Elai vada| Ilai vadam, is a variety of vadam which is generally made in summer season and stored for a year. I have already posted the recipe of  javarisi vadam, karuvadam and arisi appalam . Though amma doesn't make elai vadam, i love it very much. I got introduced by this vadam,through one of my friend some years back. She sent me some store bought elai vadams and they tasted the same as the Delhi appalams we get in exhibitons. This year i wanted to try elai vadams on my own and finally our tenant aunty India who hails from palakad, told me the recipe and i tried at home 2 days back. It turned out very well. This can be done in places where you don't have terrace and get sunlight only through windows. This vadam doesn't require direct hot sunlight.

Arisi appalam | Rice papad, i always thought this as a very tedious and big process until i tried my hands on making it last week. My mom makes this so well and i never know that this can be kept for drying at home only. Last week when amma came here she got the flour from India. She instructed me on how to make arisi appalam and i thoroughly enjoyed the process of making arisi appalam.
When i fried it yesterday, i felt so happy. The appalam melted in mouth and the entire family loved it. Follow the instructions and try it at home, even if you don't have terrace, you can make this appalam at home. You can have this with any south Indian rice variety like Puliyodarai , lemon rice etc. Or just sprinkle some red chili powder or chaat masala and have this as a tea time snack too.

    Kulambhu karuvadam|Kulambhu Vadam is an authentic Tamil brahmin recipe, made at our houses during summer season. Apart from that we have the practise of making this if a girl is got engaged. Few weeks before wedding we make this karuvadam as it is considered good. I remember the days before my wedding, when i made this in our terrace. Amma prepares the dough and we will be asked to put them in the plastic sheets. Some houses they make during sumangali poojas too.
   This vadam is used in sambars, kootus,vathakulambhu and some people like to eat the fried one with curd rice  too. My mom made this and my nephew clicked the step wise pictures and sent to me.
   Few readers asked me to post this this kulambhu vadam recipe and other vadam recipes.  We are travelling to India next week. Will try my best to make it possible.

Javarisi vadam is my most vadagam . When i was in chennai 6 years back, every year i used to do this every year during summer. I make varieties of vadam but after coming here, i don't get sunlight and so i haven't made this for years. When i changed my camera last month, i passed on my old camera to my sister. When i was talking to mom, she was telling that she is making vadams as the summer started. I casually asked her if possible can you take step wise pictures for me with exact measurements and send the final product to me for final clicks. she happily agreed and my sister's son helped her in clicking and sending me the step wise photos. Thanks to my friend's hubby who brought this from Chennai and passed on to me.  Follow the exact measurements and you will get perfect vadams.
