Coffee mousse recipe | Easy dessert recipes

Coffee mousse recipe | No egg coffee mousse, with full video and step by step pictures, is an easy and delicious dessert made using Cream, chocolate and Instant coffee powder as the main ingredients. Generally they add egg yolks but this is the eggless version of Mousse. I have tried Chocolate mousse but the combo of Instant coffee and chocolate is a super hit. I have already tried this combo in my Biscuit pudding recipe. If you are hosting a party and looking for some easy yet exotic dessert, then you can definitely try this Coffee Mousse recipe.
Generally kids love to have anything with chocolate. While i was making this, i was thinking, how my kids will respond for the addition of the coffee flavour in the chocolate dessert! But they loved it so much and the Coffee mousse was a super hit at my home.

Recently i got the samples from Levista Instant coffee. I wanted to try out some coffee based dessert and cold drink. As the summer is peak, i don't like to make anything hot. But i have tried making coffee using Levista Instant coffee, which turned out quite good. the flavour of the Instant coffee is so aromatic and fresh. Generally being a filter coffee person, i don't prefer instant coffee. But Levista is flavorful and good. Stay tuned for more interesting recipes using Levista Instant coffee.

Jal jeera Soda recipe

Jal jeera soda is a perfect summer drink, made using mint leaves, coriander leaves, Indian spice powders, and plain soda. I have already posted the recipe of jal jeera recipe in Jeyashris kitchen. I have mentioned in the post that, we can use this for pani puri too. We always make the same while making pani puris at home. Sometimes, kids may want it frizzy and add some sprite or 7 Up to this jal jeera. Though i don't regularly accept the practice, but very rarely i allow them to use the soda water in pani puri water.
As the summer is peaking now, i thought i will share this recipe of Jal jeera soda recipe. You can make this for parties too.

Methi Thepla, Aam ka panna, Lunch menu combo 4

This week's lunch menu combo comes with an simple yet interesting combo. We always get fresh methi leaves here in Singapore throughout the year. I pick a bunch of palak and methi leaves from the nearby Indian store and make pulao, dal out of it. Though i make Methi theplas for dinner, i generally prefer don't prefer to include greens in my diet. Whenever i get a chance to make theplas for lunch i will make it.
Aam ka panna, yet another delicious raw mango drink.  We get raw mango in Singapore quite often. Since it is mango season everywhere i thought i will include this drink in this week's lunch menu. I added jaggery instead of sugar in the aam ka panna.
Rajam, chole and other legumes will always be in stock in my freezer. So whenever i want to make anything with legume, i can make it without much planning. Please check my post on how to freeze legumes.

Mango mastani recipe, Mango recipes

Mango mastani recipe with step by step pictures, a rich delicious mango based popular drink from Pune, topped with dry fruits, ice cream and fresh mango pieces. I heard about this mango mastani few years back when my close friend used to live in Pune. Every year i planned to post the recipe but somehow i end up posting in some other mango recipes. This mango mastani is a filling thick mango shake and the topping of nuts makes it super filling too. Onion Tomato chutney recipe (with coconut)

Onion tomato chutney recipe with coconut, recipe with step by step pictures and video. I have posted onion tomato chutney recipe very long back using chutney dal. Sometimes a small variation in the ingredient will give a twist in the taste. I wanted to try the onion tomato chutney with the addition of coconut and tried it last week for breakfast. Everyone at home liked the taste and personally i find it nice and different from the usual one. So i thought i will share the easy onion tomato recipe in Jeyashri's kitchen.
Generally idlis are not much liked by kids at home. So i always end up making dosai only. But they all love Ragi dosa, whole wheat dosa, barley dosa too. So always i don't make the dosa batter using idli rice. Usually molgapodi will be there available at home all the time. And kids don't bother if i don't make chutney for dosa. But personally for me, i love dosa | idli with chutney or sambar. So if i have time i will make Sambar or else i make Chutney only. One of my favorite chutney recipe is the simple Madurai street style Poondu chutney which i learnt from my mom. Even now i ask my mom to make this for me when i visit her.

