During my trip to India in December, i got millet flour packets from a near by store located nearby my in laws place. I was totally clueless what i am going to do with those flour packets and kept it in the freezer. Today when i was planning to make a Millet post, though i have many other recipe ideas using millets, baking with millet flour keep on lingering into my mind. So for the first time baked a cookies without following any recipe just put the ingredients according to my own imagination . It turned out truly perfect. I used Organic Naatu sakkarai in this recipe, but you can replace with jaggery or palm sugar too. Check out my other millet recipes.

PUPPY FACE COOKIES RECIPE | EGGLESS COOKIES
Puppy face is a normal plain eggless cookies bu the shape only look like a puppy. It is easy to decorate the cookies with easily available ingredients.Surprise your kids with this cute cookies. I made for the Christmas party at kids school. All the kids were super excited and happily had this cookies. I got this idea through a reader who sent me this cute pictures for her daughter and asked me to give it a try. On the moment i saw these i decided to make it on the next day. I took the plain cookies recipes from my Pinwheel cookies recipe and few you tube links showed me how to make the puppy face. Try this out for this Christmas and enjoy the cookies.

I am so delighted to present this Eggless Chocolate Cake on this special occasion . Jeyashri’s Kitchen is turning 5 today. Five years went so fast and i still recall the first day i posted the recipe of Paal payasam ,the same day. In this journey of blogging for 5 years , i have gained so many friends and very good readership too.This journey was so successful, with the fullest support from my family. I used my Eggless Vanilla Sponge cake recipe for this recipe by just replacing a portion of flour with cocoa powder. I have no clue about the icing . My reader who started a blog also now, gave me all ideas about icing. Thank you so much Sujatha ram of Indian veg kitchen for clarifying my silly doubts and guiding me even in buying the ingredients for icing too. I am trying this same cake for the second time. I made this 2 months back for our wedding anniversary.

M AND M COOKIE RECIPE | EGGLESS COOKIES RECIPES
M and M cookies is in my to do list for a very long time. I used the gems, you can replace it with chocolate chips too. My kids loved the cookie very much, even the little one who is not so fond of home made cake or cookies, loved it very much. Try out this easy eggless cookies . I used butter in this cookie and you can replace with oil too. Both will turn out good.

PINWHEEL COOKIES RECIPE |EGGLESS COOKIES RECIPES
Pinwheel cookies i am attempting for the first time but i am so happy with the results. I was in a dilemma whether to make short bread cookies or chocolate chip cookies, but finally decided to make pinwheel cookies. I saw few videos in you tube and had an idea as how to make pinwheel cookies. I made an basic eggless vanilla cookie dough and added some melted chocolate chip to make a chocolate dough. I am so happy with the results . Do give it a try at home and for sure your kids will love this.

APPLE PIE RECIPE | MINI APPLE PIE RECIPE
Apple pie ,i have tasted in McDonalds long back , but never thought i will make it at home one day. Last week i have seen making of an mini apple pie in a cookery show . I actually wanted to try a vegetable pie , but my daughter Varsha who watched the TV show with me , was so particular to make the apple pie. So finally ii tried the mini apple pie today and it turned out very well. She totally enjoyed and the house is filled with fantastic aroma.

Pizza , it is one of the recipe in my to do list for a long time. I tried Tortilla pizza , but wanted to make this pizza with home made pizza dough . Finally i made it last week for my kids and surprised them after the came back from school. I made it into mini pizza so that it will be easy for me to share the pizza among my 2 kids! To bake a Chocolate cake in microwave , is my long time due. I don't have a microwave at home and so i was postponing to make this cake. As valentines day is nearing, it thought it is the right time to post this eggless chocolate mug cake in microwave. I baked this cake in my friend's place and it took exactly 2 minutes for me to bake this cake. NAN KHATAI RECIPE | DIWALI SWEETS RECIPES | EGGLESS INDIAN COOKIES
Nan khatai or butter biscuits whatever the name we use, are totally delicious Indian cookies . I am a huge fan of these nan khatais and the we used to call this as bakery biscuits and after coming into this blogging world i came to know about this name. If you want to try out few baking goodies for this diwali and want to surprise your friends with some interesting diwali sweets then you can try out this Nan khatais. They turned out very well but the pictures didn’t turn out as i expected. even you can involve your kids in making this Diwali sweet and they will feel more happy and a nice experience for them too. PREPARATION TIME : 20 MINUTES. COOKING TIME: 15 MINUTES MAKES:20-22 COOKIES
METHOD:

