Donut mug cake is an easy microwave mug cake recipe topped with chocolate ganache. This is perfect dessert for a valentines day celebrations. Valentines day is more special to us as it is out little Prince Varun's birthday too. I have planned to make eggless doughnuts for him but i had to attend to few other work, which was not planned before. So made this donut mug cake for valentines day and an eggless double chocolate chip cake for his birthday. I decorated the cake with whipped cream icing and m and m candies. Will surely post the recipe of doughnuts soon. On this occasion of Valentines day, i extend my love to all my dear readers, who all make this journey so complete. Celebrate love.

EGGLESS CARROT CAKE WITH HOT TOFFEE SAUCE
After a long time, i baked a beautiful cake yesterday. I can say this eggless carrot cake is one of the best cake i have baked. The hot toffee sauce makes the cake more tasty. I wanted to make an carrot cake for a long time and this recipe i adapted from here and the yummy hot toffee sauce i adapted from Nags space. So go ahead and try out this easy eggless carrot cake with hot toffee sauce.
INGREDIENTS: FOR CARROT CAKE
CARROT (GRATED) | 1 CUP |
CONDENSED MILK | 1 TIN (14 OZ) |
ALL PURPOSE FLOUR | 1 AND 1/4 CUP |
BAKING POWDER | 1 TSP |
BAKING SODA | 1/2 TSP |
MELTED BUTTER | 1/2 CUP |
VANILLA ESSENCE | 1 TSP |
FOR HOT TOFFEE SAUCE:
BROWN SUGAR | 1/4 CUP |
BUTTER | 2 TBLSP |
CREAM | 1/2 CUP |
VANILLA ESSENCE | 2 DROPS |
- Sift the all purpose flour, baking soda and baking powder for even mixing.
- Grate the carrots and add the condensed milk, melted butter and carrots in a bowl. Mix it gently and evenly.
- Add vanilla essence to this.
- Now mix this wet ingredients to the flour mix and gently mix it.
- Grease a pan and pour the cake mixture to this. I used a bundt pan to bake this carrot cake.
- Bake this in a preheated oven at 180 degrees. Mine took 40 minutes to bake this beautiful cake.
- Allow this to cool in a wire rack.
- To make the Toffee sauce,combine all the ingredients under the table “Toffee sauce” in a sauce pan.
- Gently mix this let it simmer for 5-7 mins until the mixture thickens. Switch off the flame and keep it aside.
- Just make holes in the cake with toothpicks and pour the toffee sauce over the cake.
- Cake is ready to serve. Do not skip the toffee sauce as it enhanced the taste of the cake very much.

EGGLESS MARBLE CAKE RECIPE | MARBLE CAKE RECIPE
Marble cake i have seen in many blogs but i always have a doubt whether i could manage to get the swirls and the marble effect on the cake. Actually i planned for another recipe to post today and even i scheduled it too. But suddenly i remembered it is my co-sister’s birthday today and i made this eggless marble cake to surprise her with a visual treat. So after sending the kids to school i immediately started the process and clicked , edited and finally started writing the post. Please bear with my clicks this time as i was in a hurry to post and i couldn’t wait till the cake to completely cool and cut that too. The reason for my urgency is i was hearing some thunder and so i wanted to click before it starts to rain.
The recipe i adapted from Divya's space and many videos from the Google search clarified me in making the marble effect. The original recipe has butter but after started making only i realised i have no enough butter and so i replaced with oil. Still it came out soft and yum.

INGREDIENTS:
ALL PURPOSE FLOUR| PLAIN FLOUR | 1 AND 1/4 CUP |
MILK POWDER or CONDENSED MILK | 3 TBLSP |
BAKING SODA | 1/2 TSP |
BAKING POWDER | 2 TSP |
ORANGE ZEST | 1 TSP |
VANILLA ESSENCE | 1 TSP |
COCOA POWDER | 2 TBLSP |
HOT WATER | 2 TBLSP |
MILK | 3/4 CUP |
POWDERED SUGAR | 3/4 CUP |
OIL | 1/2 CUP |
Method:
- In a wide bowl add the flour, baking soda and baking powder and since i used the milk powder i added it too. If using condensed milk add it to the wet ingredients.
- Sift the mixture to ensure even mixing.
- Add the powdered sugar and oil and mix well in a separate bowl. Mix well. Add milk to this. If using butter cream the butter and sugar till it becomes fluffy. Add milk to it later and add the vanilla essence too. If using condensed milk instead of milk powder add at this stage.
- In hot water add the cocoa powder and mix well to make a paste and add the orange zest to this.
- Mix the milk,oil and sugar mixture to the sifted flour mix.
- Mix well without lumps. Take 1/2 cup of the flour mixture and add it to the cocoa mixture.
- Grease the pan with oil and spread one portion of of plain batter to this.
- Now add one portion of cocoa batter to this and make swirls with a fork or knife.
- Repeat the same process for another portion too.
- Preheat the oven to 160 degrees and bake it for 30 to 35 minutes. Mine got done in exactly 26 minutes. Insert a tooth pick in the center of the cake to check whether it is done or not. If it comes out clean then it is done.
- Cool it in a wire rack. When it is completely cool, cut them into pieces. Else you will get the crumbles.
- It will be better if you keep it in the refrigerator and cut this after 2 hours.
- Orange zest you can skip too if you do not have oranges at home. But i recommend to add this as it enhances the flavor of the cake.

