Ragi rava laddu recipe, Indian sweets

Ragi rava laddu recipe, a super easy Indian sweet made using roasted ragi flour, semolina, ghee and sugar. Recently a friend sent me some delicious ragi laddus to me, while returning my dabbas, which was with her. The laddus were too yum and i assumed that it is store bought as she sent a pack of Grand sweets mixture too. I immediately pinged her and appreciated it and she told it was made by her mother in law. As the taste was lingering, i planned to make this easy Indian sweet for Janmashtami. I asked her the recipe and she told it is made using whole ragi. I had 2 packets of roasted ragi flour i wanted to try it out with that flour. Since i wanted to get the same texture, i added little coarsely ground sooji too. You can make the ragi laddus only with ragi flour too. A simple and easy diwali sweet which will surely get appreciations from the family.

Peanut murukku recipe, Verkadalai murukku

Crunchy peanut murukku, easy to make murukku recipe with rice flour and peanut paste, recipe with video and step by step pictures. Those who follow Jeyashri's kitchen for a long time, know my love for peanuts. The entire family loves the addition of peanuts. I saw this recipe in Revathy Shanmugam madam's cook book last year. I wanted to post during diwali but since i posted cashew pepper murukku i didn't try this one. I already planned to post this for Janmashtami 2018. It is an easy to make murukku and it came out so crunchy too. There is not need to roast and powder urad dal in this recipe as we do for thenkuzhal. Dry fruits poli, How to make poli easy method

No sugar added poli

Dry fruits poli, a no sugar less oil Indian dessert recipe, a healthy version of poli, recipe with step by step pictures. Poli also called as Obattu, Holige, puran poli, vermi in different languages, is a sweet loaded with ghee. The stuffing inside the polis varies from place to place as South Indians, Maharastrians use chana dal and gujaratis use Toor dal. Apart from these traditional polis we also make different varieties of poli with our own creative ideas. I have posted carrot poli, thenga poli apart from the traditional ones with chana dal and the Maharastrian style puran poli. I still remember the way amma and patti makes poli loaded with oil and a super delicious soft polis. They make in huge batches and even distribute to our neighbors too. I don't claim an expert in making polis like the same way she makes, but i can make decent polis. It is more you gain mastery over it by practice. As i do it only once a year for aavani avittam and that too in a very small quantity, my output will not match her level of excellence.
As we all are becoming health conscious and running out of time when any festival falls on a week day. But still we want to follow the traditions too and i am seeing many young girls around the world are so enthusiastic in doing all the delicacies on a festival day.
I am no sure whether diabetic patients can consume dates and nuts, so i don't claim this diabetic friendly sweets but you can call no sugar added sweet. Try this relatively healthy version of poli and enjoy the festival. Also check out my

Home made cardamom powder, How to make elachi powder

Cardamom powder recipe with video, how to make elachi powder.
Cardamom powder, elakkai powder recipe using whole green cardamoms. My mom used to make cardamom powder and home and keep it in the refrigerator, which always is handy while making payasam, kheers and even for tea. Many years she was grinding cardamom along with little sugar and store it. Later she started doing this with raw rice and it gives nice volume to the cardamom powder. I have heated the cardamom in a pan as i don't get direct sunlight like how we get in the terrace or balcony. If you have access to terrace keep the cardamom and rice for 2 hours and then grind into a fine powder. Else you can microwave this for a minute and then cool and grind into a powder.
If you have kept the cardamoms in the fridge or freezer, take them out and bring it to the room temperature and then proceed.
Though i don't prefer elachi in my sweets but still add it as it enhances the taste. This cardamom powder is always handy when you are making sweets in a hurry. I have seen few of my friends take out the seeds inside and make a powder and they use the skin of the cardamom in tea. I feel the skin is flavourful too, so don't want them to be discarded. Pachai payaru payasam, Green gram dal payasam

Pachai payaru payasam | green gram dal payasam a simple rich jaggery based payasam made using green gram dal. We generally make payasam with yellow moong dal and channa dal, but this is the first time i made payasam with green moong dal. I remember amma makes kanji with pachai payaru and adds milk and sugar or jaggery to this, on fasting days. Today being aadi velli i thought i will make a payasam and made this pachai payaru payasam. This payasam can be made for any festival neivedyams. Try it out and let me know how it turned out.

