Baked arrabbiata pasta

Baked arrabbiata pasta recipe with video. Penne arrabbiata is a popular recipe and recently i tried the baked version of the pasta with arrabbiata sauce. Few weeks back when we went to Chennai,Varsha experimented this version of pasta and sent me the picture. She is a great fan of spicy food,but since Varun doesn't eat that much spicy food,i normally make don't make too spicy food. She wanted to do a guest post again for Jeyashri's kitchen but thank god,school reopened for her from today. Two days back i made this same baked pasta for her friends who came home and posted the picture in Jeyashri's kitchen Instagram too. Many of the readers messaged me and asked for the recipe. It is similar to the lasagna recipe but the sauce is different in this recipe. Try this easy baked pasta recipe at home. Pasta Primavera recipe | Easy Pasta recipes

Pasta Primavera is basically a pasta loaded with fresh vegetables. We don't use any pasta sauce in this  pasta recipe. I adapted this recipe from a magazine, the book i had bought 4 years back. After i bought i kept it inside by book shelf and totally forgot about that. Recently while cleaning the entire book shelf found this magazine and wanted to try out this Pasta Primavera recipe from that. It was super easy and the main part is kids loved this very much. I used zucchini, sweet corn and capsicum in this recipe, you can use broccoli, carrot, olives and veggies of your choice also. Pasta, veggies, cheese, what else can we need to make the kids happy. Sevai using Sevai nazhi | Idiyappam recipe

Sevai using Sevai Nazhi (சேவை நாழி ,in tamil)Sevai | Idiyappam |String hoppers, is a popular South Indian breakfast or tiffin recipe. During my childhood days amma always makes sevai for tiffin and also it will be extended for dinner too. We never had idiyappam for breakfast. Sevai will always be done using sevai nazhi at out place. It is quite laborious but i still amaze at my mom as how she manages to do this tiring work even at this age with so much of enthusiasm. Though she was a working women, she used to make this sevai,after coming back from her work. Both mom and paati will sit together in the kitchen and do this 'Project Sevai'. this sevai takes place in my mom's kitchen especially when we have guests. Since many will not do sevai using sevai nazhi, she loves to serve them this rare tiffin for them. Recently my mom visited me and her 40 years old sevai nazhi is passed on to me. We are not a big fan of idiyappam or sevai but i wanted to try my hands on making this. Amma makes different varieties of sevai such as Lemon sevai, Thenga sevai, ulundu sevai, Thayir sevai and Vella sevai. When ever i wanted to make sevai, i use the instant ones available in the market.
 Though i helped my mom in making this many times, never tried on my own. I don't know how many of you will try this at home, but i want to post this recipe just for my memory and also to kindle the memories of many people reading this post.

Peas Paratha recipe| Matar Paratha

Peas Paratha | Peas stuffed paratha,with green peas and fresh masala powder. Peas paratha i have tried many years back but some how didn't like the way i made,and after that i have never attempted to make Green peas paratha. Few months back, when we organised a meet up,we ordered Peas Kachori from a friend here. It was so awesome and when i asked for the recipe, she passed on a box of peas filling which she made,to me. I tried Paratha with that filling and it tasted so yum. Later i got the recipe from her and finally today i tried Peas paratha following her recipe. She told that this is basically a Bengali peas kachori filling recipe, which she learnt from her friend's mother in law. I loved the aroma of the freshly spice mix used in this paratha. Check out my

