Ash gourd raita recipe, Poosanikai thayir pachadi

Ash gourd raita | Vellai poosanikkai thayir pachadi recipe, south Indian pachadi | raita variety made using white pumpkin, a perfect summer coolant. Raitas also called as Thayir pachadis in tamil, are a perfect accompaniment for a South Indian meal. We all love raitas and the most favorite among all is the Carrot capsicum pachadi. The same ash gourd raita can be done using cucumber, but you can add raw cucumber in the raita.
We generally make kootu or pitlai or mor kuzhambu or kasi halwa using white pumpkin in South Indian cuisine. This is the first time i tried poosanikai raita. Vendakkai Thayir pachadi recipe | ladies finger raita, a delicious South Indian raita recipe,pairs well with any variety rice. I have very memories of tasting this from my Mom's kitchen. After marriage i have never attempted this on my own. Though it is a simple recipe somehow i never made it. After moving to Singapore, i have tried it once and Suresh loved it very much. Those days i don't own a blog but even after starting Jeyashri's kitchen, in these 9 years i haven't posted the vendakkai thayir pachadi recipe. Though i make it at home, never clicked the pictures. Pumpkin Raita recipe | Kaddu ka raita

Pumpkin raita | kaddu ka raita is a easy raita recipe. Few weeks back when i went to my friend's house for Varalakshmi pooja, during a conversation she was telling about pumpkin raita. I never know that we can make raita with pumpkin. We south Indians make raita with White pumpkin| ashgourd, but making raita with yellow pumpkin | kaddu is quite new to me. Later she shared the recipe with me and it tried this few days back. It turned out very well. Try out this easy pumpkin raita recipe.

Alvas Yogurt - A review

Yogurt|Curd|Thayir, we Indians include in our everyday meal, either in the form of curd rice or buttermilk or masala chaas.  I got a mail from Alvas, an Indian Diary Producer in Singapore, to  write a review on their yogurt. I readily accepted it and they sent me their products in 2 days.
Alvas Natural curd comes in 3 different sizes, 200ml, 500ml and 1litre. 
Alvas Natural Yoghurt is available in Sheng Shiong outlets, FairPrice shops and Mustafa Center in Singapore. I felt the availability of the yogurt is quite reachable to all, as we have Sheng Shiong and FairPrice outlets island wide. Apart from these places, it is available in all Indian Mini marts. Coming  to the price, the 200 ml is priced 1.20 SGD , the 500ml is 2.80 SGD and the 1 litre is priced 5.40 SGD. 
This review is based on my personal opinion. I am not paid by the company to write the review. I was given only the yogurt by Alvas Natural.

Nellikai Thayir pachadi | Gooseberry raita recipe

Nellikai thayir pachadi | gooseberry raita is a simple and easy raitha made using gooseberry. Generally we make this during dwadesi, which is the next day of ekadesi fasting. We also make agathi keerai curry on dwadesi. Though gooseberry very good for health they say we should eat this after sunset, as it is a body coolant. This nellikai thayir pachadi is made in a jiffy and you do not require any palnning before to make this recipe. Yesterday being Vaikunta Ekadesi we make this nellikai thayir pachadi today for dwadesi.

Onion raita is an accompaniment of biryani. As we all know onion raita  is choped onions mixed with creamy yogurt. But whoever comes to my house, never fail to appreciate the onion raita which i make for Biryani or pulao. It is a misnomer if i call this as a recipe. But just want to share with you  all the way i make the onion raita. I learnt this from my friend's mom during my college days, and since i saw her making this raita, i can never forget this recipe. Capsicum when added in most of the food will give aromatic and flavourful.  We generally add capsicum|bell pepper in sambar, fried rice, paratha and some times in raita too. This south indian style of carrot capsicum thayir pachadi will be a perfect combo vatha kuzhambu or sambar rice too. Instead of making some fried accompaniments for sambar, this raita| thayir pachadi will be a perfect accompaniment, especially for this summer.

