GARLIC BREAD STICKS RECIPE| SOFT GARLIC BREAD STICKS

Garlic bread sticks are the the first choice of starter whenever we go to Domino's Pizza  in India. When Divya  posted this Garlic bread sticks recipe, i bookmarked it and tried it. the Garlic bread sticks came out too well. I made it long back but some how couldn’t post it. The pictures didn’t come out as i expected as it was raining when i clicked the final pictures. But trust me, this garlic bread sticks were awesome. Check out Divya's blog for the detailed recipe.

ALL PURPOSE FLOUR 1 AND 1/2 CUP (DIVIDED)
SUGAR 1/2 TSP
INSTANT DRY YEAST 1/2 TSP
OLIVE OIL 2TBLSP
SALT TO TASTE
GARLIC PASTE 1/2 TSP
OREGANO 1 TBLSP
CHILLI FLAKES 1/4 TSP (OPTIONAL)
PARMESAN CHEESE 3 TBLSP
WATER 1/2 CUP

METHOD:
  • In a bowl add water, sugar and yeast and mix well. Keep it aside for 10 minutes or till the yeast raises up. the water should be slightly warm. ensure that it is not too warm else it will make the yeast to raise.

  • In a wide bowl add 1 cup of flour, and add the olive oil. Mix well and add the raised yeast water to this and make it into a sticky dough.

  • Cover it and keep aside for 45 minutes to 1 hour till it raises.
  • Now add the garlic paste ( i ground few cloves of garlic with 1/4 tsp of butter) to the raised dough and add the remaining flour (1/2 cup).

  • Knead well and keep it covered till the dough raises to double the size.

  • Dust the kitchen top with flour and roll this into a big circle.
  • Spread cheese over this. I used parmesan cheese, in the original recipe divya used amul grated cheese.

  • Fold it into a semi circle. Sprinkle the Oregano on this. If using red chilli flakes sprinkle that too.

  • Transfer this to a greased baking tray  Cut this into strips and bake this for 10 to 12 minutes or till the bread turns out slight brown on the top.

  • Mine took 12 minutes to bake.

This Garlic bread tasted totally awesome and kids enjoyed a lot.

Note:
  1. You can use garlic powder instead of garlic paste.
  2. The original recipe used grated amul cheese cube.

CHOCOLATE BISCOTTI RECIPE |EGGLESS BISCOTTI RECIPE

Biscotti , is more like our Tea rusk , which are baked twice. Very recently i got a mail from a reader who is a teenage girl almost of Varsha’s age , requesting me to post some chocolate recipes as she is a big fan of chocolates. She tried few baking recipes from here too. Recently when we went out, in a cookie shop i saw chocolate biscotti but they were not eggless. So i wanted to try this at home  and it turned out perfect and tasted so well. I adapted the recipe from here.  so let me share the recipe of chocolate biscotti – without eggs and without butter too.

Actually the original recipe is Double chocolate Biscotti, since i didn’t have choco chips in hand i added almonds instead of chocolate chips
INGREDIENTS: [10 BISCOTTI]
ALL PURPOSE FLOUR 1 CUP
COCOA POWDER 1/4 CUP
BAKING POWDER 3/4 TSP
BAKING SODA 1/4 TSP
VANILLA ESSENCE 1/2 TSP
SUGAR 1/4 CUP
ALMONDS 1/4 CUP
OIL 1/4 CUP
WATER 4-5 TBLSP

METHOD:
  • Sift the flour, cocoa powder,baking powder and baking soda.
  • In a mixer, pulse the almonds and add to the flour mix. If using chocolate chips instead of almonds add it now.

  • In a bowl, add water, vanilla essence, sugar and oil.
  • Mix well till the sugar dissolves. If u want u can powder the sugar and add.
  • When the sugar gets dissolved, add this mixture to the flour and cocoa powder mix.

  • Knead this into a dough.
  • Place it on a baking sheet |butter paper. Divide it to2 equal portions as a log.
  • Flatten the logs. Bake this in 160 degree preheated oven for 25 minutes.
  • After the first bake, the biscotti loaves should be firm and very lightly browned, but not hard.

  • Slice it diagonally for long biscotti or across for short one using a sharp knife.
  • Arrange them in the cooking tray in a parchment paper and again bake them for 10 minutes at 130 degrees C.

  • Turn it aside or you can keep the rack in the centre and turn on the heat to up and down for few minutes.

  • the second time bake is to dry out the cookies so bake it in a low temperature to get crispy biscotti.
  • this can be stored in a air tight container for few weeks.
Note:
  1. If you feel the dough dry and not coming to make a whole mass while kneading, sprinkle 1-2 tsp of water.
  2. Never chop the biscotti loaf when it is hot.
  3. Use sharp knife to cut the loaf.
  4. You can add any nuts of your choice and add orange zest too and replace water with orange juice also.
  5. While cutting the biscotti loaf it may crumble too. do it slowly and carefully.

HOME MADE TORTILLA RECIPE | FLOUR TORTILLA RECIPE

   Tortillas are used to make wraps , which i rarely buy from stores. Normally for making wraps or kathi rolls i make the usual Roti | Phulkas and stuff the filling inside and wrap it and send it for kids lunch box. Last week i wanted to try out a tortilla recipe at home and finally made it and i adapted the recipe from here.
As we are shifting the house, this weekend i am totally busy with that and couldn’t follow any other fellow blogger’s posts. Hope to come back to routine in few weeks . I will posting some simple recipes for the next few weeks to keep this space active.
Tortilla 2
INGREDIENTS: (MAKES 6-7 TORTILLAS)
ALL PURPOSE FLOUR (MAIDA) 1 CUP
OLIVE OIL 1 AND 1/2 TBLSP
WATER AS NEEDED
SALT TO TASTE
METHOD:
  • In a wide bowl, add the flour and add olive oil and salt. Knead it into a soft dough using enough water. Do not knead it too stiff. Else the tortillas will be  hard.
  • Cover and keep it aside for 1/2 an hour.

