Mango salad recipe with step by step pictures, a healthy salad made using ripe mango and other healthy veggies, with a simple salad dressing. I always add raw mango in my salads, but this time i was so excited to try a salad using ripe mangoes. The Organic banganapally mangoes which i got from Wild seed Singapore were too tasty. So i tried this mango salad using their delicious mangoes. We all loved it and my little one who is a bit choosy, when it comes to new food, enjoyed it a lot and asked me for one more serving. The salad dressing balanced the sweetness of the mango.

Ripe mango 1 big ( iused banganapally mango)
Cooked rajma 1/4 cup
Onion 1
Sweet corn 1/2 cup
Almonds 1 tblsp
Capsicum 3 tblsp
Baby spinach 2 handful
Salt as needed
Coriander leaves few
For dressing
Olive oil 2 tblsp
Pepper powder 1 tsp
Sugar or honey 1tsp
Balsamic vinegar 1 tblsp (can replace with lemon juice)

Cooked rajma 1/4 cup
Onion 1
Sweet corn 1/2 cup
Almonds 1 tblsp
Capsicum 3 tblsp

For dressing

Balsamic vinegar 1 tblsp (can replace with lemon juice)
Method :
- Choose just ripe mango. If it is over ripe, you can cut them into firm pieces.
- Boil the sweet corn and take out the corn kernels. I used frozen corn.
- Chop the onions and capsicum into fine pieces.
- Lets mix up the dressing. Mix all the ingredients given under the head "for heading"
- Balsamic vinegar gives a nice taste to the salad.
- You can add this salad dressing to any salad.
- In a wide bowl add the chopped mangoes, washed spinach leaves, onion, cooked rajma, almonds, cooked sweet corn, chopped capsicum and coriander leaves.
- Pour the dressing over it.
- Add salt.
- Mix well evenly.
- Mango salad is ready to serve.
- Serve immediately.
Notes:
- You can replace rajma with chickpeas or any other legume of your choice.
- You can add walnuts, pumpkin seeds and some flax seeds too.
- Always choose a just ripe mango for this mango salad.
- Raw mango can be used to make this salad.
- You can add chopped cucumber, avocado and carrots to the mango salad to make it more healthy and filling.
