KAMBU KOOZH | BAJRA MILLET PORRIDGE | INSTANT PEARL MILLET PORRIDGE

Kambu koozh is a perfect summer cooler. During our childhood days though amma makes it sometimes but i never liked it that time. But when i did this kambu koozh for the mangayar malar supplement book in Dec 2014, this millet recipe was one among them. I somehow liked it very much and it's an instant version of this pearl millet porridge. I used the bajra flour instead of whole bajra. Try this for your breakfast and you will be refreshed for the whole day. I made this not too thick but if you want you can make it as  thick koozh .

KUTHIRAIVALI MURUNGA KEERAI ADAI | MILLET RECIPES


Kuthiraivali | Barnyard millet adai i tried for the first time few months back when i was making supplement book for Mangayar malar themed "Millet recipes". Murungakeerai | Drumstick leaves we generally make poriyal. My mom adds this to adai and we all are a great fan of murunga keerai adai. We have a murunga maram at our backyard from where we get fresh leaves and fresh drumstick (organic too) whenever we want. Even in the entire street they take drumstick leaves from our house. And during the drumstick season, amma will give drumsticks to all the friends as we get most and more of drumstick from the tree. Whenever i cook murngakeerai i have memories of my childhood related to it. I will be the person who will go to the terrace and pluck the fresh leaves from the tree for the adai or poriyal.
  Kuthiraivali adai with murunga keerai was a  wonderful combo and i had this for breakfast today with a glass of neer mor too. You can have adai with aviyal too.

Kuthiraivali adai 

  Preparation Time : 15 + 2 hours soaking | Cooking Time : 5 mins per adai  |Makes: 5-6

     Kuthiraivali arisi | Barnyard millet   1/2 cup
     Channa dal       1/4 cup
     Toor dal      1/4  cup
     Poha | Aval    1 tblsp
     Red chili    2-3 
    Asafoetida   a pinch
    Shallots | small onion    7-8 (sliced)
    Murunga keerai |drumstick leaves   one hand ful
    Salt     as needed

Method:
  • Soak the kuthiraivali millet and poha together . In another bowl soak the channa dal and toor together. Soak this for 2 hours.
  • Meanwhile slice the onions and keep it for adai just before grinding.
  • Grind the rice and poha together into a fine paste.

  • Grind the toor dal, channa dal and red chili together into a coarse paste. Add asafoetida and salt.

  • Mix both the ground mixture together. Add the shallots and drumstick leaves. No need to cut the leaves. Add as it is.  Mix well . No need to ferment. Batter is ready for adai.

  • Heat a pan and when it is hot pour in a ladle full of batter and spread this into thick adais. Make a hole in the center and drizzle oil around the adai. 
  • Cook on both sides till it becomes golden brown.
  • Cook in a medium flame only.

  • Adai is ready to serve.
  • You can have this as it is without any chutney or molaga podi. If needed you can have with jaggery | vellam.

Notes:

  1. Adding poha will give softness to the adai.
  2. You can add 1 tblsp of urad dal to the dal mixture to give more softness to the adai.
  3. Big onions can also be added to this , but small onions enhances the taste.

RAGI CHOCOLATE MILKSHAKE | MALT | MILLET RECIPES


Ragi | Finger millet flour, i made puttu with that for this morning breakfast. First i thought, i will click pictures and post today but morning it was hectic i couldn't click. While i was serving ragi puttu for my hubby, Varsha asked me what is this. I said it is Ragi puttu and explained her the health benefits of ragi flour as a typical mom, and told her to try a spoon of it. I remember my mom making this keepai puttu during our childhood days and we used to look forward for this one. When she had a bite she told it was tasting as chocolate. Even when i first tasted ragi cookies i felt the same too. As a typical teenager and a perfect foodie, Varsha told me why don't you try Ragi chocolate milkshake with this. Amazed with her idea when i was browsing in google, i saw in Priya have  posted this ragi chocolate milkshake | Malt recipe. So i tried today ragi malt with chocolate chips. Let the kids enjoy this healthy and delicious milkshake in this summer.

RAGI ALOO METHI PARATHA | MILLET RECIPES

Ragi also called as Kezhvaragu in tamil | Finger millet in English , is an easily available millet everywhere. Generally my mom makes puttu with ragi and also dosai and adai too. Though i have tried these all, wanted to try something new with ragi flour. This ragi aloo methi paratha i have tried for the mangayar malar book . Ragi is an excellent source of calcium and very good diabetics. It is a very good source of iron too. You can make this as a stuffed aloo paratha too.

KHATTA DHOKLA RECIPE | MILLET DHOKLA RECIPE

Khatta Dhokla is a healthy gujarati snack made with rice and urad dal. I wanted to try this for a long time . Since i have tried idli withVaragu , i thought let me replace in this dhokla recipe too. Varagu arisi is  also called as Kodra in Hindi and Harka in kannada and Koovaragu in malayalam. The dhoklas turned out very soft and spongy. I just tried this recipe in small portion and also  i have mentioned in the ingredients list too. Try out this Millet Khatta dhokla and enjoy your evening snacks.

