Mushroom sandwich recipe

Easy to Mushroom sandwich recipe with step by step pictures and video, perfect for kids lunch box and back from school snack. Also this sandwich paired with a hot soup is a perfect one for a weeknight quick dinner too. I had some left over mushrooms after making Mushroom biryani. Last week one of my friend visited us home and she was talking about Mushroom Sandwich, then i decided to make this with my left over button mushrooms. It turned out so well. The most satisfying thing is the Mushroom sandwich was a super hit among kids. I added some cheese and they enjoyed a lot.

Puli pongal recipe

Puli pongal recipe with step by step pictures and video, a traditional recipe made using Broken rice and tamarind extract. This puli pongal is a no onion no garlic recipe. It tastes similar to puliyodarai but a one pot recipe made using broken rice | arisi kurunai. I haven't tried this but wanted to try it out for a long time. The recipe was shared by a reader of Jeyashri's kitchen, Mrs. Lakshmi, some time back. I used store bought arisi kurunai for making this puli pongal. If you want to make at home, was the rice and drain the water completely. Dry it in a shady place, inside the house for 10- 15 minutes. Pulse this in the mixie and use the kurunai for making puli pongal. Check out my arisi upma recipe to check how to make arisi kurunai at home. Traditionally puli pongal is made in a uruli (heavy bottomed brass vessel), but i made in pressure cooker to make it simple and easy.

Vella dosai | Jaggery dosai recipe, easy to make instant dosa recipe with step by step pictures. I love vella dosai, i tasted it for the first time after marriage at one our relatives house. Later when i moved to Singapore one day i suddenly remembered the vella dosai and attempted to make it at home. But it was a flop show. I couldn't get the perfect measurements and so the dosai got struck to the pan. Later i left that idea and moved on. I have posted Vella adai and it turned so well.
Few months back when our instagram friend Madhu posted about her grand mom's vella dosai with measurements, i noted down the measurements. Easy Coffee banana smoothie recipe

Easy to make coffee banana smoothie recipe with video, using Instant coffee powder, frozen banana and milk as main ingredients. Summer is at it's peak, and many of us prefer to have something light and refreshing breakfast. Also hot drinks are not preferred by many during summer mornings, and we switch to cold coffee. This easy coffee banana smoothie is a combo of banana, coffee and milk makes a filling breakfast and also the addition of coffee in it makes it refreshing for coffee lovers.
We can add some chia seeds in this breakfast smoothie and make it more healthy.
To make it rich and more exotic a scoop of Coffee ice cream  can be topped while serving or blended with the coffee banana smoothie.

Aam ki poori recipe, Mango puri

Aam ki poori recipe| Mango puri recipe with step by step pictures, poori made using mango pulp and other spices which gives a nice mixture of taste and flavour. Mango is in season and apart from having the mangoes as such, i am trying out some interesting recipes using Mango. Today i actually wanted to post Mango jelly recipe but somehow i didn't like the taste of the jelly which i made. Though the texture was perfect, it didn't taste well. So i switched on to another recipe which i had in my list. Yes mango poori | aam ki poori, i wanted to try out in this mango season. Finally tried it using the fresh ripe Organic mangoes from Wild seed, Singapore. Mango Overnight Oats recipe

Mango overnight oats recipe, a quick and easy healthy breakfast recipe using mango, yogurt and quick oats as main ingredients. Mangoes are in season now and as the summer is in peak now. Most of the time we don't want to stand long time in the kitchen and do any elaborate cooking. Also we don't feel like eating anything hot in the morning for breakfast. Lemon aval recipe, Quick breakfast recipes

Lemon aval recipe| lemon poha is a quick and easy, bachelor friendly breakfast recipe made using poha| aval, with a tangy flavour of lemon.  Most of the days when we are running out of time or out of idli dosa batter, you can make this lemon aval recipe. Even this recipe comes as a savior for weeknight dinner too. I used getti aval | thick poha for this recipe. You can sue red aval too. Thin aval | lacy poha will not work well for this recipe as the poha will not get separated easily when using the thin ones.
Poha| aval| rice flakes are commonly used to make upma and we use it in making idli dosa batter as it gives softness. Also aval is widely used in making payasam, kesari and puttu. I have posted the popular batata poha recipe in jeyashri's kitchen. In the mango season do try the Mango masala poha recipe. Savoury Pancake recipe, Moong flour pancake