ALL PURPOSE FLOUR | 1 CUP |
GHEE(MELTED) | 1/2 CUP |
SUGAR | 1/2 CUP |
CARDAMOM | 1/4 TSP |
BAKING SODA | 1/4 TSP |
CASHEW NUTS | 2 TBLSP(FINELY CHOPPED) |
BADAM| PISTA | FOR GARNISHING |
METHOD:
- In a wide bowl add the flour,baking soda and cardamom and mix well. Add the finely chopped cashew nuts to this and mix well.
- In another bowl, powder the sugar and add the ghee to this and beat this well for 5 minutes till it becomes creamy.
- Add this sugar and ghee mixture slowly to the flour and knead it into a smooth dough.
- Leave the dough covered for 30 minutes.
- Make small cookies and garnish with pista or almond in the center.
- I used badam.
- Pre heat the oven at 160 degree C for 5 minutes.
- Arrange the cookies in the baking tray and bake for 10 to 12 minutes.
- These cookies need not turn golden brown. Even if u feel they are soft when hot, after u completely cool them it will become crisp.
- Cool them in a wire rack.
- Be careful not to get it burnt. Even if you see cracks it is fine , no need to worry.

GARLIC BREAD STICKS RECIPE| SOFT GARLIC BREAD STICKS
Garlic bread sticks are the the first choice of starter whenever we go to Domino's Pizza in India. When Divya posted this Garlic bread sticks recipe, i bookmarked it and tried it. the Garlic bread sticks came out too well. I made it long back but some how couldn’t post it. The pictures didn’t come out as i expected as it was raining when i clicked the final pictures. But trust me, this garlic bread sticks were awesome. Check out Divya's blog for the detailed recipe.
METHOD:
This Garlic bread tasted totally awesome and kids enjoyed a lot.
Note:
ALL PURPOSE FLOUR | 1 AND 1/2 CUP (DIVIDED) |
SUGAR | 1/2 TSP |
INSTANT DRY YEAST | 1/2 TSP |
OLIVE OIL | 2TBLSP |
SALT | TO TASTE |
GARLIC PASTE | 1/2 TSP |
OREGANO | 1 TBLSP |
CHILLI FLAKES | 1/4 TSP (OPTIONAL) |
PARMESAN CHEESE | 3 TBLSP |
WATER | 1/2 CUP |
METHOD:
- In a bowl add water, sugar and yeast and mix well. Keep it aside for 10 minutes or till the yeast raises up. the water should be slightly warm. ensure that it is not too warm else it will make the yeast to raise.
- In a wide bowl add 1 cup of flour, and add the olive oil. Mix well and add the raised yeast water to this and make it into a sticky dough.
- Cover it and keep aside for 45 minutes to 1 hour till it raises.
- Now add the garlic paste ( i ground few cloves of garlic with 1/4 tsp of butter) to the raised dough and add the remaining flour (1/2 cup).
- Knead well and keep it covered till the dough raises to double the size.
- Dust the kitchen top with flour and roll this into a big circle.
- Spread cheese over this. I used parmesan cheese, in the original recipe divya used amul grated cheese.
- Fold it into a semi circle. Sprinkle the Oregano on this. If using red chilli flakes sprinkle that too.
- Transfer this to a greased baking tray Cut this into strips and bake this for 10 to 12 minutes or till the bread turns out slight brown on the top.
- Mine took 12 minutes to bake.
This Garlic bread tasted totally awesome and kids enjoyed a lot.
Note:
- You can use garlic powder instead of garlic paste.
- The original recipe used grated amul cheese cube.

