MANGO RICE RECIPE

     Mango rice is an easy one to make and i can say this is a perfect lunch box menu. Recently i made this and my son who never tries any new food apart from usual rasam and curd rice, ate this and he relished this a lot. What else can make a mom happy. Here comes the recipe of the simple mango rice.

COOKED RICE 1 CUP
GRATED MANGO 4 TBLSP
OIL 1 TBLSP
MUSTARD SEEDS 1/4 TSP
PEANUTS 1 TBLSP
GREEN CHILLI 2 NO
SALT AS NEEDED
TURMERIC POWDER A PINCH
CURRY LEAVES FEW
URAD DAL 1/4 TSP
CHANNA DAL 1/4 TSP
RAW MANGO RICE
METHOD:

  • Cook the rice and fluff it with a fork.
  • Add a tsp of oil and half of the salt to this and  allow this to cool.

  • In a pan add oil and throw in the mustard seeds, channa dal ,urad dal, peanuts, green chilli and curry leaves.
  • Saute till the dal and peanuts turn golden brown.
  • Put off the flame and add the turmeric powder and the remaining salt to this.

  • Add the grated mango and the tempered mixture to the rice.

  • Mix this nicely with rice.
  • Yummy mango rice is ready to pack for lunch box.

Note:
  1. The addition of mango depends on the sourness of the mango.
  2. If it is very sour then reduce the quantity.
  3. Do not add the mango when the rice is very hot.
  4. Do not over cook or mash the rice.

Instant mango pickle

    Instant mango pickle recipe,raw mango oorugai,a  simple mango pickle recipe that goes well with curd rice and I love to eat this with  to have them with Bisibelabath. We call it as venthaya maangai or kalyana maanga oorugai. The crunchiness of the maanga with the fresh spices gives a nice taste to this pickle. Even we used to have a spoon of raw mango pickle with our evening coffee or tea. In our home we all are a big fan of this Instant pickle. In Singapore, we get Raw mango throughout the year. Now comes the recipe for the RAW MANGO PICKLE.

Instant mango pickle,raw mango oorugai,a quick pickle pairs well with curd rice.
   Raw mango  2 cups (cut into small)
   Red chili powder  2 tsp
   Mustard seeds  1 tsp + 1/2 tsp
   Methi seeds| Venthayam  1 tsp
   Sesame oil | nallenai  3 tblsp
   Salt  as needed
   Asafoetida  a generous pinch

  • Cut the mangoes into small bite size pieces.
  • Dry roast the fenugreek seeds,1 tsp mustard seeds for 3 minutes.

  • Allow it to cool and finely powder it in the mixie.
  • We use only 1/2 tsp of this powder. You can store the remaining for the next time use.
  • Add the red chilli powder, salt and 1/2 tsp dry roasted powder to the cut mango.
  • Heat up the oil and throw in the mustard seeds and asafoetida.
  • Pour the oil over the cut mango and mix nicely.
  • Mango pickle is ready to serve.
  • It can be stored  in the fridge for 3-5 days.
  • Always use a clean dry spoon to take the pickle.

MANGO ICECREAM RECIPE | NO EGG | WITHOUT ICE CREAM MAKER

 Mango-ice cream
When I was speaking to my mom few days back, we were talking about mangoes.
Then i remembered about the mango ice cream she used to make for us when we were kids.This mango ice cream does not require ice cream maker and doesn't use eggs too. It can be made with easily available ingredients at home. We kids with our dear cousins enjoy this during our summer vacation.
Since my kids are on vacation now, i wanted to make this for them. This is the first time i am attempting this after marriage.
But my mom will make it with simple ingredients available at home. She learnt this from my Athai.
I made this with ready made mango pulp. Alternatively you can use fresh ripe mangoes.
Update: I made Mango ice cream with Alphonso mangoes and it tasted awesome.

RAW MANGO PACHADI RECIPE

Raw mango pachadi, is a traditional sweet made on Tamil new year day in our house. Amma makes it quite often during mango season too. During my childhood i have never tasted this raw mango pachadi as i am a big hater of jaggery based sweets. Now it has totally changed. I have updated my mango pachadi recipe with video.