Savoury Pancake recipe| Gluten free savory pancake made using roasted moong flour, loaded with veggies makes a balanced breakfast. Whenever i run out of idli dosa batter, i make upma or parathas or sandwiches for breakfast. Recently one of my friend was telling that her mom makes a pancake using green moong flour. It sounded same like the besan cheela but using moong flour. I saw a pack of roasted moong flour in Sri Murugan stores and picked that to try the savory pancake. It turned out so well and kids too enjoyed the pancakes.

Coriander seeds chutney, Dhaniya chutney

Coriander seeds Chutney| Dhaniya chutney, an interesting chutney made using coriander seeds pairs up perfect with idli | dosa. Kothamalli vidai | vara kothamalli | Dhaniya in Tamil, the recipe of the chutney comes with  step by step pictorial explanation. I took video of coriander seed chutney recipe but somehow a part of it got missed. I recently had this chutney in a friend's place and she told it is a common one in her place. Hooked by the taste of the Dhaniya chutney, i asked her for the recipe and i slightly tweaked it in the last part as i felt it should be crunchy, like how it was for the Kadalai paruppu chutney.

We make it for breakfast and dinner too. We generally make dosa batter using Idli rice and urad dal. Recently i got a pack of Barley as i was advised to take Barley water. Barley water has a lot of health benefits and taking Barley water is the best way to hydrate the body in summer. I thought i will try out some recipe using barley and decided to make dosa. Peanut chutney recipe, also called as வேà®°்க்கடலை சட்னி in tamil, with coconut and green chili, recipe with video and step by step pictures. Those who closely follow Jeyashri's kitchen can relate to my love for peanuts. I add peanuts in Aviyal, bisibelabath too. I have posted 3 varieties of chutneys using peanuts. Peanut coconut chutney was in my to do list from last year. This time when i was thinking to make it, saw Ramya's post in Instagram and was too tempted to make it immediately. The idea of adding shallots |chinna vegayam in the tempering, tempted me so much. I used to do this for coconut chutney and mentioned in that post too. I have shared this recipe in my Kutties kitchen cook book. This pancake is always a super duper hit recipe in our house. I have shared the recipe using plain flour| maida in the cook book, but tried using whole wheat flour in this recipe. Only thing i need to add is extra little water for mixing as the batter was bit dense. The pancakes turned out so fluffy.

Ghee Podi idli recipe, How to make podi Idli

Ghee podi idli recipw with step by step picture and video, a delicious snack made using left over idlis or even with fresh idlis.  Idli smeared with molagapodi is one my most favorite breakfast | snack. Even my kids prefer to have podi idli for lunch box. Recently i have tasted Ghee podi idli in few different places and i wanted to recreate that version at home. You can make this with whole idlis but i have made by making the idli into cubes. If you have left over idlis at home from morning breakfast, you can make this for tea time snack. Ulundu kali recipe, How to make ulundu kali

Ulundu kali recipe, Ulundu kali in Tamil,video and step by step pictures,  it is a traditional dish made using rice, black urad dal and karupatti. It is an authentic Tirunelveli style recipe, made for breakfast and this is very high in protein too. Generally it is given for newly delivered mothers and girls who attained puberty, as it it strengthens the hip bones. I have heard about a lot from my friends and during my childhood days my neighbour autny makes it and send for us. My sister eats that but i never used to touch that. Very recently one of my friend share with me Ulundu kali sometime back and some how liked it too. I already have request from my friends to post this ulundu kali recipe in Jeyashri's kitchen. She clearly explained the recipe as her mom and mil are expert in making this kali. She shared with me the flour too, which she got from India. Paneer Sandwich, Easy Sandwich recipes

Paneer Sandwich recipe with video and step by step pictures, Paneer cubes marinated in Indo Chinese style and made with a creamy potato spread, a perfect party snack and a lunch box recipe too. I have tried this recipe few times from a cook book which i bought many many years back. Recently when i was arranging my shelf, i saw this recipe again, I have all the ingredients with me and wanted to try for kids. This paneer sandwich is again a super hit at home and kids loved it a lot. Paneer can be replaced with Tofu in this recipe. Do try this recipe at home and let me know how it turned out.