EGGLESS VANILLA SPONGE CAKE RECIPE | BASIC CAKE RECIPE | NO EGG NO BUTTER RECIPE
Few days back when i was talking to my friend who recently got a baking oven, asked me a recipe of a basic cake recipe. I suggested a few eggless baking recipes from my blog . But i wanted to try a a basic eggless vanilla sponge cake too. I already tried this Vanilla sponge cake from here and i thought i will make it again and blog the recipe too.
This cake turned out super soft and moist. I wanted to bake it in a loaf pan, but ended up baking in a round spring foam pan only. I added little tutti fruitty to the cake. You can skip that and bake a plain cake too.
While uploading the pictures i realized that this is my 300th post too.

INGREDIENTS:
ALL PURPOSE FLOUR(MAIDA) | 1 AND 1/2 CUP |
YOGURT | 1 CUP |
SUGAR | 3/4 CUP |
BAKING SODA | 1/2 TSP |
BAKING POWDER | 1 AND 1/2 TSP |
COOKING OIL | 1/2 CUP |

METHOD:
- Cream sugar and yogurt ( use yogurt in room temperature) till the sugar gets dissolved.
- Add baking powder and baking soda to this mixture and mix well.
- Keep it aside for 5 minutes.
- Add vanilla essence.
- Add oil to this.
- In a wide bowl add the flour and slowly add the wet mixture to the flour.
- Mix well to get a creamy texture.
- Add tutti fruity to this and mix well.( if using)
- Pre heat the oven to 180 degree C for 10 minutes.
- Grease the baking pan and dust it with flour.
- Transfer the cake mixture to the baking tin.
- Bake it for 35 –40 minutes at 180 degrees C till the center gets completely cooked. Check it by inserting a tooth pick in the center. If it comes out clean then it is cooked.
- After 20 minutes just brush the top of the cake with milk to get a glaze.
- when it is completely cooled keep it in the refrigerator for 3 hours and cut the cake.
- This step will make it to get perfect pieces without crumbles.
- But i didn’t do as i have to click soon as the weather was getting bad and it was about to rain. (Natural light will work out best for pictures)
Note:
- Never allow the batter to sit for a long time as this will make the cake hard.
- 3/4 th cup of sugar is normally perfect but i prefer to have little extra and so you can make it as 1 cup also.
- The taste of yogurt will not be felt in the cake so you can move on to try out this recipe without any second thought.

CHOCOLATE MUFFINS RECIPE | NO EGG | NO BUTTER | VEGAN VERSION
I have bookmarked this recipe of chocolate muffins from Here a long time back. It is a very easy and simple recipe and I was waiting for an occasion to make this and yesterday i finally made this chocolate muffins for my daughter Varsha’s birthday and the muffins turned out very soft and moist and the addition of Orange juice adds up an exotic flavor to the muffins.

UNSWEETENED COCOA POWDER | 1/3 CUP |

METHOD:
- Sift the flour, cocoa powder and baking soda for even mixing.
- Keep it in a wide bowl after sifting.
- In another bowl, add the oil, cold water, orange juice,vanilla essence, lemon juice and add the sugar and mix gently till the sugar dissolves.
- When done, slowly transfer the wet mixture to the sifted flour and mix gently without any lumps.
- If adding chocolate chips add at this stage.
- Preheat the oven to 180 degree C and arrange the muffin tray with muffin liners.
- Spoon the batter and bake for 12- 15 minutes.
- Mine got done in 12 minutes.
- Check with a clean tooth pick by inserting it in the middle of the muffin whether it is done or not. If it comes out clean then take out and cool it in a wire rack and if not just bake for a minute or two .
Note:
- The original recipe if for a cake recipe so you can try a cake also.
- Do not replace baking soda with baking powder, both are not same and the result will not be the same.
- I used Hersheys cocoa powder

NUTELLA BROWNIES RECIPE | NO EGG NO BUTTER
After a long time I wanted to bake something and i have a big box of nutella lying in my kitchen which my friend gave to me while shifting her house. I wanted to utilize this in one shot and i was searching for an eggless cup cakes with nutella and finally i landed up in this Eggless Nutella Brownies recipe which i adapted from Here .
INGREDIENTS:

NUTELLA | 1 CUP MINUS 2 Tblsp |
MAIDA| ALL PURPOSE FLOUR | 1 CUP |
COCOA POWDER | 1/4 CUP |
YOGURT | 1/2 CUP |
OIL | 1/3 CUP |
MILK | 1/2 CUP |
SUGAR | 3 TBLSP |
VANILLA ESSENCE | 1 TSP |
WALNUTS/ HAZELNUTS/CASHEWNUTS/ALMONDS | 1/3 CUP |
BAKING POWDER | 1 TSP |
INSTANT COFFEE POWDER | 1 TSP |
- Sift the flour, baking powder, coffee powder and cocoa powder together for even mixing.
- Melt the nutella in microwave for 2 minutes.
- I did it using double boiler method.
- In a wide bowl, add milk, yogurt, oil , vanilla essence and sugar and mix well.
- Add this to nutella and mix well.
- Pour this to the sifted flour mixture and fold gently and evenly.
- Add finely chopped nuts to this, i used cashew nuts and mix gently.
- Transfer this to a greased baking tin ( square tin) and bake in a 190 degree preheated oven for 30 mins.
- Mine took 25 minutes to bake. Bake at 170 degrees. Insert a tooth pick in the center and check whether it is done. If it comes out clean , take out from the oven and cool them for 15 minutes.
- Cut them into squares and if you like to have it warm, just microwave this for 20 seconds and serve .
- I have cut them into big squares and this yielded 11 to 12 pieces.