Peas Paratha recipe

  Preparation Time : 10 mins | Cooking Time : 25 Mins |Serves: 5 parathas

     Green peas  1/2 cup
     Turmeric powder  1/4 tsp
     Salt as needed
     Sugar  1/2 tsp
     Oil  2 tsp
     Green chili  1
     Ginger  a small piece
     Atta | Whole wheat flour  1 cup 
    Ghee or oil  to smear on the paratha
     Asafoetida  1/4 tsp
For the spice mix
    Red chili  2-3
    Cloves   2
    Elachi | cardamom  1
    Coriander seeds  2 tsp
    Cumin seeds  1 tsp 
    Fennel seeds | sombu  1 tsp
    Cinnamon  a small stick
Method:
  • Knead the dough and keep it aside. Divide this into lemon sized equal dough balls.
  • I used frozen peas. If using fresh peas, pressure cook for 2-3 whistles. Drain the water completely and keep aside. Let this cool completely.
  • Dry roast the coriander seeds,red chili,cumin seeds,cinnamon,cloves and cardamom for few minutes in a low flame.
  • Switch off the flame and add the fennel seeds.
  • Allow this to cool.
  • Grind this into a powder. This powder only we are using as Paratha masala. It yielded 4 tsp of masala.
  • Grind the peas, green chili and ginger into a coarse paste.
  • In a pan add 2 tsp of oil and add asafoetida. Now add the coarsely ground peas mixture.
  • Add 2-3 tsp of the spice mixture, the parantha masala, turmeric powder and salt.
  • Mix well and cook till the mixture becomes dry.
  • Switch off the flame and let this completely dry.
  • Take one dough ball and dust this with dry flour.
  • Roll this into a thick disc.
  • Place 1 tblsp of Peas mixture on this.
  • Cover this as how we do for modakam,by bringing the edges together.
  • Dust this in the dry flour and roll this gently into parathas.
  • I always love my parathas bit thinner, if you want this thick roll accordingly.
  • Heat a tawa and cook the paratha on both sides. 
  • Smear oil or ghee on both sides.
  • Serve hot with plain yogurt.      
   The filling was perfect for 5 parathas. I was left with one dough ball. So you can add 2 tblsp extra peas to make the filling more for that extra dough.

  • I added 3 tsp but felt it was bit more. So reduce to 1.5-2 tsp.
  • Mix well and cook till the mixture becomes dry.
  • Switch off the flame and let this completely dry.

  • Take one dough ball and dust this with dry flour.
  • Roll this into a thick disc.

  • Place 1 tblsp of Peas mixture on this.
  • Cover this as how we do for modakam,by bringing the edges together.

  • I always love my parathas bit thinner, if you want this thick roll accordingly.

Notes:
  • The same can be made as kachori. For making kachori, check out my Dal kachori recipe for the outer cover.
  • I made this peas paratha slightly spicy, if you want this mild spice, add 1-2 red chili or skip the green chili.

Palak poori recipe | Spinach puri

Palak poori recipe is poori made with spinach puree. I have tried Palak poori once for my Kutties Kitchen cook book. Recently i got a box of baby spinach from the Fair price shop here in Singapore. I wanted to make Dal palak as kids love it very much. I was thinking of some other recipe using palak leaves then this palak poori recipe flashed my mind.I wanted to make a video of palak poori recipe but couldn't do it. We enjoyed the palak pooris with channa masala. You can make this pooris for kids lunch box too. Use a cookie cutter to shape the pooris and make it kids friendly.

Chilli cheese dosa | Cheese dosa recipe


Chilli cheese dosa is a delicious cheesy dosa made with easily available ingredients. When the kids are fussy about usual dosa and chutney varieties, make this Chilli cheese dosa and i am sure they will love this a lot. It is similar to the chili cheese toast which we make with bread. I made this Chili cheese dosa few days back and posted in my Instagram story. I wanted to make this post last week itself but somehow couldn't do. Maravalli kizhangu adai recipe| Tapioca adai

Maravalli kizhangu| mara seeni kilangu|மரவள்ளி கிழங்கு(in tamil) also called as Kappa in Kerala, Tapioca in English is a root vegetable. I have always eaten maravali kizhangu chips during my childhood days, fondly called as kuchi chips. I have never tasted maravalli kizhangu in any form. My sister was telling me from last year to try maravalli kizhangu adai. I am clueless of the recipe and didn't attempt to try at home. Last week while casually searching for something else in the book shelf, came across the recipe of Maravalli kizhangu adai, in Revathy shanmugam madam's cook book. Stuffed idli recipe | Idli bites| Idli sandwich, is a simple tiffin or starter made with idli batter and potato stuffing. I have already given the recipe of stuffed idli in my second cook book, Kutties kitchen.  I wanted to post the recipe in Jeyashri's kitchen too and tried this morning. After i finished making this, i had this thought of smearing the idlis with molaga podi. Then came the idea of cutting them into mini bite sized pieces and make it a more attractive starter. Ajwain paratha | Easy paratha recipes

Ajwain paratha, is made with whole wheat flour and ajwain | omam in Tamil |carom seeds. It is a very simple North Indian paratha, can be made for breakfast or lunch or even dinner too. A perfect one to pack for Lunch box too. Last week, while i was busy with Diwali preparations, saw this ajwain paratha in Veggie wok's Instagram story. It was super tempting and i decided to make this soon. Finally today before making this ajwain paratha, cleared my silly doubts with anamika and made the parathas. Me being a huge fan of parathas, loved it and the ajwain flavor complimented the paratha well. Check out my