EGGLESS CARROT CAKE WITH HOT TOFFEE SAUCE
After a long time, i baked a beautiful cake yesterday. I can say this eggless carrot cake is one of the best cake i have baked. The hot toffee sauce makes the cake more tasty. I wanted to make an carrot cake for a long time and this recipe i adapted from here and the yummy hot toffee sauce i adapted from Nags space. So go ahead and try out this easy eggless carrot cake with hot toffee sauce.
INGREDIENTS: FOR CARROT CAKE
CARROT (GRATED) | 1 CUP |
CONDENSED MILK | 1 TIN (14 OZ) |
ALL PURPOSE FLOUR | 1 AND 1/4 CUP |
BAKING POWDER | 1 TSP |
BAKING SODA | 1/2 TSP |
MELTED BUTTER | 1/2 CUP |
VANILLA ESSENCE | 1 TSP |
FOR HOT TOFFEE SAUCE:
BROWN SUGAR | 1/4 CUP |
BUTTER | 2 TBLSP |
CREAM | 1/2 CUP |
VANILLA ESSENCE | 2 DROPS |
- Sift the all purpose flour, baking soda and baking powder for even mixing.
- Grate the carrots and add the condensed milk, melted butter and carrots in a bowl. Mix it gently and evenly.
- Add vanilla essence to this.
- Now mix this wet ingredients to the flour mix and gently mix it.
- Grease a pan and pour the cake mixture to this. I used a bundt pan to bake this carrot cake.
- Bake this in a preheated oven at 180 degrees. Mine took 40 minutes to bake this beautiful cake.
- Allow this to cool in a wire rack.
- To make the Toffee sauce,combine all the ingredients under the table “Toffee sauce” in a sauce pan.
- Gently mix this let it simmer for 5-7 mins until the mixture thickens. Switch off the flame and keep it aside.
- Just make holes in the cake with toothpicks and pour the toffee sauce over the cake.
- Cake is ready to serve. Do not skip the toffee sauce as it enhanced the taste of the cake very much.

CHOCOLATE BISCOTTI RECIPE |EGGLESS BISCOTTI RECIPE
Biscotti , is more like our Tea rusk , which are baked twice. Very recently i got a mail from a reader who is a teenage girl almost of Varsha’s age , requesting me to post some chocolate recipes as she is a big fan of chocolates. She tried few baking recipes from here too. Recently when we went out, in a cookie shop i saw chocolate biscotti but they were not eggless. So i wanted to try this at home and it turned out perfect and tasted so well. I adapted the recipe from here. so let me share the recipe of chocolate biscotti – without eggs and without butter too.
Actually the original recipe is Double chocolate Biscotti, since i didn’t have choco chips in hand i added almonds instead of chocolate chips

ALL PURPOSE FLOUR | 1 CUP |
COCOA POWDER | 1/4 CUP |
BAKING POWDER | 3/4 TSP |
BAKING SODA | 1/4 TSP |
VANILLA ESSENCE | 1/2 TSP |
SUGAR | 1/4 CUP |
ALMONDS | 1/4 CUP |
OIL | 1/4 CUP |
WATER | 4-5 TBLSP |
METHOD:
- Sift the flour, cocoa powder,baking powder and baking soda.
- In a mixer, pulse the almonds and add to the flour mix. If using chocolate chips instead of almonds add it now.
- In a bowl, add water, vanilla essence, sugar and oil.
- Mix well till the sugar dissolves. If u want u can powder the sugar and add.
- When the sugar gets dissolved, add this mixture to the flour and cocoa powder mix.
- Knead this into a dough.
- Place it on a baking sheet |butter paper. Divide it to2 equal portions as a log.
- Flatten the logs. Bake this in 160 degree preheated oven for 25 minutes.
- After the first bake, the biscotti loaves should be firm and very lightly browned, but not hard.
- Slice it diagonally for long biscotti or across for short one using a sharp knife.
- Arrange them in the cooking tray in a parchment paper and again bake them for 10 minutes at 130 degrees C.
- Turn it aside or you can keep the rack in the centre and turn on the heat to up and down for few minutes.
- the second time bake is to dry out the cookies so bake it in a low temperature to get crispy biscotti.
- this can be stored in a air tight container for few weeks.
- If you feel the dough dry and not coming to make a whole mass while kneading, sprinkle 1-2 tsp of water.
- Never chop the biscotti loaf when it is hot.
- Use sharp knife to cut the loaf.
- You can add any nuts of your choice and add orange zest too and replace water with orange juice also.
- While cutting the biscotti loaf it may crumble too. do it slowly and carefully.