MILLET COOKIES RECIPES | EGGLESS THINAI COOKIES

During my trip to India in December, i got millet flour packets from a near by store located nearby my in laws place. I was totally clueless what i am going to do with those flour packets and kept it in the freezer. Today when i was planning to make a Millet post, though i have many other recipe ideas using millets, baking with millet flour keep on lingering into my mind. So for the first time baked a cookies without following any recipe just put the ingredients according to my own imagination . It turned out truly perfect. I used Organic Naatu sakkarai in this recipe, but you can replace with jaggery or palm sugar too. Check out my other millet recipes.

METHI MUTHIA RECIPE| MILLET METHI MUTHIA |MILLET RECIPES


Muthia is a healthy gujarati snack, generally made with palak, methi, cabbage or lauki too. A diabetic friendly recipe and also no compromise in taste too. Generally to make this we use besan | kadalaimaavu and wheat flour. I used jowar flour and bajra flour to make this methi muthias. It turned so well and you can also replace the flours too if you want. Even you can use any millet flours to make this muthia. A very healthy and yummy snack which can be made easily. Millets recipes whenever i think about that, ideas keep flooding my mind. I am posting Millet recipes every Monday and today i have prepared an interesting recipe with Little Millet | Samai. I wanted to post pidi kozhukattai recipe using millet, but suddenly changed my mind and made these thavala adai. Generally my grandma makes this with raw rice. She drizzles loads of oil and make this so crispy. She has a lot of patience to make it for a big family too. I just made in small quantity just for this post and of course, we all had today during tea time. Try this healthy snack with any variety of millet like varagu, kuthiraivali and thinai  too.

MILLET HAKKA NOODLES | MILLET SEWAI RECIPES

Millet recipes are gaining so much popularity now a days. Recently i have got the Millet sewai packets from Bhairavi Naturals, supplier of Organic Millets in Singapore.  They gave me a packet of Varagu Sevai and Kuthiraivali sevai packet to try it out. They deliver Organic millets at reasonable price at your doorsteps.I have given a recipe for Aval Kitchen long back with the theme of Popular Singapore recipes. In that i have given the Rice noodles recipe too. When i got the millet sevai, i thought i will make this Varagu noodles in Hakka noodles style. It was a super hit and got ready so quickly. MILLET SAKKARAI PONGAL RECIPE | PONGAL FESTIVAL 2015 RECIPES

Pongal festival 2015 is celebrated tomorrow and this year i wanted to post a sakkarai pongal with millet. I have tried sakkarai pongal with Thinai|foxtail millet for the supplement book i made for Mangayar Malar. So this time i wanted to try with Varagu | Koda millet . It is called Kodra in Hindi and Harka in kannada and Koovaragu in Malayalam . Check out the Pongal festival 2015 recipes. I made the normal sakkarai pongal but just replaced the raw rice with varagu arisi. As always the sakkarai pongal tasted divine and me generally don't prefer jaggery based sweets much, had an extra spoon today. Sometimes i pat myself on my back  if any recipes turn out very well. Millet sakkarai pongal tasted the same and no one could make out that you have made this with Millets.

Millet Sakkarai pongal

  Preparation Time : 5 mins | Cooking Time : 25 Mins |Serves: 3-4

     Varagu arisi | Kodo millet   1/2 cup
     Moong dal    2 tbslp
     Jaggery | vellam      3/4 cup
     Ghee      2-3 tsp
     Cardamom powder    a pinch
     Cashew nuts    few
     Raisins      few (optional)
     Edible camphor | Pacha karpooram    a pinch   (optional)

Method:
  • Wash varagu arisi and moong dal  and pressure cook this by adding 1 and half cup of water. 
  • You can even soak this for 15 minutes and cook in the pressure cooker. Once done mash this nicely with the back of a ladle.

  • Add jaggery in a pan and add little water to this. Allow the vellam to boil and filter the impurities.
  • Boil this jaggery water for 5 minutes in a medium low flame. 
  • Add the cooked varagu rice mixture to the jaggery.

  • Mix this well without any lumps.
  • Add cardamom powder, edible camphor(if adding) and ghee roasted cashew nuts.

  • Add 1 tsp of ghee in the last and switch off the flame.
  • Millet pongal is ready for neivedhyam.

Notes:

  1. You can add 1/4 cup of milk to the pongal to make it more creamy. If adding milk add while mashing the rice.
  2. Do not add milk once the rice is added to the jaggery. The milk will get curdled.
  3. Samai, kuthiraivali and thinai will work out well for sakkarai pongal. Follow the same method for other millets too.