Paneer Sandwich

     Bread     10 slices
     Paneer cubes  250 gms
     Garlic  1 tbslp (finely chopped)
     Soya sauce  1/2 tsp
     Ginger  1/2 tsp (grated)
     Pepper powder  1/2 tsp
     Salt  as needed
     Butter  1 tsp
    For the potato spread
    Potato  1 cup (mashed)
    Tomato ketchup  1 tblsp
    Pepper powder  1/2 tsp
    Butter  2 tsp
    Salt  as needed

Method :

  • In a wide bowl add the paneer cubes. If it is frozen, bring it to room temperature. 
  • Add the ginger, garlic, pepper powder, salt and soya sauce to this.
  • Mix well and let this marinate for 5-10 minutes.
  • In a pan add butter and add the marinated mixture. 
  • Saute for 5 minutes and keep it aside.
  • Let's make the potato spread now.
  • In a bowl add the mashed potato. Ensure there is no lumps. 
  • Add the tomato ketchup, pepper powder and butter to this. 
  • Mix well.
  • Keep a sandwich maker ready.
  • Butter a bread and keep the buttered portion down on the sandwich maker. You can make this on a tawa too. 
  • Spread the potato mixture on the top side.
  • Place little portion of  paneer mixture on it.
  • Butter another bread on one side.
  • Place the buttered portion up and keep on the top. 
  • Cook till it turns crisp and brown.
  • If making on stove top, flip on both sides and cook on a medium low flame. 
  • Once done take out and cut them into triangles or squares. 
  • Serve the sandwich hot or you can pack them for lunch box too. 


Notes:
  1. You can make the potato spread and paneer ready the previous day night and make the sandwich the next day morning for breakfast or lunch box.
  2. Sweet potato can be replaced for potato. 
  3. Tofu can be used instead of  paneer.
  4. Paneer Sandwich can be made on stove top too.

I came across this interesting Kara chutney recipe with kollu in a tamil magazine and saved it long time back. While i was searching was something in my mobile, this chutney caught my attention. I tried the chutney and it was very tasty. No one can find out that kollu is added in this kara chutney. We had it with dosa and it was quite delicious. Millet Flakes upma recipe, Breakfast recipes

Millet flakes upma recipe, with video and step by step pictures. Millet flakes upma is an easy to make healthy breakfast recipe. We all make Poha upma | batata poha using rice flakes. In our house, poha upma is a quite staple and i make it once in a week. And the only dish, which Suresh can make so confidently is Poha upma. I generally use getti aval for making batata poha and sometimes the medium thick poha also will be used in my kitchen. We all love the addition of peanuts in poha upma and so i generally add little more of peanuts in my upma.
Recently i saw Millet flakes,in many varieties of millet when i went to India. I thought i will buy a packet to try that but in the last minute i forgot about that. Few days back when i visited Sri Murugan stores(Singapore) to buy my grocery, I saw the varieties of Millet flakes there. I am excited to see that and picked a 250 gms of Little millet flakes. I tried Upma with that and it turned out quite well and no one noticed that it is made using millet. The taste is so similar, i made this recipe by combining my Pori upma and batata poha recipes. You can also make millet flakes paal payasam, thayir sadam using this millet flakes.

Onion Tomato Thokku recipe

Onion tomato Thokku recipe with step by step pictures, an onion tomato based chutney which has a hint of fennel seeds and cumin seeds, pairs well with Idli, dosa, chapathi and paratha. I have already mentioned in my ellu chutney recipe, that my friend who visited us here, shared with me some interesting chutney recipes. I shared her version of Milagai chutney too.  This onion tomato thokku is one among them and she told that it is her mil's signature dish. the addition of sombu| fennel seeds in this chutney gives a nice taste to this chutney. For me, sombu we add only in biryanis and kurmas and i was too skeptical as how it will taste in chutneys. I  tried this few back weeks back and loved the taste of this onion tomaot thokku.