Sheer Khurma recipe,How to make sheer korma

Sheer khurma, Sheer korma is a traditional dessert made during eid ul-fitr with fine variety of vermicelli, dates, milk and nuts. The rich kheer recipe, made during the Ramadan day and it's a must one for this festival. Here in Singapore they call the festival as Hari Raya. I wanted to post this recipe of sheer khurma from last year but somehow i could make it only during this year. I remember reading about this Seviyan kheer for the first time in my son's SST book, while reading with him, festivals of India. I made this for my guests yesterday and it was a super hit. The kheer was similar to our semiya payasam but was too rich with nuts, dates and condensed milk. Usually they use fine variety of semiya for this sheer khurma. We get this in Mustafa center. If you don't get this in your place, use normal roasted semiya|vermicelli.

I wanted to try this carrot payasam with jaggery,as Tamil New Year 2018,is tomorrow,14th April, i thought i will share the recipe today. I first thought i will make the carrot payasam using coconut milk,then finally made this payasam with milk and jaggery. I loved the taste of the payasam and the family to loved it. Suji ka halwa recipe | Sooji ka halwa

Suji ka halwa recipe with step by step pictures, a popular Indian Sweet made using Semolina,ghee and sugar. I have already posted the South Indian kesari recipe,this suji ka halwa is similar to that but there is  slight variation in measurements and methods. I have tasted this for the first time, when my North Indian friend invited Varsha for Ashtami and offered, Puri, suji ka halwa and channa for Navratri. The tradition itself is new to me. We South Indians celebrate Navratri and keep Golu. I was thinking to post the North Indian version of Suji ka halwa. When i called my friend she told, her in father in law is an expert in making this and told me to come over to take down the recipe from him. I happily went and uncle explained patiently the entire recipe and i noted it down and he patiently clarified all my silly doubts too. As now many North Indians are celebrating Chaitra Navratri this week, Saturday will be ashtami and this sooji ka halwa is made for that.

Kalyana Sweet pachadi recipe | Mixed fruits pachadi| Pazha pachadi is generally served in Tamil Brahmin weddings. We also serve this during festivals at home. As today is Ugadi festival, i thought i will share this recipe in Jeyashri's Kitchen. I learnt this from a cook mami, who came to our house for cooking, during the time of my son Varun's upanayanam. She used only apple for this pachadi. I have already posted a tomato Sweet pachadi, which is my mom's signature dish. Green peas Kheer recipe | Happy New year 2018

Wish you all a very Happy New year 2018. Let's start the New year 2018, with a sweet recipe. Green peas kheer, yes you heard it right. Kheer made with green peas, almond and sugar as main ingredients. I have tried this Green peas kheer last year for a cookery demo here in Singapore. As green peas is in season now, i thought it will be perfect to post the recipe now. We can use frozen peas and make this any time of the year. You will not find the smell of green peas in this recipe and trust me it is a treat for the guests who are visiting on NEW year day.

Nei appam recipe
Nei appam | Unniyappam is a traditional sweet generally prepared in our homes for Karthigai deepam, Janmashtami,Ganesha chaturthi, Onam and avani avittam. I have already posted nei appam, wheat appam and many more Karthigai deepam recipes. Two years back, when i learnt the recipe of Traditional Mysore pak from my friend's mom, she told me the recipe of Nei appam too.Though i noted down the measurement of rice:jaggery, i didn't note down anything else. But i remember the way she was explaining to me. So i tried the same using millets instead of rice. Varagu and Thinai will work out very well for sweet appams. Karthigai deepam 2017 is on Dec 2 this year. I have posted many recipes for Karthigai deepam festival. Traditionally pori urundai, appam, milagu adai is made for Karthigai deepam. Vella adai is made with rice, toor dal, channa dal and jaggery as the main ingredients. You can soak in more quantity for both milagu adai and vella adai and in the last divide the batter and add jaggery to vella adai and pepper to the milagu adai. These adais turned out so well and the sweet was just perfect for the taste buds.

Sago moong dal payasam | Javarisi pasi paruppu payasam with jaggery and coconut milk. Recently during Ganesha Chaturthi we visited one of our friend's house for Ganesh Dharshan. Her mom made this yummy sago moong dal payasam. The flavour of coconut milk and moong dal combo was truly awesome and the bites of sago pearls in between was a treat to the taste buds. I asked her for the recipe and she messaged me few days back. I always want to javarisi payasam with jaggery so i was waiting to try this out. Kurukku Kalan recipe, Kerala kalan recipe

Kerala Kurukku Kalan recipe is a  coconut based yogurt gravy, usually take in Onam sadhya menu. I haven't explored much into authentic Kerala recipes, but this time i wanted to try out some popular Onam sadhya recipes. My mami, from whom i learnt chakka varati recipe, whose cousin i met in India during a wedding. She is basically from Cochin and shared with me few authentic Onam sadhya recipes. Later i clarified my doubts over phone before trying out the recipe. Thank you so much Viji for sharing the recipes and patiently answering my queries. Let's learn few more Kerala style recipes in this week.
Traditionally Kerala kalan is made with yam and nendram banana. Since i didn't get the Nendram banana nearby my place, i added only yam. You can add raw banana(vazhakkai) too.

