from my cousins but never tasted it at home. My mom's side this a very popular gravy. Except my mom every one at her home makes this gravy. Somehow i never had a chance to taste this too even i visited my mam's house. But all my cousins are a very big fan of this kadappa. Recently during our group chat in what's app, one of my cousin who lives in US, searched for Kadappa recipe in jeyashri's kitchen but he couldn't find it. He was telling me about that. I said i never tasted that and also i don't mind posting it if someone here tell me how to make  Kumbakonam kadappa. As we all live in different time zones, one of my cousin came as a saviour and shared the recipe with a voice note. When i tried it last week, i loved it very much. It went well with idli and we had it for dosa too for dinner too. Check out my sodhi recipe which is similar to this recipe. Dum paneer kali mirch , i have tasted this in cream center restaurant in chennai. When i posted the corn cheese balls, this recipe is also in my to do list from their menu. I have bookmarked this recipe of paneer kali mirch from Sanjeev kapoor's recipe. This recipe doesn't include tomatoes. When i tried it for the first time today, it turned out so awesome and it was very creamy and flavourful. The recipe too is not so complicated too.
