Paneer masala rice, easy lunch box recipes

Paneer masala rice, an easy lunch box recipe made using paneer and other easy available ingredients in the kitchen. If you have left over rice then this rice can be made in a jiffy. Yesterday when i got up i was totally blank as what to make for the lunch box. Then decided on making a paneer curry and jeera rice. I started making the paneer curry and cooked plain basmati rice in the cooker. Suddenly the thought of mixing both flashed my mind and made it as a paneer masala rice. It was a super hit among kids.     Basmati 1/3 cup
    Paneer cubes 1/3 cup (cut into small cubes)
    Onion  1
    Tomato 1
    Oil  3 tsp
    Red chili powder  1/2 tsp
    Ginger garlic paste  1/2 tsp
    Jeera powder  1/2 tsp
    Coriander powder  1/2 tsp
    Garam masala  1 tsp
    Salt  as needed
    Kasoori methi  2 pinches
    Coriander leaves  few


Method:

  • Cook the rice and fluff it with a fork and spread it in a plate. You can used left over cooked rice too. 
  • Check my recipe on how to cook basmati rice for more details. 
  • Finely chop the onion and tomatoes.
  • I chopped the paneer into small cubes. You can make it into desirable cubes. 
  • In a pan add oil and add the ginger garlic paste.
  • Saute in a low flame for a minute.
  • Add the onions and saute till translucent.
  • Add the chopped tomatoes and cook for a minute.
  • Add the red chili powder, cumin powder, coriander powder, garam masala and salt.
  • Mix well and cook till the tomatoes become mushy and the raw smell of the powders go off.
  • Add the paneer to this now and gently mix it.
  • You can add frozen green peas too. 
  • Add the kasoori methi to this. 
  • Mix well.
  • Now add the cooked rice. 
  • Mix gently.
  • Let this be in the flame for 2 minutes. 
  • Switch off the flame and garnish with coriander leaves. 
  • Paneer masala rice is ready to serve or you can pack for lunch box too.
Notes:
  1. You can add some green peas and capsicum to the rice to make it more flavourful.
  2. Paneer cubes can be sauted in oil before adding to the masala rice.
