Jalebi recipe| Diwali Sweet Recipes

jalebi recipe
Jalebi is a popular Indian Sweet, made using maida, sugar and ghee as the ingredient. I have tasted it in many occasions, but never tried it at home. Once i have helped a friend when she did with the instant jalebi mix. When i get requests to post Jalebi recipe for Diwali, i explored for recipes and finally ended up with this recipe here.  It was a  super hit at home and everyone loved it. Though in the original recipe it is not mentioned to ferment, many chefs insisted about the fermentation of the batter. So i fermented the batter and it came out very well. So make this Jalebi for diwali 2015 and surprise your family with a delicious sweet. Check my diwali recipe collection.  Follow Jeyashri's kitchen on facebook for recent updates.

Kaju Pista Roll recipe| Diwali sweets

Kaju pista roll
Kaju Pista Roll, it brings back lot of memories to me. As we have seen the kaju pista roll in mithai shops, it is always tempting . I first say this in Krishna sweets when i was in chennai. Also the different shapes of kaju katli like apple, watermelon will be very fascinating for me. Actually i wanted to do the kaju watermelon but thought first will post the kaju pista roll as i am confident in that, because i have tried this 3 years back too. A reader requested for kaju watermelon too, but will post how to shape into watermelon with a different recipe, and not with kaju.
Coming to this kaju pista roll,as i said i have tried this 2 year back for a  Navaratri. One of my very close friend, who now moved back to India, invited all the friends for Navaratri. Since i don't have the custom of keeping golu at my house, i used to help her out with few things on the day she invites everybody. After breaking our head too much finally we decided to make kaju pista roll for a big crowd of 35-40 people. The beauty is both of us haven't tried the recipe before. I know how to make kaju katli, but never attempted the kaju pista rolls. With some guts we started with large quantity of cashew and pista and made the dough. The recipe she has in her handwritten cookbook, copied from snajeev kapoor's website. Just orally she told how to roll it and we both started making it in my home. I still have have the pictures in my album too. I started rolling it too thick and the kaju pista rolls are coming so big like logs. We both were laughing on seeing such logs and the entire project was totally fun. We laughed and laughed and finished making so much of kaju pista rolls spending more than 3 hours.Later we packed also some  rolls to few close friends as there were many. But taste wise they turned out very perfect. Even if i think about that i will laugh. When i told my friend i am going to post kaju pista roll, she too recalled all the sweet memories we had.
Actually i made this 2 weeks back for an event, but didn't have time to click. Made this again for my friend's son who is very fond of kaju katlis.

Traditional Mysore Pak | Diwali Sweet recipes

Mysore- pak
Mysore pak is a traditional sweet made in Tamil brahmin weddings. The Mysore pak served in weddings will be hard and loaded with ghee. The porous texture of the mysore pak is the highlight of the traditional mysore pak. The perfect one depends upon the ghee we use and of course the besan|kadalaimaavu too. I have already posted a super easy Mysore pak recipe , similar to Sri Krishna sweets soft Mysore Pak, few years ago. That was a super hit sweet recipe, tried even by bachelors too. That Mysore Pak recipe involve less ghee and sugar. But still i wanted to try the traditional mysore pak recipe too. During this Navaratri, when i visited one of my friend's house, she served me super yummy lemon sevai, chutney and mysore pak too. The next day i messaged her and asked about the recipe of mysore pak. She told that her mother only made that and after few minutes, aunty called me and told me the recipe.Thank you so much aunty, for patiently clearing my doubts and elaborately explaining the recipe. Though it was loaded with sugar and ghee, the method was very easy only. So i tried it during last weekend and it turned out pretty well. My step wise pictures were not satisfactory, as i was bit tensed about the outcome. The Mysore pak were very nice and tasted the same as i had in her place. I used store bought ghee and besan. If you have access to rice mill, get your besan done at home by grinding channa dal in rice mill. Also make ghee at home or use the Aavin ghee if you get. This will give  perfect colour for the Mysore pak.

Moong Dal Omapodi | Diwali snacks recipes

Diwali 2015 recipes

omapodi- recipe
Omapodi | Sev is a snack which is generally added to South Indian mixture. Basically it is made with besan| kadalaimaavu. I still remember during our childhood, we eat these omapodis crazily and finally end up with stomach upset as the besan  too much consumed will give that effect. I have already posted the omapodi recipe in jeyashri's kitchen When i come across the moong dal omapodi recipe here, it sounded very nice. When i tried it yesterday, it turned out awesome and was a super hit at home too. If not for Diwali, this ompaodi is a perfect tea time snack too. The aroma of ajwain| omam and the moong dal flour enhances the taste of the omapodi. Check out my full collections of diwali recipes.

