WHOLE WHEAT ALMOND EGGLESS COOKIES | EGGLESS BAKING RECIPES

 It has been my long time plan to bake this eggless almond cookies. I have tasted this very recently and planned to make this the next week itself. The recipe i have bookmarked from Manjula's Kitchen long back. We all loved this flavorful buttery cookies. Do try this Whole wheat almond cookies at home and enjoy your weekend.

  Preparation Time : 10 mins | Cooking Time : 20 Mins |  Yields: 18-20 cookies

     Whole wheat flour 1 cup
      Sugar  1/2 cup
      Almonds sliced  1/4 cup
      Unsalted butter   1/2 cup
     Cardamom Powder  1/4 tsp
      Salt   1/4 tsp
      Milk      2 tblsp (to knead the dough)

Method:
  • In a wide bowl add the whole wheat flour , sugar ,salt and cardamom powder.
  • Slice the almonds. I just pulsed it in a mixer.

  • Keep the butter in room temperature.
  • Add this to the whole wheat flour mixture. add the sliced almonds too.
  • Knead it into a smooth dough. the dough should be soft. Add 1-2 tblsp of milk for kneading the dough.

  • Make it into desired shapes of 1 inch thickness.
  • Preheat the oven for 5  minutes at 170 degrees.
  • Bake it for 12-15 minutes in the same temperature.
  • The cookies gets baked soon. so keep an eye after 10 minutes.
  • When done cool it on the wire rack and once it is completely cool, transfer to a air tight container.

  • Though the cookies appear to be chewy when hot, once it becomes cool it will be crispy.

Notes:
  • I felt the cookies are bit on the sweeter side and you can lessen 1 or 2 tblsp .
  • Almonds can be replaced with cashew nuts or pistachios.

  12. I tried this cookie it was crunchy. It took 20 min to get baked. I used convection mode. But I struggled to take it from the plate. Should I grease the plate?

    1. thanks for the feed back. You need to grease the baking tray for sure or you have to use a parchment paper. Else it will stick to the tray

  14. Hi Jeyashri,
    I', a fan of ur food blog. I have earlier tried ur custurd powder cookies & it was a hit at my tea party.
    I tried the almond cokies, but they were not as crisp & the finished product wasn't similar to urs. The cookies didnt turn golden brown. Should i have baked them for longer? or what else could have gone wrong?

    1. Thanks for the feedback sapna. Sorry for the delayed reply. Regarding your query,you should have baked this for few more minutes. The time i mentioned differs from oven to oven. this cookies will turn out good

    I am planning to make this cookie today. Cardamom Powder is mentioned twice in the ingredients, so I need to use 1/4tsp and a pinch? or mistakenly you have mentioned?

    1. You can use but do not add too much. Just add 1-2 tsp

  17. Tried making the cookies but they didnt turn brown even after baking them for 35 mins and remained chewy.. Very disappointed with the recipe :( a mere wastage of all the ingredients

    1. Baking time differs from oven to oven. Did you bake further more minutes. This will turn out good.

  18. Thanks a lot Jayshree for this recipe it helped me in my first successful attempt of making cookies...
    The only change I made was I took 1/ 4th cup ragi flour and 2/3rd cup whole wheat flour and its tastes awesome

    1. If you over bake it, it will be hard and can't break it.If you want soft chewy, then slightly 1-2 mins reduce the baking time.

  23. Hi...I tried these cookies today...and they turned to be really nice and crispy...I took double of each ingredient mentioned but had to take about 5-6tbsp of milk to knead the dough.
    Just a suggestion you can view on...can we also add almond extract to enhance the flavor?...i don't get too much of almond flavor in the biscuit as of now.
    Overall i will rate this recipe 4/5. Thank you so much for sharing it :)