Generally yogurt dip will be made with greek yogurt. But in normal Indian homes buying greek yogurt and making it at home will be bit out of question of turns out expensive too. Greek yogurt dip will be very thick and creamy and will be perfect for dips. I have already posted a sour cream dip recipe.  While some part of the world is experiencing heavy snow till now, here Summer already started  and to beat the heat we are taking loads of water, cucumber, coconut water, oranges and all. Some times get bored with eating the cucumbers or salads as such. So to make it interesting and cool, i am sharing you the recipe of yogurt dip . Just try with any salads or even for tikkas. I will be sharing some summer cooler recipe here often. Stay tuned.

PINEAPPLE RAITA |PINEAPPLE RAITA RECIPE

Pineapple raita is an interesting rata which i happened to taste in a Indian restaurant in Bali, 3 years back. After that i totally forgot about this pineapple raita. Recently , i suddenly remembered this while seeing our trip album and that day to my luck i had fresh pineapple with me at home. So i asked  my friend about this recipe, who makes it at her place. Yes i have good friends around from all different parts of India, so they are always at my help whenever i have any queries.Smile

So let us see how to make Pineapple raita.

Pinapple raita recipe

INGREDIENTS:

PINEAPPLE(CUBED) 3/4 CUP
YOGURT | CURD 3/4 CUP
RED CHILLI POWDER 1/4 TSP
SUGAR 1/4 TSP
CUMIN SEED POWDER 1/4 TSP
CHAAT MASALA 2 PINCHES
SALT TO TASTE

METHOD:

  • Hung the curd for 10 minutes to take out the extra water. this step is truly optional. I just kept the curd on a big filter.

  • Take the yogurt in a wide bowl.

  • Add salt, sugar, red chilli powder,jeera powder and chaat masala.

  • Mix well.

  • Add the pineapple cubes and mix well. Serve chilled with any spicy biryani or you can have this as it is.

  1. Hanging the curd will give a creamy raita.
  2. The amount of spices can be altered according to your taste.

SOUR CREAM DIP RECIPE

       Sour cream dip recipe I learnt from my daughter and which she learne from her friend’s mom as she made this for us on a weekend along with burger. This tasted so yummy and few days back i made this for her and i don’t know the original source of the recipe, since i just made as per my daughter’s  instructions . INGREDIENTS:
SOUR CREAM 1 CUP
SPRING ONION (GREEN PART ONLY) 2-3 TBLSP
CAPSICUM(VERY FINELY CHOPPED) 3 TBSLP
SALT TO TASTE
GREEN CHILLI 1 NO
LEMON JUICE FEW DROPS

METHOD:
  • Chop the greens of the spring onion and the capsicum into very fine pieces.
  • I used all the three colors(red,green, yellow) of the capsicum.
  • Roast the green chilli in open flame.

  • Take the cream in a wide bowl and beat this nicely with a spoon.
  • Chop the roasted chilli finely.
  • Mix everything to the cream and add salt and lemon juice.

  • Serve with chips | or with breads.

  • This can be kept in the fridge for a day. Always use this on the day when it is made.

THAKKALI PACHADI, TOMATO RAITHA

             As the summer is in the peak, almost everyday for lunch i am a making raitha, as an accompaniment  with rice.  My mom makes this simple tomato raitha ,during festivals and special occasions. I made this two days back when i have guests around ,and we had this with Bisibelabath.

INGREDIENTS:
TOMATO 4 NO
COCONUT 2 TBLSP
GREEN CHILLI 1 NO
CUMIN SEEDS 1/4 TSP
OIL 1 TSP
MUSTARD SEEDS 1/4 TSP
CORIANDER LEAVES FEW
SALT AS NEEDED
YOGURT 1 CUP
TOMATO PACHADI
METHOD:

  • Wash the tomatoes and chop them finely.
  • Grind the coconut ,green chilli and cumin seeds into a fine paste and keep aside.

  • In a kadai, add oil and throw in the mustard seeds.
  • When it splutters add the chopped tomatoes to this and saute for 3-5 minutes in a low flame.

  • Transfer it to a bowl and add the ground coconut mixture to it
  • Mix it nicely by adding salt and finely chopped coriander leaves to this.

  • Mix well with yogurt , before serving .
