Kuzhi paniyaram is an authentic chettinad breakfast recipe and i have posted the recipe of the same in Jeyashri's kitchen too. Generally in many houses it is made using left over idli | dosa batter too. Here at home, my kids love Ragi dosa a lot. I wanted to try vegetable kuzhi paniyaram using ragi dosa batter and it turned out very well. The addition of sweet corn were so attractive for my kids and it was a super hit at my house. Try out this easy breakfast recipe at home and i am sure everyone will love this one.

Ragi Vegetable Kuzhi paniyaram using left over ragi dosa batter, serves a perfect snack or breakfast..
Mixed veggies* 1 cup
Onion 1
Red chili powder 1/2 tsp
Salt for the veggies
Oil 2 tsp + few more for cooking the paniyaram
Mustard seeds 1/4 tsp
Urad dal 1/2 tsp
Curry leaves few
* I used carrots, sweet corn, green peas and capsicum
Method:
- Chop the onions finely and the veggies into small pieces.
- Blanch the corn and green peas, i used frozen ones.
- In a pan add 2 tsp of oil and add the mustard seeds and urad dal.
- Once the dal turns golden brown, add the chopped onions.
- Cook till the onions turns translucent.
- Add the veggies now and saute for a minute.
- Add the red chili powder and salt. Add salt only for the veggies mixture as salt is already added in the batter.
- Cook for 2-3 minutes.
- Do not cook the veggies too soft, let it be crunchy.
- Allow the veggie mixture to get slightly warm.
- Add this to the ragi dosa batter.
- Mix well.
- The Veg kuzhi paniyaram batter is ready to make now.
- Place a paniyaram pan on the gas stove.
- Drizzle little oil into it and spoon in the batter into this.
- Once all the holes are filled add little oil on the top of all the paniyarams.
- Cover and cook for 2-3 mins.
- Once it is cooked on one side, flip it using a sharp knife or back of the spoon.
- Cook for 2 minutes in a medium flame.
- Take out from the pan.
- Repeat this for the rest of the paniyarams. It came about 17 paniyarams.
Notes:
- Instead of red chili powder, you can grind green chili and ginger and add it to the batter.
- Veggies can be added as per your taste and preferences.
- You can grate the carrot too for the veg kuzhi paniyarams.
Method with step by step pictures:
