Amlana | Imli ka amlana is a Rajasthani drink made using imli | tamarind pulp. With the addition of pepper, mint leaves, black salt and cardamom it enhances the taste. I was searching for some other recipe and landed up with this amlana recipe from tarla dalal's website. Since it sounded so easy, i wanted to try this out immediately. Tamarind a small gooseberry sized
Water 4 cups
Black pepper powder 1/4 tsp
Cardamom powder 1/4 tsp
Black salt | kala namak 1/4 tsp
Powdered sugar* 1/4 cup
Ice cubes few (optional)
Mint leaves few
*I used powdered raw sugar

Method:
- Soak the tamarind in 1/2 cup hot water for 30 minutes.
- After 30 mins, grind this into a fine paste.
- Strain this mixture and add 3 and 1/2 cups of water.
- Add the black pepper powder, black salt, powdered sugar and cardamom powder to this.
- Mix well.
- Finally add the chopped mint leaves to this.
- Serve chilled.

Notes:
- Do not use store bought tamarind paste, it usually has oil in it.
- You can add 1/4 tsp of cumin powder too.
- Instead of sugar you can add powdered jaggery too.
