Beetroot halwa recipe | Diwali recipes

Beetroot halwa with khoya
Beetroot halwa, i never realised that i didn't have this recipe simple and easy sweet in my website. During this Navaratri, i happened to visit many of friends and among them few i don't know personally and they are my readers. When one among them told me that she searched for beetroot halwa in my website and it was not there, i realised i didn't post this recipe. So made this yesterday and clicked the pictures. I have already posted Gajar ka halwa| carrot halwa with condensed milk. So i wanted to make this beetroot halwa with khoya. You can even make the beetroot halwa with condensed milk too. Or make it plain only with milk and sugar. Adding khoya or condensed milk gives richness to the halwa. Check out my other halwa recipes too.

Lavang- Latika
Lavang Latika is a popular bengali sweet, similar to our Suryakala and Chandrakala. I heard this for the first time when my co sister's mom made it and brought for us once. Generally she this sweet for Diwali. She is an expert in making this sweet and every year she brings a box full of this for her daughter, when she comes for vacation to chennai. Since we were in joint family we also eat this happily. I thought this a very complicated recipe and never asked her how she makes this. After a successful attempt of badusha during last diwali, i thought i will try this recipe of lavang latika. To my surprise, the recipe was too simple to try. My co sister who is also an expert in making this sweet gave me the recipe and few you tube videos helped me how to fold lavang latika. Actually there are 2 ways to fold this, i have given both the methods. To me both were easy only. This sweet was a super hit at home also i took for a friends meet too. Everyone liked it very much. Dal dhokli, i have heard about this many times from a friend but never tried or tasted it. Basically it is a a mix of roti and dal which i always considered as a comforting one pot meal by itself. This recipe was in my to do list for a long time. Since i am posting  jain recipes | no onion no garlic recipes, i thought i will post this. Though i roughly know how to make Dal dhokli, this video helped me to know about the exact recipe of dal dhokli. I had this piping hot dal dhokli with crunchy peanuts on a rainy day afternoon for lunch. Check out my other no onion no garlic recipes.

KESAR RABDI RECIPE | CELEBRATING 6 YEARS OF BLOGGING

Jeyashri's Kitchen is 6 today. Yes, very happy to share a sweet recipe on this day. It was the same day 6 years ago, i stepped into the blogging world with a Paal payasam recipe.  Six years rolled very fast. With all gratitude to the Supreme power, i would like to extend my thanks to my family members who always encourage me in whatever i do and appreciate my endeavors. Thanks to Raks, who always helped me technically during my initial stages of blogging and still clarify my silly doubts too. I am gifted with very good friends and all of them used to encourage me, appreciate me and point out the areas where it needs improvement. Above all, thanks to all my dear readers, with your support, i am sure i will continue to grow heights.

Sweet lassi is the one i always love to have anytime. Though i love lassi, i make the salt lassi | neermor, as they are very good for health. My daughter loves all types of lassi. As the kids have holidays, i am making some juice or lassi for them . Today she asked for sweet lassi and i am a mood to click the pictures too. As i have already posted sweet lassi, i thought i will make kesar lassi . The kesar lassi was awesome and she loved it a lot. She infact patiently waited for me to click the pictures.

PUNJABI SAMOSA RECIPE | PUNJABI ALOO SAMOSA WITH VIDEO

Punjabi samosa, the name it makes us to salivate for us. I have already posted a triangle samosa recipe but making this punjabi samosa was my dream. A friend in our apartment used to make this everyday and gives them to the nearby shop . If we order with her in advance she will make for us too. I tasted it once in a party, but got many good feed backs from my friends who regularly buy from her. I asked her one day can you teach me how to make the shapes of punjabi aloo samosa. She immediately said whenever you want you come. So one fine evening i went to her house and learnt the shaping of samosa. She patiently explained me and cleared my silly doubts too. Even before making this yesterday and send few doubts over whats app messages and she explained to me. Here you go, i finally made the punjabi samosa and given the recipe with step wise pictures and video of shaping the samosa too. It needs practice and also not very difficult as we think. do try this at home, as home made ones are always the best. Waiting to hear from you.

ATTA NAN KHATAI RECIPE |WHOLE WHEAT NANKHATTAI

Nan khatai is a Indian style short bread cookies. I have already posted the recipe of Nan khatai , also posted a version of saffron laced nankhatais too. Though i already posted 2 sweet recipes for holi, since today is holi festival i thought i will post some thing colourful. Suddenly thought of this atta nan khatai which i have bookmarked from Divya's space long back. I made this and added few drops of food colour to the dough to make it colourful.Wish you all a very Happy Holi.
The original recipe used only whole wheat flour for making nakhattai.