Shahi Coconut modak, Easy Ganesh chaturthi recipes

Shahi coconut modak is an easy to make Prasadh for Ganesh chaturthi. Generally many people keep the Ganesha at home for a week after Ganesh chaturthi. They offer Prasadh for Ganpathi everyday. We used to celebrate this in one of our friend's house and we all will make prasadh everyday for Lord Ganesha. Even kids love to cut eggless cake for Ganesha too. This shahi coconut modak is a similar to the easy coconut ladoo recipe, shaped in modak shape. I have added some nuts to make it more rich. I used modak mould to shape this shahi coconut modak. Modagam using Desiccated coconut , Ganesh chaturthi recipes

Modakam | modagam | Kozhakattai, the traditional modakam is made using coconut and jaggery stuffing. Generally we use fresh coconut to make the coconut jaggery poornam. But some people may not have access to fresh coconut in their country. We can easily make poornam with desiccated coconut. The taste is almost the same and even you can replace jaggery with brown sugar also. Celebrate this Ganesh chaturthi with varieties of modak and other recipes from Jeyashri's kitchen.

Modagam using desiccated coconut

  Preparation Time : 20 mins | Cooking Time : 20 Mins |Makes: 16

     For the outer cover
Idiyappam flour  1 cup
Water as needed
Sesame oil  few drops
   For the poornam| stuffing 
Desiccated coconut  1/2 cup
Powdered jaggery  1/4 cup
Cardamom powder  a pinch
Water 1-2 tblp

Sesame oil   to grease idli plate and grease hands

Method:
  • In a pan add the desiccated coconut, jaggery and cardamom powder.
  • Add 1-2 tblsp of water and mix well.
  • Cook for 2-3 minutes till the jaggery melts and it gets incorporated with the desiccated coconut.
  • Poornam | stuffing for modak is ready.
  • Let's make the outer cover.
  •  We can make the outer cover in 4 ways. 
  • Add idiyapam flour or home rice flour in a wide bowl. 
  • Boil water with few drops of sesame oil.
  • Once it comes to a nice rolling boil, add the water to the flour. If using home made or store bought rice flour,add a pinch of salt to the water.
  • Mix well with a spoon and keep it covered for few minutes.
  • Once it is warm, grease hands with sesame oil and knead into a soft dough, without any cracks.
  • Keep it covered all the time.
  • Make it into equal lemon sized balls.
  • Take one portion of the dough, using fingers make a small cup.
  • Place 1/2 tblsp of filling into this.
  • Gently close it and make it into modak shape. 
  • You can check my video on how to shape modak 
  • Repeat this for the rest of the dough .
  • The dough and the stuffing is just perfect for the outer cover.
  • I finished both the dough and the stuffing for making 16 modakams.
  • Grease an idli plate and place the modakams.
  • Steam for 10 minutes. You will see the shine in the modaks and it is the right time to switch off the flame.
  • Let this cool for 2 minutes.
  • Take out the modaks from the pan and the desiccated modaks are ready for neivedyam.

Method:

Notes:
  1. Adding water is necessary while making the poornam but do not add too much. First add 1 tblsp and if needed add 1 more.
  2. The sweet is just perfect for the stuffing, if needed more add 1-2 tblsp of extra jaggery powder.
  3. Always keep the dough and the prepared modak covered. 
  4. If using modak mould check out my video on how to shape modak using mould. 
  5. If using brown sugar, add water only if needed.

Sweet potato modakam, Ganesh Chaturthi 2017 is coming up on august 25. I have posted many varieties of modak recipes including our traditional Modakam with thengai poornam. Last year itself i wanted to post this Sweet potato modakam but couldn't post as i had posted other kozhukattai varieties. It turned out so well and we all loved the taste of sweet potato in modakam. Kothamalli ammini kozhakattai , Kozhukattai recipes

Ammini Kozhakattai is always made at our place during Vinayagar chaturthi, using left over Kozhakattai maavu. Some times amma makes kozhakattai on normal days too as it's our family's favorite. Right from my childhood, i used to love the modakam and these cute mini ammini kozhakattai. This ammini kozhakattai can be had as a healthy snack too. You can substitute rice flour with wheat flour, ragi flour or millet flour too. I have tried curry leaves ammini kozhakattai once and loved it very much.