In the series of Lunch menu ideas, this week lunch is a simple South Indian lunch. As most of the week days we make one pot meal and some variety rice, generally weekend is the only time we make a proper meal with Sambar, rasam, aviyal... So if you are not a South Indian, do you think how we are not bored with Sambar every week. The change of veggies in the sambar makes the taste totally different. And also we make Plain sambar and Archachuvitta sambar. So what all veggies which are commonly used for making South Indian Sambar? We make Sambar using Drumstick, Ladies finger, capsicum, Small onion, Keerai thandu, Karuvadam, Pumpkin and mix of brinjal, drumstick also.

Mango Hummus recipe

Mango hummus recipe using ripe mango and chickpeas, a perfect dip for a party starters. Hummus is a Mediterranean dip, which i learnt in a Master chef cookery show. Last year when i judged a cookery competition themed mangoes, i happened to ta taste this mango hummus recipe. There was a raw mango hummus too but somehow the ripe mango one gained my attention a lot. It was served with a tangy crackers. Generally hummus will be served with falafel, a deep fried chickpeas based starter.
As the mango season is in peak now, let's give a nice twist to the hummus by adding a ripe mango to the hummus. It tasted so delicious and we enjoyed with freshly cut veggies like carrot and cucumber during breakfast and enjoyed with salt biscuits during tea time.
The sweetness of the mango was balanced by the paprika and pepper powder and the flavour of the mango in hummus was quite amazing. Do give it a try this summer and enjoy the dip.

Dhaba style Aloo paratha recipe

Dhaba style aloo paratha recipe, with video and step by pictures, potato stuffed popular punjabi Whole wheat flat bread recipe. I have shared aloo paratha recipe long back and as much as i love to eat parathas, i love to cook them too. I love all stuffed parathas and i have good memories of eating hot parathas smeared with generous amount of butter in road side dhabas. Though i make good aloo parathas, somehow never got the taste of the ones i have tasted in the road side dhabas. Recently when i was running late in the morning, i made this potato filling, with the ingredients available in hand. Also usually i saute the stuffing and cool before making it, but this time made it just by mashing the cooked potatoes. Wow! the very first bite took me back to the parathas i tasted on the Highways from Delhi to Haridwar. I don't know the authentic way of making the punjabi dhaba style paratha, but the one i am sharing will definitely bring in that taste. So ahead and make the Aloo paratha and do let me know how it turned out.

Mor milagai recipe, Sun dried chillies

Mor milagai, Sund dried chillies, also called as Sandige Menasu in karnataka, is a popular sun dried thing made in summer time, using chillies and sour butter milk. My mom regularly makes mor milagai at home during summer season and stores it for a year. Mor milgai is a perfect accompaniment for Curd rice, also we use it for making Puli upma, puli pongal and the raw mango rasam. The chillies are soaked in sour curd and sun dried till they becomes crispy and stored in air tight bottles.  Whenever needed, we fry them in oil and use it.  So why are we soaking the chillies in sour curd, sour curd balances the spiciness of the chillis. I always buy and keep a pack of store bought Mor Milagai from shops. Last month when i went to chennai, i saw a cart full of bright, green Thanjavur milagais, which are used to make this mor milagais, in West mambalam market. Though i don't have terrace or balcony at home, i still got some chillies and packed it carefully and brought it home. Two years back i have attempted making mor milgais at home, when my mom was here, but couldn't dry it completely due to lack of direct sunlight.

I have a friend, who moved to our apartment last year and she lives in a house which has a huge terrace. So kept it at my house for 3 days and later passed it to my friend, and my friend's mother in law took the complete responsibility of drying it to perfect crispiness and returned back to me after a week. Many thanks to her initiative of doing this for me. Here in Singapore we get rains often and so it took a week. For the summer in Chennai it generally gets dried in 3 days. Let's see how to make mor milagai at home.

Baby potato Biryani, Beetroot vadai, Lunch menu combo 2

Chettinad urulai Biryani | Baby potato biryani, is the ever popular biryani recipe from Jeyashri's Kitchen. Though i replace the small potatoes with vegetables and make Chettiand Vegetable biryani, i still love it with potatoes a lot. To pair this up with an interesting combo, i made Beetroot vadai apart from the Onion raita. Any one pot rice is most welcomed in our family.
And being a pakka South Indian, hailing from a Tamil Brahmin family, our meal will not complete without a Thayir sadam| curd rice, fondly called as Thachi mammu. Even if i cook a North Indian dish, i will make a curd rice for any parties i host at home.