Almond Murukku recipe | Easy Diwali recipes | Badam Murukku

Almond murukku | Badam murukku is an easy diwali snack recipe. For bachelors who live in abroad and don't have access to urad dal flour or pottukadalai, this murukku you can make only with rice flour and almonds. I wanted to try cashew murukku, which i learnt from my friend's mil 2 years back. When i saw this almond murukku here , i thought i will give it a try. The murukku turned out very crispy and i loved the flavour of almond in the murukku. You can try this murukku with store bought rice flour too. Even idiyappam maavu works out well for this recipe. Kala Jamun Recipe | Diwali Mithai Recipes

Using Instant gulab jamun mix

kala- jamun
I wanted to post this Kala Jamun for last Diwali itself, but as i  posted so many diwali recipes last year, didn't have time to post this recipe. From my childhood i remember, for Diwali apart from other sweets and snacks, Gulab jamun will also be there. Gulab jamun mix will be in the grocery list when we do grocery shopping during diwali. Beetroot halwa with khoya
Beetroot halwa, i never realised that i didn't have this recipe simple and easy sweet in my website. During this Navaratri, i happened to visit many of friends and among them few i don't know personally and they are my readers. When one among them told me that she searched for beetroot halwa in my website and it was not there, i realised i didn't post this recipe. So made this yesterday and clicked the pictures. I have already posted Gajar ka halwa| carrot halwa with condensed milk. So i wanted to make this beetroot halwa with khoya. You can even make the beetroot halwa with condensed milk too. Navadhanya Sundal | Navaratri Sundal recipes

Navadhanya sundal
Navadhanya Sundal generally my mom make towards the end of navaratri with all the left over legumes at home. But she never use any spice mix for the sundal. I kept in mind my udipi sambar recipe and used most of the things from that masala. Actually i clicked it last friday and planned to post it today. As i know my weekend will be too busy with navaratri Golu visits, i drafted the post too. Those who follow me on Flickr , then you will know, i posted the pictures i took for the navadhanya sundal.  When i went to a friend's house for navaratri on thursday, her neighbour , Lakshmi, whom i know well, invited me to come to her house for Golu. Since it was very late,i just quickly went to her house and happened to see these cute teracotta toys in her golu.(the one you see in the background). As usual i asked her where she got it and she told to take it for my pictures. I said i am done with my navaratri posts and will use it for next year if needed, also told her not to take it out from the golu too. Then again i went to the same apartment for lunch in another friend's house. Knowing this, she came just before i was about to leave and gave me the cute teracotta toys. I felt so happy and for the sake of Lakshmi's effort, i made the sundal again in Sunday and clicked the main picture once again. Thanks again Lakshmi.

Navadhanya Sundal

  Preparation Time : 10 mins + Soaking time 12 hrs| Cooking Time : 35 Mins |Serves: 3-4

     Mixed Legumes*   1/4 cup each
     Oil     2 tsp
     Coconut oil    few drops   (optional)
     Mustard seeds  1/4 tsp
     Asafoetida     2 pinches
     To Roast and grind
   Toor Dal  1/2 tblsp
   Urad  dal   1/2 tblsp
   Channa dal   1/2 tblsp
   Sesame seeds| ellu   1/2 tblsp
   Dhaniya     1 tblsp
   Red chili   2
   Omam| ajwain    1/4 tsp
   Curry leaves  few
   Coconut    2 tblsp
  * I used White Chole. Black kondakadalai, Black urad dal, Karamani(both black and white) green peas, white peas, Rajma and peanut.
Actually i soaked 1/4 cup each but the next day it was too much as they have doubled in size. So i took half from that and cooked, which came to 2 cups of cooked sundal. the rest of it i drained the water thoroughly, washed it nicely and put it in a zip lock cover and kept inside the freezer.
This will stay good for 10 days. You can take out whenever you want and cook.

Navadhanya sundal
Method:
  • Soak all the legumes in a wide bowl, except white karamani and urad dal. The white karamani and urad dal soak separately.
navdhanya sundal 1
  • Cook this in a pressure cooker by keeping both in a separate vessel. Add half of the salt to this while cooking. I kept both inside the cooker at the same time but added very little water to the urad dal and karamani mixture, as they tend to overcook so quickly.
navadhanya sundal 2
  • Drain the water completely and mix all the legumes together.
navadhanya sundal 3
  • Now dry roast all the ingredients under under the heading"to roast" in the ingredient table, except coconut. roast till the become nice golden brown. Be careful not to burn it.
navadhanya sundal 4
  • Switch off the flame and add the coconut and curry leaves. Let this cook in that warmth.
navaratna sundal 5
  • Grind this into fine powder. The podi came to 4 tblsp and i used 3 tblsp of this for the sundal. You can even add this to the rasam or sambar too.
navaratna sundal6
  • In a pan add oil and add the mustard seeds and asafoetida.
  • Add in the cooked sundal to this.
navadhanya sundal 7
  • Add the podi to this. I added 3 tblsp of the ground powder. Mix well.
navaratna sundal 9
  • Sprinkle few drops of coconut oil, if adding, and mix well. Sundal is ready for neivedyam.
Navadhanya sundal
Notes:
  1. You can soak just 1 tblsp of all the legumes if making for 4-5 people.
  2. You can even replace few legumes with kollu, mochai, green gram or sweet corn too.
  3. the spice mix you can make in advance, without coconut and add it to the sundal. Add coconut in the last.
  4. Adding ajwain aids in digestion.