  Tomato dosai i wanted to try for a long time. During my vacation to Chennai, my sister made this for me but with normal idli rice. I thought i will replace rice with millet and tried tomato dosa with Kuthravali millet also called as Barnyard millet in English|Odalu in kannada|Jhangora in hindi, is a healthy variety of millet, helps to reduce cholesterol and also good for diabetics too. Kuthiraivali |barnyard millet |Odalu in kannada|Jhangora in hindi, is a healthy millet and i have experimented few interesting recipes with this millet and will be posting the millet recipes every monday. I have made a supplement book for Managayr Malar a popular Tamil magazine themed Millet recipes. This book will be published today DEC15-31 edition. I have tried this Kuthiraivali tomato rice and it was very nice and we couldn't feel any odd taste too. Perfect to pack for lunch box too. I used the similar recipe as of my thakkali sadam.

 Varagu | Kodo Millet is an easily available millet . It is called as Kodra in Hindi and Harka in kannada and Koovaragu in Malayalam. I have just replaced Varagu arisi with normal idli rice. Check out my Idli recipe  for detailed recipe and tips on making idli. The idli turned out super soft and no one could make out that it is millet idli. Kuthiraivali | kudravali millet , called as Barnyard millet in English| Odalu in kannada|Jhangora in hindi, is a fibre rich millet. I have tried few recipes with this barnyard millet and they all turned out very well. To make it interesting for kids i made tikkis|vegetable cutlets with millets and it was very nice. If you do not get this millet at your place, try with samai, thinai or varagu too. Samba rava too comes out perfectly. A healthy and perfect snack for kids and also for diabetic patients too. Millet recipes are getting popular now a days and i am posting recipes with various types of millets| sirudhaniyam here every Monday. I have explored many recipes using millets. Foxtail millet salad is one among them . Actually i wanted to post  a chaat recipe with millet but since i made salad today i am posting this healthy foxtail millet salad. Stay tuned for more interesting recipes with millets every week. Foxtail millet is  called as Thinai arisi in tamil | ( Kangni in Hindi, Kora in telugu | Navanne in Kannada |Thina in malayalam ). This salad will be very filling and ideally can consume this for breakfast or lunch. Perfect recipe for weight watchers. I just added the ingredients available with me, so feel free to add up more fruits or vegetables of your choice. Instead of thinai you can make this with quinoa or couscous too.

BAJRA ROTI RECIPE| BAJRA KI ROTI | MILLET RECIPES

Bajra also called as Pearl millet in English/ Kambu in Tamil, even available in USA in the name cattail millet. Millet recipes are getting very popular now a days. I have explored few recipes with millets and will be sharing here every week. Bajra, is a very old variety of millet used in Tamilnadu and Kambu khool is a popular one which is made with bajra. Rotis are made with bajra in the state of Gujarat, Rajasthan. I remember eating bajra roti, jowar roti when we visited Jaipur few years ago. I have tried both jowar roti and bajra roti at home. Will post jowar also soon.
   This has so many health benefits.As bajra is rich in fibre, it helps in weight loss. Best suitable for Diabetic people. I personally felt the rotis are too bland in taste, but when i tried for the second time i had with proper side dish. It tasted very nice. Never serve this with simple raita or salads. Since it is a gluten free flour, i can't make it without the addition of wheat flour. So over to the recipe of bajra ki roti.

Thinai arisi | Foxtail millet ( Kangni in Hindi, Kora in telugu | Navanne in Kannada |Thina in malayalam ) is an easily available millet variety. My mom made kheer during our trip to India in june. I thought i will give it a try so that it will be helpful for those who make kheer | sweet everyday for Navratri . THINAI PESARATTU RECIPE | FOXTAIL MILLET PESARATTU | EASY BREAKFAST RECIPES

Thinnai arisi -pesarattu Thinai|tenai was first introduced to me by my mom during our India trip in June. She made delicious thinai payasam for us and she told me to try it out too. My sister also gifted me with a cookbook containing millet recipes. Actually 2 years back my younger co sister gave me some organic millet and asked to try out some dishes with that. But i didn't even touch that . Right from the day she got married, she has been telling all of us to include millet into our food by replacing rice. But after reading so many healthy benefits of the variety of millet, i started loving the millet and slowly introducing in our diet. My mom sent some Thinai arisi ( also called as Kangni in Hindi, Korra in Telugu, Navanne in Kannada and Thina in malayalam)through my friend in very small quantities.  So far i have tried out few recipes using different types of millet.
  So posting my first millet recipe with Thinai - Foxtail millet. Will posting a recipe with different types of millet once a week.
  Thinai or Foxtail millet has lot of health benefits. It has a very good source of protein and iron. This millet can be easily digested and  controls blood sugar too. I came to know about these information in that book which my sister gave to me.
  Here in Singapore we get Millets in Abdul Rahim store in Little India and Thinai is found in Mustafa center too.
