Jackfruit seed Cutlet recipe| Palakottai cutlet

Jackfruit seed| Kathal seeds| Chakkakuru| Palakottai, is the seed inside the jackfruit, which many people discard after eating jackfruit. Jackfruit seed cutlet recipe with step by step pictures, made using left over palakottai. This recipe also includes how the instruction of how to remove the skin of jackfruit seed. During our childhood days, we used to get boiled jackfruit seeds in a road side shop nearby our school. I don't know how they make, but they taste so yum. Amma always scold us not to eat from there and say it is just boiled one which i can make it at home. But it will never taste the same. Sometimes amma puts the palakottai in Sambar or in kootu too. But i hate that in all other forms, the one they sell outside the school tops among all. Recently i came across this cutlet using jack fruit seeds. Here in Singapore, we get bunch of jackfruit seeds in Indian shops. I have seen this many times, but never bought them. Few days back i picked it up from Sri Murugan trading, and tried out this Jackfruit cutlet. It was a super duper hit at home and no one can make out the taste of the seeds.

Caramel Popcorn recipe

Caramel popcorn, home made caramel popcorn recipe, with step by step pictures, using dry corn kernels and sugar. Popcorn is the one we always enjoy during movies. When we were kids we used to get popcorns outside theaters in small packets and mostly i have tasted the salted version of popcorn. Later when the multiplex theaters started we used to get a variety of popcorn. Though i don't prefer sweet version of popcorn my kids love the caramel popcorn. I have made caramel popcorn for them at home twice but never clicked the pictures to post the recipe. Yesterday while organising the kitchen shelfs found some little corn kernels and thought i will make the caramel popcorn for kids snack box. They loved it very much and packed few extra for their friends too. I have seen many adding roasted peanuts to this caramel popcorn, being a peanut lover i am too tempted to do this but i thought i will post a separate caramel peanut urundai or chikki recipe.

Congress Kadalekai recipe, Masala peanuts

Congress Kadalekai, masala peanuts, recipe with video and step wise pictures. Congress Kadalekai is  a popular spicy tea time snack of Karnataka made using peanuts. I don't know why they call it as Congress Kadalekai but heard about that a lot. Recently when one of our friend visited Bangalore for vacation, i told him to get few bangalore famous snacks. One among them was Congress Kadalekai. I tasted them for the first time. He got that from the famous Variar bakery Bangalore. I am wanted to try that but i am always scared of the mess the raw peanuts creates after roasting and rubbing the skin off.  So I kept on postponing to make this Congress Kadalekai.
Recently i saw Roasted unsalted peanuts in Sri Murugan stores, Singapore, while i visited to buy my Grocery. I have many time seen un roasted big size peanuts but this one was in normal size and i picked up the 500 gm packet immediately and put into my Grocery bag. For my friends in Singapore, you can find this roasted unsalted peanuts in Sri Murugan stores. It is packed quite well. Also you can make Verkadalai urundai using this same roasted peanuts too. Sri Murugan stores delivers island wide and they have a wide variety of Indian groceries and fresh vegetables. You can use Sri Murugan stores mobile app to place your order.

Spicy Bhakri recipe, Masala mamas cook book review

Bhakri is a popular Indian flat bread made using Jowar flour. This is generally made like a soft roti or like a khakra type crispy snack too. This recipe i got from the Masala Mamas cook book. I received a copy of the cookbook 2 months back for review. Generally i don't write review for cookbooks, but the cause for the cookbook inspired me a lot. I immediately agreed for that and the book reached from UK to my mail box. The cover page of the book itself gives a very positive feel, with the beautiful women of Kalwa slum in Mumbai with all good smiles. This book is edited by Dr. Elana Sztokman who is an award winning author, anthropologist and an educator too. This book carries the traditional Vegetarian recipe of Maharastrian cuisine and explained very well about the spices and other condiments used in Indian cooking. These beautiful ladies of Kalwa slum in Thane Mumbai came together for a cause and the proceeds from this book will go for a social enterprise promoting nutrition, literacy, health, women empowerment and community development of that slum. This is the only reason for which, i agreed the book review. The book not only has recipes but also covers the stories of the ladies in the Kalwa slum and also a Visual guidance of the spices, lentils and leaves used in Indian cuisine, Kitchen essentials and many more. So those who do not anything about Mahatrastian cuisine can able to connect and cook a delicious meal from this book.
The Masala mamas cook book covers a wide range of recipes under many categories. They have Drinks, Breads, Breakfast foods, dips, Snacks, Mains, Sweets and also fasting foods too.
I have chosen the Tikhi Bhakri recipe from the cookbook and tired yesterday. It turned out well and we all liked it.
It is available from Amazon in many different countries and can be shipped anywhere. Prices for paperback are US$28.99, UK25.99, and 1800 INR. You can also order directly from the women in Kalwa at www.masalamamas.org
The book is super colorful and the expressions of the beautiful women who come forward to cook for this common cause, are showcased so well in the pictures. Thank you team for this book and i will try some more of my favorite recipes soon.  Scroll down to see the picture of the cover page of the cook book.