SEV PURI RECIPE | SEV PURI CHAAT

Sev puri is a mumbai street chaat recipe and we all are a huge fan of this Sev puri Chaat. I was craving for this for the past few days. As holi festival, is round the corner, i know many of them make sweets and savouries. Many of them make chaat recipes too for holi festival too. Let's see how to make Mumbai street style  Sev puri chaat. Yesterday after a very tiring day, immediately after clicking the sev puri , happily had 7 puris all by myself for my lunch.
  Happy to share that my recipe got featured in Kungumam Thozi,a popular tamil magazine, this March 2015 edition. Will share the recipe here next week.

MALPUA RECIPE | MALPUA RABDI RECIPE | HOLI RECIPES

Malpuas are similar to the south indian version of Paal poli. Mawa | khoya Malpua is Indian pancakes shallow fried in ghee and served with rabdi. It is one of the desserts made for Holi celebrations. As holi 2015 is on March 5th i thought i will share this recipe today. Malpua with rabdi i wanted to try for a long time, after tasting this in a restaurant during our delhi visit last year. I referred the recipe from here  Though i know the procedure of how it is made, i was bit worried how a batter will be fried if i put them into ghee for frying. But after seeing the recipe i was bit confident tot try it.Enjoy the festival of colors, Holi with delicious Malpua Rabdi . Check out the notes section below for variations to make it bit guilt free

Moong dal Halwa is an awesome North Indian sweet . I have tasted this few times in my friends house but never attempted to make it on my own. I wanted to post a nice and exotic sweet recipe for New year 2015 and tried this before coming to India for vacation. I clicked the pictures and posting now from India.      Rice kheer |chawal ki kheer, is similar to the south indian Paal payasam. I recently tasted this in a friend's place during Varalakshmi pooja and the rice kheer was super rich and creamy. I noted down the recipe from her keeping in mind to post this kheer recipe during navratri. The blanched almonds and saffron adds a super crunchy taste to the kheer. Though it takes little time to cook, the kheer is worth trying.

Thandai-holi-festival 3   I have never made this thandai on my own, but happened to drink this few times in holi parties. Few of my friends insisted me to put this recipe of Thandai . I got this recipe from my friend who regularly makes thandai for our holi party.  It turned out very well and i never know it is very easy to make Thandai at home. Even my south Indian friends, if you are not celebrating holi also, just try out this drink and stay cool this summer. This thandai is made for Maha shivaratri too.

DAHI BHALLA RECIPE|DAHI VADA RECIPE

Dahi Vada | Dahi bhalla is a north Indian version of Thayir vadai. I have already posted the south indian Thayir Vadai . This version though i have tasted many times, never tried on my own. I learnt this recipe from my co sister, during our casual talk , while having lunch together. It turned out super tasty and we all finished the entire bowl within no time. You can make vadas in advance and just serve them with curd and chutneys just before eating.

DRY FRUITS LADOO | EASY DIWALI SWEET RECIPES | DRY FRUITS AND NUTS LADDU

Dry fruits is one of the easiest sweet which can be done in 5 minutes and this recipe of dry fruits ladoo is made without sugar too. Interesting right!!. Yes the one of the easy sweet i made for this Diwali is Dry fruits laddu which i learnt from a friend who gave this for me during last diwali. If you are running out of time and even working ladies in the last minute if you want to make something very easy at home this dry fruits laddu is the perfect one. Now coming to the recipe of Dry fruits ladoo:
PREPARATION TIME: 5 MINUTES . COOKING TIME: 3 MINUTES . MAKES 14 LADOOS
INGREDIENTS:
DATES (PITTED) 20
MIXED NUTS* 1/2 CUP
GHEE 1 TSP

METHOD:
  • Take out the seeds from the dates .
  • Dry roast the *nuts ( i used walnuts, cashew nuts, badam, pumpkin seeds, and pista) for 10 minutes in a low flame without getting burnt.

  • In a non stick pan, add ghee and add the dates and cook for 2 minutes . Do not get it burnt. The dates will get into a goey texture.

  • Coarsely pulse the nuts in a mixer. Add this to the dates mixture. Switch off the flame.

  • Grease your hands with ghee and make ladoos of your desired size.

  • If you want you can roll it i desiccated coconut.
  • This will stay at room temperature for 2 days and keep it in the fridge for next few days.

