Grilled Mediterranean Vegetable Sandwich

Grilled Mediterranean Vegetable sandwich, is made with roasting veggies on tawa and stuffed inside the sandwich. Usually i make corn spinach sandwich and open bread masala sandwich for kids. I have watched a recipe of Mediterranean sandwich recipe in Venkatesh bhat show last year. When i recently, saw a pack of Panini bread in Fairprice shop, it reminded me of this sandwich recipe and tried at home. Since the video visuals are clear in my mind, i just went ahead and tried it for kids lunch box last week. To my surprise it was a huge hit, especially Varun who is bit fussy about trying new foods, loved it a lot. I had a pack of whole meal bread at home so wanted the sandwich using with that. Samba Godhumai rava adai recipe |Vegetable adai

Samba wheat | dalia | samba godhumai rava adai is a healthy breakfast recipe. We generally make adai with rice and dal but i have tried with samba rava . The adai can be even more healthy by adding some veggies to this. No one in the family can make out that it is made with broken wheat. The adai tasted similar to the normal rice adai only. You can have this adai with jaggery or just can have as it is or can be served with coconut chutney.

Kambu dosai recipe | Bajra (pearl millet) dosai

Kambu we call in Tamil, called as pearl millet in English and Bajra in Hindi. I have posted few recipes with bajra flour, but never tried anything with whole bajra. My amma makes kambu dosai and ragi dosa, both instant and whole grain version. I have already posted my mom's recipe of ragi dosa. She just replaces ragi with kambu. Recently a friend of mine was talking about kambu dosai and which she makes quite often at her place. Thank you Mahalakshmi for the recipe. I had a pack of whole pearl millet in my freezer and wanted to use it up.We loved the dosa very much and it went very well with the curry leaves chutney. You can also serve with coconut chutney too. Try this healthy millet dosa recipe at home and enjoy your breakfast.

Kambu dosa recipe

  Preparation Time : 10 mins + soaking + fermenting 10 hrs | Cooking Time : 3 Mins(per dosa) |Makes: 8-10 dosas


     Kambu | bajra | pearl millet   1 cup
     Idli rice or Varagu | little millet   1/2 cup
     Urad dal    1/2 cup
     Methi seeds | venthayam   1 tsp
     Salt  as needed
     Oil   1/2 tsp -1tsp for each dosa

Method:
  • Wash and soak the rice, bajra, urad dal and venthayam in a wide bowl for 3-4 hours.

  • Drain the water and grind this in a mixie or grinder into a smooth paste. Add ice cold water while grinding. Especially if you are grinding in a mixie use ice cold water as the mixie gets heated up so soon.
  • Add salt and mix well. Ferment the batter for 6 hours.

  • Once the batter is ready, heat a dosa pan. Bring the batter to the right consistency.
  • Pour a ladle full of batter to the pan and spread into a thin circle quickly.
  • Drizzle oil to the dosa.
  • Once it is cooked on one side, flip on the other side.
  • Cook and take out from the pan.

  • Serve hot. Repeat the same procedure for the rest of the batter.
  • The dosa tasted best when served hot.

Notes:
  1. I used white whole urad dal, you can replace with black urad dal. The original recipe given by my friend suggested black urad dal only.
  2. You can sprinkle some grated carrots and some onions on the top once it is cooked on one side.

Besan cheela also called as vegetarian omelette, is a gluten free Indian savory pancake | crepe. It is a perfect breakfast | dinner recipe. I have given this recipe for the kungumam thozi supplement, 2 years back. In that i have added oats flour and besan flour to make it even more healthier. I have heard about this besan ka chilla from my friend many years back. If you have tasted egg omelette, you can vouch that this besan cheela will taste similar to that. You can serve this cheela in between toasted bread and also pack the same for kids lunch box too.

Dry fruits milkshake is a healthy drink for kids as they are rich in protein.Even adults can have this milkshake by adding the nuts of their choice. Generally people make this on vrat days | fasting days. I had some left over dates after making eggless dates cake for my friend on her birthday. So yesterday made this and served for kids in the evening when they were back from school, along with a club sandwich. I had time only to take picture of the dry fruits milkshake only. Ragi rava idli is a healthy South Indian breakfast recipe made quickly and also packed for kids lunch box too. I have given this recipe in my Millet cook in Tamil, which got published by Vikatan publications, 2 years back . The book has successfully crossed 2 editions and the 3rd edition is now doing very well in the market. Coming to this recipe, i got inspired by the idea of MTR Ragi rava idli recipe, when saw a pack of this in a local shop in chennai nearby my mom's house. That time i was planning to compile a book on Millet recipes. Just randomnly tried the recipe of ragi rava idli at home and it turned out so well. I have made this few time for guests too. You can make this as mini rava idlis and impress the kids too. Enjoy your breakfast with this healthy recipe.