Ajwain paratha

  Preparation Time : 10 mins | Cooking Time : 20 Mins |Makes: 5

     Whole wheat flour| atta  1 cup
     Salt as needed
     Oil  few drops
     Ajwain  1 and 1/2 tsp
     Red chili powder  1 and 1/2 tsp
     Ghee or Butter   as needed (to make parathas)
Method:
  • In a wide bowl add the wheat flour and little salt. 
  • Add water little by little and make a soft dough.
  • Divide this into equal big lemon sized balls.
  • In a bowl mix the red chili powder with 2 pinches of salt and mix well.
  • Take one dough ball and dust it with dry flour.
  • Spread this into a roti.
  • Add few drops of ghee on this and spread it.
  • Sprinkle red chili powder and spread it on the rolled roti.
  • Sprinkle some ajwain on this and press it gently with your fingers.
  • Fold this into a semi cirlce and then bring both the edges together.
  • If you want to make it as a square paratha follow my masala square paratha recipe.
  • Dust this with atta and roll it into a triangle roti. 
  • Heat a pan and cook the rotis on both sides and drizzle with ghee or a dollop of butter.
  • Cook till you see nice golden brown spots on both sides.
  • Repeat this for the rest of the dough.
  • Serve with plain yogurt or some pickle.
  • You can have this ajwain paratha with tea /coffee too.

  1. You can make this in any preferable shape of your choice.
  2. To make it very simple, knead ajwain and red chili powder to the dough and make the parathas.
  3. The parathas tasted very nice with plain yogurt.

Mor aval is a very simple and easy tiffin | breakfast| snack recipe using aval| poha| rice flakes. This quick recipe i learnt from my cousin who was with us here for the past 4 days on a holiday. She is a wonderful cook and during our casual chat session, she mentioned about this mor aval recipe. She told that her mil makes it very well and she learnt it from her. I noted down the recipe from her and tried this yesterday. It tasted very well and Suresh loved it a lot. If you have slightly sour yogurt, then try out this mor aval recipe using poha | aval.

Masala paratha recipe | Square paratha

Parathas| Indian flat bread, those who know me personally, will vouch my love for both cooking and eating parathas. . As such i am a great fan of one pot meal and to me Paratha is a also an one pot meal😋. When i posted the triangle paratha, i wanted to try out the square paratha. But somehow missed it. Last week when i was scrolling in Instagram, i happened to see this masala square paratha in a restaurant page. This paratha can be packed for lunch box too as it stays soft even after few hours. So finally i tried this today for my breakfast. You can have this for lunch or dinner too.  I have posted this Square paratha recipe with a quick video, so that it will be easy for beginners to get the shape.

Masala Dosa recipe ,Masal dosai

Masala dosa with video

Masala dosa,or Masal dosai is a popular south Indian breakfast recipe. I wanted to post masala dosa recipe when i posted Hotel Saravana bhavan style mini tiffin. But somehow missed it out. I got a tip of cooking onions in the pressure cooker along with the potatoes, from my suresh's chitti. Though i make masala dosa rarely at home but whenever i make i cook the onions along with potato. You can make it for poori masala too.
During my childhood days my grandmother makes yummy masala dosa. Once we had our friends who has come for night study to our house, when they are about to leave by morning 6.30, she was ready with dosa batter and potato masala. She didn't let anyone to go without tasting the masala dosa. Happily they all had the yummy dosa early in the morning.

Vegetarian Fried bee hoon recipe | Rice noodles recipe

Vegetarian fried bee hoon | Mee hoon is a Popular Singapore | Malaysian local food made with rice noodles. It is similar to the veg hakka noodles we make using the Indo chinese method. This fried mee hoon | bee hoon | fried noodles is widely available in all food courts in Singapore and Malaysia. They mostly serve the non veg version of the bee hoon, but many stalls have the vegetarian fried bee hoon too. Though i am not a big fan of this bee hoon, Varsha and Suresh who always love to explore new cuisine likes this bee hoon a lot. I learnt this recipe from my Malaysian Tamil friend Rubini, who patiently explained me the recipe, even in her busy schedule with the little kid. Thank you so much for the recipe. Veg uttapam | uttapam is a South Indian breakfast recipe, generally made with left over idli|dosa batter. I have posted small uttapam recipe in jeyashri's kitchen inspired by Murugan Idli kadai. I actually wanted to try 5 taste uttapam but since i have already posted mini masala uttapam recipe, i thought i will make the normal veg uthapam. The uttapam was quite filling and loaded with veggies. You can serve this without any chutney or sambar too.