NAN KHATAI RECIPE | DIWALI SWEETS RECIPES | EGGLESS INDIAN COOKIES

Nan khatai or butter biscuits whatever the name we use, are totally delicious Indian cookies . I am a huge fan of these nan khatais and the we used to call this as bakery biscuits and after coming into this blogging world i came to know about this name. If you want to try out few baking goodies for this diwali and want to surprise your friends with some interesting diwali sweets then you can try out this Nan khatais. They turned out very well but the pictures didn’t turn out as i expected. even you can involve your kids in making this Diwali sweet and they will feel more happy and a nice experience for them too.  PREPARATION TIME : 20 MINUTES. COOKING TIME: 15 MINUTES MAKES:20-22 COOKIES
ALL PURPOSE FLOUR 1 CUP
GHEE(MELTED) 1/2 CUP
SUGAR 1/2 CUP
CARDAMOM 1/4 TSP
BAKING SODA 1/4 TSP
CASHEW NUTS 2 TBLSP(FINELY CHOPPED)
BADAM| PISTA FOR GARNISHING

METHOD:
  • In a wide bowl add the flour,baking soda and cardamom and mix well. Add the  finely chopped cashew nuts to this and mix well.

  • In another bowl, powder the sugar and add the ghee to this and beat this well for 5 minutes till it becomes creamy.
  • Add this sugar and ghee mixture slowly to the flour and knead it into a smooth dough.
  • Leave the dough covered for 30 minutes.

  • Make small cookies and garnish with pista or almond in the center.
  • I used badam.
  • Pre heat the oven at 160 degree C for 5 minutes.
  • Arrange the cookies in the baking tray and bake for 10 to 12 minutes.

  • These cookies need not turn golden brown. Even if u feel they are soft when hot, after u completely cool them it will become crisp.
  • Cool them in a wire rack.

  • Be careful not to get it burnt. Even if you see cracks it is fine , no need to worry.

MOTICHOOR LADOO |EASY DIWALI SWEET RECIPES| MOTICHUR LADDU RECIPE


Moti choor- ladooMotichoor ladoo is one among my favorite sweet and i wanted to try this for a long time. I have posted few ladoo recipes last year . Check out my Boondi ladoo , Besan ladoo, Rava ladoo. Two weeks back we went to Malaysia and i wanted to make a sweet and a savory for my friends and my mama’s family whom i have planned to visit there. I decided on the South Indian Madras mixture and thought of making Mysore pak. Though i made both some how i wanted to make another sweet and suddenly this Motichoor ladoo came to mind and i had this recipe of Motichoor ladoo in a popular cookbook which i wanted to try for a long time. It just turned out perfect and i could finish the entire process in an hour. I can highly recommend to try out this motichoor ladoo for this diwali and trust me it will turn out awesome. PHIRNI RECIPE|CREAMY RICE PUDDING RECIPE

Phirni is an exotic Indian dessert and though  i have heard about his Phirni many times but never tasted this anywhere. Last year while travelling back from India after attending my cousin’s wedding, while waiting in the airport bought a Femina magazine and saw this recipe of phirni there. After that i totally forgot about that and few weeks  back i suddenly came across by this book while cleaning my book shelf and made this Phirni for Krishna thjayani. I wanted to share this phirni recipe during that time but was busy with some other  posts so couldn’t post this recipe of phirni.
This phirni recipe is a must try one and without thinking too much i had 2 full bowl of Phirni and now craving while typing the post too !!
Phirni -RECIPE
INGREDIENTS: SERVES 4-5
BASMATI RICE 4 TBLSP
LOW FAT MILK 3 CUPS
CONDENSED MILK  1/2 CUP
SAFFRON FEW STRANDS
ALMONDS | CASHEW FEW
CARDAMOM POWDER A PINCH(OPTIONAL)

METHOD:
  • Soak the rice in water for 20 minutes. Drain the water and grind this into a fine paste.

  • Boil milk in a pan, when it starts boiling add the ground rice paste to this and mix well. Keep the flame low and stir in a low flame to avoid lumps and the to avoid getting burnt.
  • When  it starts thickening, after 15 minutes, add saffron strands and cardamom powder.

  • Add condensed milk to this and mix well.. the mixture will be semi thick by this time.

  • When it is warm, pour them in the serving bowls and garnish with chopped almonds and cashews on the top. Cover this with a cling wrap and refrigerate for 3 to 4 hours.
  • If you find sugar is less add 1-2 tblsp of sugar

  • Super delicious Phirni is ready for serving. I bet your family members and guests will be totally delighted by this dessert.

Note:
  • You can soak and grind few almonds along with rice to make this more richer.
  • I used low fat milk but still the texture was so creamy and thick. So no need to use full cream milk.
  • You can add rose essence in the last to make it a rose pudding.