Podi dosai recipe | Easy dosa recipes

Podi onion dosa is a simple and easy South Indian dosa, which can be served when you are running out of time to make a chutney or sambar. I always love milagai podi with dosa during the recent trip to chennai, happened to have podi onion dosai in Sangeetha restaurant, made me to get addicted to that and i had the same in many restaurants too. I wanted to try this at home and finally made today for breakfast. As suresh is not in town, i am bit lazy to make chutney or sambar, and my kids will happily have dosa with milagai podi too. I had little kalyana gotsu left over  which we all shared too. The podi onion dosa tasted so yum with the aroma of ghee and kids too loved it. If you do not want onion you can skip onions. Peanut chutney | Groundnut chutney| verkadalai chutney, is a simple south Indian chutney made as an accompaniment for idli|dosa. I have already posted peanut chutney recipe, but this one i recently tried as i had lots of roasted unstalted peanuts which my mom sent for me from India. I have a asked that to make verkadalai urundai as the one we get here is very big and size. I have a pack of them left and i tried this easy peanut chutney recipe out of them. It tasted very well and we had this with whole wheat grain dosai. You can make this for idli or any variety of dosa too. If you have the roasted peanuts in hand, this chutney can be made in 20 minutes.

Tawa Idli is a popular street food made with left over Idlis, which serves as a delicious snack |tiffin. Generally we make idli upma or podi idli recipe using left over idli. This recipe of spicy tawa idli i saw in Tarla dalal's space and bookmarked it too. Yesterday i had a whole lot of 7 idlis which was left and made this tawa idlis. Sprouts tikki

    Sprouts tikki|Moong sprout patties is a healthy tikki recipe, made using sprouts. I have already posted a moong oats tikki recipe. As posted in my Instagram, i went as a judge for a healthy breakfast Masterchef contest, conducted by a nutritionist here in Singapore. It was a my first experience of judging a competition . A truly wonderful opportunity also to learn new things from many people, who participated in the competition. It was agreed by me to post the winner's recipe in jeyashri's kitchen, i tried the recipe made by Swati verma, the winner of the competition. She did a breakie platter, with these sprouts tikki, avocado dip , a healthy berry muffins and a fantastic kale banana smoothie. Will try to share other recipes later.
   This tikki can be made with the ingredients easily available at home. She used oats in this recipe. I realised that i was running out of oats when i started making the tikki I used the porivilaga urundai maavu which i had left . Alternatively you can use sathu maavu or besan too. Batata poha is a Maharastian breakfast recipe made with poha|aval . This can be had for breakfast or evening snack or for a light dinner too. Though i make poha upma at home regularly, i always want to learn the Maharastrian style batata poha. They make Kande poha also without the addition of potatoes. This upma is loved by all at home. Pancakes i make rarely in my kitchen as only Varsha likes it a lot. Me Suresh and Varun are a not a great fan of pancakes. I have given this same recipe, replacing flour with  millet flour in my Millet cookbook  2 years back. So i thought i will try a pancake recipe using whole wheat flour. I just tried replacing half of the flour with whole wheat and turned out pretty well. These pancakes turned out soft and fluffy and perfect one to serve for  breakfast . We always make dosa with godhumai maavu (whole wheat flour) which we call as godhumai dosa or karacha maavu dosai aor wheat dosai. But have you ever tried dosa with Whole wheat grain. Actually my mom makes this  but i have never remembered to ask her the recipe of this whole wheat grain dosa. Generally this whole wheat grain is used for  making godhumai halwa. A reader asked me for a recipe of dosa using whole wheat grain . then it suddenly it flashed that amma makes this and asked her for the recipe. Mysore Masala Dosai recipe | South Indian recipes

Mysore masala dosai is a traditional dosa of Karnataka. Most of the restaurants in Bangalore and Mysore serve this. I was first introduced to this Mysore masala through a cousin's wife here. When we all went out for lunch one day in Raj restaurant here, she ordered Mysore masala dosa. I was wondering, how dosa will be filling for a lunch. But she told, it will be filling and the mysore masala dosa which is served there will be delicious too. I also wanted to give it a try and that i was my first experience to taste the delicious mysore masala dosa. Few years later, my friend Anita, used to make this mysore masala dosa, mostly for Sunday brunch and send hot dosas to us. I could say, she makes the most yummy and delicious masala dosa. LAter when she shifted to Australia,i missed her dosas very much.  Finally i asked her for the recipe and she messaged me through what's app. Try this at home and let me know your feed back. Set dosa | Poha dosai |aval dosai is a soft and spongy dosa, a popular breakfast recipe of Karnataka. It is generally served with Vegetable saagu. There are many versions  around the net for the recipe of set dosa, but i adapted the one which was shared by my friend Anita. This dosa she used to make it very regular, especially for weekend brunch. I have noted down the recipe from her but somehow missed to try it on my own. The best part i love in this dosa is no need to ferment the batter. So i soak in the night for the dosa and grind in the morning to make soft and spongy dosas. Kharabath is a popular breakfast of Karnataka. I have heard about this through my friends many times, but never tasted the authentic Kharabath which is served in MTR restaurant. Few weeks back a reader asked me for this recipe and it so happened for me to visit the MTR restaurant here the next week. I ordered for the kharabath and it tasted very nice. It is similar to the rava kichidi but red chili powder was added instead of green chilies. Also it was loaded with ghee.