Veg lasagna recipe | Easy Lasagna recipe

Lasagna is similar to pizza but made with lasagna sheets. We first tasted veg lasagna during our Europe trip in France border. Then i tried it at home during few months back and posted in Jeyashri's kitchen Instagram too. After that Varsha's friends who are all in Instagram asked me to make lasagna for them. So after their board exams got over i called all of them home and made lasagna for them. So finally i decided to make lasagna for Jeyashri's kitchen and posted the step wise recipe here. Make this at home and let me know how it turned out. I wanted to cottage cheese lasagna too, will post  the Indian version of Paneer lasagna soon.

Ulundu Sevai recipe | Urad dal idiyappam

Ulundu sevai|urad dal idiyappam | paruppu sevai is a traditional sevai recipe made in our home using home made fresh sevai. We used to help out amma and patti, in making the sevai using sevai nazhi. I tried ulundu sevai with Instant sevai. Amma always used to make sevai especially when w have guests. She makes different varieties of sevai and this ulundu sevai is the classic among all. But during my childhood days i am not a big fan of this as i prefer coconut sevai very much. Yesterday when i had guests for dinner i made this ulundu sevai. Though i made this with Instant sevai, the tasted closely matched with of amma's. The urad dal mixture recipe is the same one we use for ulundu kozhukattai with video. Let's learn how to make ulundu sevai with step by step pictures.

Spicy Masala poori recipe | Travel friendly recipes

Spicy masala poori, i happened to taste this for the first time in our Europe trip last year. We landed in London and from there took a package holiday trip to Europe. The travel of 9 days was with a group of 40 people. Among that there is one big Gujarati family from US and also people from other parts of the world were there. The entire trip was awesome filled with joy,music and of course food. The gujarati family packed a whole lot of chivda and masala pooris and distributed to all of us during the entire trip. I have already posted the chivda recipe and since it is holiday season, i thought i will post the masala poori recipe too. It is a deep fried poori, which stays good for 2-3 days, but in the excellent weather of Europe it stayed good for 10 days. If you are making long train journeys, as khakras and dosas  this is also a perfect one.

Grilled Mediterranean Vegetable Sandwich

Grilled Mediterranean Vegetable sandwich, is made with roasting veggies on tawa and stuffed inside the sandwich. Usually i make corn spinach sandwich and open bread masala sandwich for kids. I have watched a recipe of Mediterranean sandwich recipe in Venkatesh bhat show last year. When i recently, saw a pack of Panini bread in Fairprice shop, it reminded me of this sandwich recipe and tried at home. Since the video visuals are clear in my mind, i just went ahead and tried it for kids lunch box last week. To my surprise it was a huge hit, especially Varun who is bit fussy about trying new foods, loved it a lot. I had a pack of whole meal bread at home so wanted the sandwich using with that. Spinach tomato pasta | Easy pasta recipes

Spinach-tomato pasta
Creamy spinach tomato pasta made with spaghetti pasta. Two days back, when I and Varsha were browsing in Pinterest, found many interesting vegetarian pasta recipes. We both decided to go for the spinach tomato pasta after browsing lot of recipes. After seeing many recipes in that category, we both come up with our own recipe, which sounded so easy for me to try it out too. I have a box of cute baby spinach recipes, which i got from Fairprice. I made this for my lunch today and reserved a portion for Varun too and he had the pasta after coming back from school. Varsha couldn't taste this as she went to her friend's house today. But i promised her that i will make this again for her tomorrow.  Make this simple delicious creamy spinach pasta and enjoy your meal.

Savory Dumplings with Orange sauce | Paneer dumplings

Dumplings are steamed food generally popular in South East Asia. It is more like the momo but the outer cover is made with rice flour for dumplings. Dumplings can steamed snack and generally we Indians make it as modak or kozhukattai during ganesha chaturthi festival. I wanted to try some savory dumplings and to make it kids friendly and made that with paneer and potato. I got this idea of shaping from a youtube video and you can make it as a modak too. The orange sauce i learnt from Masterchef Nikita gandhi 's cookery workshop which i attended in November 2016. She is a super talented young girl and all the recipes she taught were interesting and tasted yum. She made this citrus sauce to pair with momos. Try this easy and healthy dumplings at home and let me know how your kids liked it.
