Mango overnight oats recipe, a quick and easy healthy breakfast recipe using mango, yogurt and quick oats as main ingredients. Mangoes are in season now and as the summer is in peak now. Most of the time we don't want to stand long time in the kitchen and do any elaborate cooking. Also we don't feel like eating anything hot in the morning for breakfast. This overnight mango oats is a perfect way to start the day in a healthy manner. I have posted mango chia pudding, yet another no cook breakfast recipe. Oats* 1/2 cup
Mango 2 (i used alphonso mango)
Yogurt | curd 1 cup
Milk 1/4 cup
Chia seeds 2 tsp
Flax seeds 2 tsp
Sugar 2 tsp (optional)
Mango pieces 1 tblsp (for garnishing)
Pumpkin seeds 1 tsp

Mango Overnight Oats recipe

Mango 2 (i used alphonso mango)
Yogurt | curd 1 cup
Milk 1/4 cup
Chia seeds 2 tsp
Flax seeds 2 tsp
Sugar 2 tsp (optional)
Mango pieces 1 tblsp (for garnishing)
Pumpkin seeds 1 tsp
*I used quick oats.
Method :
- Peel the skin of the mangoes and roughly chop them.
- One portion of the mango only slice into small cubes for garnishing.
- In a mixie add the mango pieces, yogurt and milk. If adding sugar add it now.
- To give it an Indian touch you can add a pinch of cardamom powder.
- Blend this into a smooth paste.
- In a jar add the quick cooking oats, chia seeds and flax seeds. It's totally optional to add the seeds.
- Add the mango yogurt puree to this.
- Mix well.
- Keep this refrigerated for 4 hours or overnight.
- Before serving garnish with mango pieces and pumpkin seeds.
Notes:
- Instead of sugar you can add honey or maple syrup.
- I didn't add any, as the mangoes are so sweet.
- You can top the Mango overnight oats with almonds and walnuts too.