  • After that make equal lemon sized balls and start rolling each into thin rotis.

  • Heat a griddle , and when it is hot add the rolled tortilla to this and cook on one side and when you see brown spots flip it over and cook on the other side too.
  • Brush  it with little olive oil.
  • Repeat the same process for the rest of the dough.

SEMIYA BIRYANI | VERMICELLI BIRYANI RECIPE

EASY LUNCH BOX RECIPE – TRIED FROM RAK’S KITCHEN.

This is the first time i am trying the recipe of Semiya or vermicelli biryani. Usually i make the some rice varieties for kids lunch box and for a change i tried this Semiya biryani from Rak's Kitchen . Though it turned out quite well and i planned to make this once in a week for lunch box.
  If you wonder, that i am not using any fancy plastic box for kids lunch box, no i won’t use any plastic and use only stainless steel lunch box as even a high quality plastic is not good as it will bring many health problems in long run. Even the storage boxes i use in the kitchen are stainless steel only. So try to avoid using plastic boxes as much as you can.

INGREDIENTS: (SERVES 2) FOR ORIGINAL RECIPE, CLICK HERE.
I slightly altered the recipe to suit my taste.
ROASTED VERMICELLI 1/2 CUP
THIN COCONUT MILK 1/2 CUP
MIXED VEGETABLES 1/4 CUP
ONION 1
MINT LEAVES 5-6
GARLIC 4-5 FLAKES
FENNEL SEEDS 1/4 TSP
CARDAMOM 1
GREEN CHILLI 1
SALT AS NEEDED
OIL | GHEE 1-2 TBLSP

METHOD:
  • Grind the mint leaves, garlic flakes,fennel seeds, green chilli and cardamom into a fine paste adding little water to it.
  • Slice the onions and chop the veggies finely. I used carrot,beans and green peas.

  • In a pan, add oil | ghee and add the cumin seeds and the   onions. Saute till the onions turn brown.
  • Mix 1 tblsp of coconut cream powder in 1/4 cup of water. If using fresh coconut milk, just use the thin milk.

  •    Add the ground masala paste and saute well, till the raw smell goes off.
  • Add the veggies and saute well for 3-5 minutes in a medium flame, till the veggies gets half cooked. Add the coconut milk and let it boil in a low flame.

  • Add salt and add the roasted vermicelli. I used the roasted one, if using the non roasted one, roast the semiya well ,else the biryani will be sticky.
  • Cover and cook in a very low flame till the moisture gets absorbed.

  •   Enjoy with any raita of your choice.

Note:
  1. Instead of grinding the mint leaves you can finely chop them and add too.
  2. Do not add too much of water or coconut milk, it will make the biryani sticky.
  3. If using plain vermicelli, roast it nicely in a low flame, else the biryani will be sticky

OATS IDLI RECIPE | INSTANT OATS IDLI

INDIAN DIET RECIPES

I have been thinking for a long time to post some diet recipes for a long time but somehow it got postponed but after getting many request from readers to post some diet recipes without any delay i thought i should post some Indian vegetarian diet recipes using the ingredients easily available at home. Though i didn’t get the pictures very satisfied due to poor lighting, hope to update this soon when i make this next time. The original recipe i tried from here but replaced with  broken wheat instead of semolina.
Generally i don’t personally diet too much but will not over eat also. I do walk for 30 to 45 minutes everyday and started yoga recently. Just keep in mind that whenever you want to be on diet ,  do not skip any meal , just try to avoid deep fried junk food and sweets. Eat lots of fruits and drink plenty of water.
Before trying this Oats Idli i was worried about the out come but it turned out very well and  i enjoyed with pudina chutney. My hubby who came from Office little early yesterday relished this Oats idli too.

INGREDIENTS: (YIELDS 5 IDLI)
OATS 1/2 CUP
BROKEN WHEAT | SAMBA RAVA 1/4 CUP
OIL 1 TSP
YOGURT 1/4 CUP
GREEN CHILLI 1-2
GINGER (GRATED) 1/4 TSP
BAKING SODA | ENO FRUIT SALT 2 PINCHES
MUSTARD SEEDS 1/4 TSP
CHANNA DAL 1/4 TSP
URAD DAL 1/4 TSP
CURRY LEAVES FEW
SALT AS NEEDED
CARROT (GRATED) 3-4 TBLSP
TURMERIC POWER A PINCH
WATER AS NEEDED

  • Roast the Oats ( i used Quacker quick cooking oats) for 3-4 minutes. Powder this finely.
  • Roast the broken wheat for 2 minutes in a medium flame.

  • In a kadai add little oil and add mustard seeds, ginger, channa dal, urad dal, finely chopped green chilli, chopped curry leaves and coriander leaves.
  • Switch off the flame and add the grated carrots.

  • Add this to the powdered oats and broken wheat mixture. Add yogurt, salt ,turmeric powder and required water to reach the idli batter consistency.

  • Add the baking soda | eno fruit salt to this and grease the idli plates.
  • Pour this oats idli batter to this and steam it for 10 to 12 minutes.
  • Insert a knife to check whether it is done .

  • Take out from the moulds and enjoy hot. It tasted well even when it not very hot.
  • The pudina chutney went well with this and will post the recipe soon.

Note:
  • You can replace broken wheat with semolina.
  • Pour into the moulds after adding the yogurt and water.
  • You can add any veggies of your choice.