Tea kadai masal vadai, Masal vadai recipe

Tea kadai masala vadai, crispy vadai made using channa dal, a popular snack of South India, recipe with video. We can call this as a typical Tamilnadu style street food. I have posted many varieties of channa dal vadai but this tea kadai vadai is a popular one. What's special in this, it is made using Channa dal. Actually they use pattani paruppu, a slightly bigger version of channa dal is used to make this Masal vadai. But i don't get that here in Singapore so made with channa dal. Masal vadai, carrys a lot childhood memories. My mom used to work in a village hospital and rarely she takes us there during our summer holidays. As it is a remote place we don't get anything but the hospital staff, who lives in the nearby residence, used to make vadai and sells this there. He brings the freshly made vadai from his home,it in a steel thookuvali and sells to everyone there. So whenever we go there, he brings for us in a separate box and we used to eat tthose vadais, as if we haven't seen vadais in our life. His name is Mustafa and we call it Mustafa vadai.
Later when i grew up, when i was doing my Masters, we had a tea kadai nearby our college. Our class boys used to buy vadai from there during the lunch time. They buy for us too but whenever we ask them to take us there, they will refuse as it will be too crowded with many boys. Finally one day when we had some extra class on a Saturday all the girls pestered our class boys and they took us to the tea kadai and we happily enjoyed the tea and masal vadai. I think i spoke a lot, this masal vadai kindled many memories.
When a reader request came for this recipe of Tea kadai masal vadai, i immediately asked my nephew, who is  a foodie to send me some pictures of tea kadai vadai. He sent to me the next day which he bought from the nearest tea stall. I asked him few doubts on the taste and with his inputs made this vadai. It tasted quite similar to the one which i have tasted during my childhood days, from mustafa masal vadai.
Also today being Varsha's birthday, this is a very apt post, as she is a great fan of Masal vadai.

Mango dhokla recipe, mango recipes

Mango dhokla recipe, gujarati khaman dhokla made using fresh mango puree. These mango dhoklas tasted so yummy. When i saw mango dhokla in Instagram, i was too fascinated by it as i am a big fan of both mango and dhokla.  At the same time i was bit skeptical as how it would taste. So it tried in very minimum quantity as i don't want to waste my precious organic Mangoes. But it turned out too good and i just kept 2 pieces for the family to try it out. I want to make this again for us during this weekend. I couldn't stay away from gobbling it. It didn't give any odd sweet taste. These dhoklas were too mango flavourful and at the same time gave the taste of dhoklas too. I adapted the recipe of Gujarati Khaman dhokla from Tarla dalal's space and just replaced water with mango puree. I can say this Mango Dhokla is a must try recipe for this mango season.

Dahi ke kabab recipe

Dahi ke kabab| Dahi ke kebab is an easy party starter snack recipe. I have first tried this for my cookery demo with Alvas yogurt Singapore, last year. This dahi kabab was a super hit in that cookery demo. Yesterday i had a big batch of home made yogurt,so wanted to try this try out this kabab recipe again to post in Jeyashri's kitchen. I took the video of dahi kabab recipe and shared my lunch platter also in Jeyashri's kitchen Instagram. The first time i have seen this recipe in Venkatesh bhat's show. I remember him using chutney dal powder(pottukadalai)as a binding agent for making this kabab. I have once tried with that but some how i felt gram flour | kadalai maavu suits my taste. You can use millet flour or sathu maavu too.
The kabab was super crunchy outside and melting soft inside, the taste of paneer and the crunchiness of the nuts and the flavour of chaat masala complimented each other. Try this at home and let me know how it turned out.
