Aamras recipe | Mango recipes

Aamras is a popular Maharastrian dish made with mangoes and other flavourful spices like elachi and saffron. I have tasted this many times in my friend's house as a dessert, but this is the first time i am making at home. Last week when i visited a friend she made dal baati and aamras for me. I thoroughly enjoyed the food and noted down the recipe of both. Will soon post the recipe of dal baati. Today i made poori for breakfast and made this aamras too. Poori and aamras  turned out to be good combo. Check out my other mango recipes.

Mambazha moru kootan

Mambazha pulissery | mambazha moru kootan is a Palakad special dish, made with ripe mangoes. Though i have heard about this recipe through my friend's mil, but never was bit skeptical to try this at home, as i am not sure about the taste. But after hearing very good reviews about this morkootan, finaly i tried this mambazha morkootan. It tasted very nice and  went well with plain rice and spicy potato masala.

Mango paratha is a interesting recipe which flashed me, while i was having my lunch with my friends yesterday. We went out for lunch yesterday in Kailash parbat restaurant here, and they have a wide variety of fresh mango recipes in their menu card. Being a hardcore fan of mangoes, i was simple gazing at the list and one of my friend ordered a mango drink from that list. Though it is a juice, they added little crushed cumin seeds in that. I tasted that and was quite impressed by its taste. On our way back picked up of big bag full of mangoes and today morning, with my own creativity, did this simple mango paratha. It turned out pretty good and i had this for my lunch with boondi raitha. Try this out at home and enjoy the summer with mangoes. Stay tuned for more mango recipes coming up on Jeyashri's kitchen.

Mango float recipe|Easy dessert recipes


Mango float is an easy filipino dessert, which i recently learned from my helper. This dessert involves only 4 main ingredients, graham biscuits, fresh mango, cream and condensed milk. Actually Varsha wanted to make this and post for Mother's day on May 8th. But last evening she told she has loads of work to finish and couldn't make it, so i proceeded to make this mango float. It is a very simple and easy dessert and doesn't involve any cooking. So kids can easily make this for their mom as a surprise, on the occassion of Mother's day.  Actually Varun is planning to make a video post on Mother's day, that it self is a surprise for me. Tamil new year is celebrated on 14th April every year. Generally we do raw mango pachadi, neem flower rasam for Tamil new year. While casually talking with my friend's mom few weeks back, she was telling about this ripe mango pachadi, and when she was telling about that itself i was so tempted to try it out. When i saw the ripe alphonso mangoes in the nearby Indian shop few days back, i immediately picked it up and tried it today at home. It tasted very well . For a change from the usual mango pachadi with raw maanga, try this ripe mango pachadi for this Tamil new year. Mango season started in full swing. My first order from Ministry of Mangoz has arrived last week. the alphonso mangoes were very tasty and they are organic too. We are really enjoying the mangoes and side by side i am trying out some mango recipes too. Mango pudding i wanted to make last year itself but some how missed it out during the mango season. I made this 2 days back and we all really enjoyed this mango pudding. I made this with agar-agar as i wanted to make the  vegetarian version of mango pudding.

Mango-choco-milk-pops  Last week i got the season's first mangoes from an Indian shop, and i was totally excited to see them . For those who follow me on twitter know, as i already mentioned it there. As the season is slowly coming up here, the  mangoes for not very sweet, but nor very tasteless. They tasted ok, but varsha wanted me to make mango milkshake. I made for her and with one left over mango i made a mango chocolate Popsicle. I just added mango, cocoa powder, milk and sugar.It tasted very nice. Instead of cocoa powder you can nutella too.

AAM KA PAANA | RAW MANGO DRINK | SUMMER DRINKS RECIPES

Aam Ka Paana is  a very new variety of summer cooler, made with raw mango,which i was introduced by one of my relative few years ago. Though i liked the drink very much, i don’t know till date why i didn’t try this at home. Last week when i got a sudden craving for this raw mango drink and to my luck a friend of mine was getting ready to visit the Indian store for vegetable shopping and send me a SMS as what i need from there. Without any second thought i replied her that i wanted 2 raw mangoes. The next day i made this and thoroughly enjoyed the aam ka paana. So i am sharing the recipe of Aam ka paana today.

INGREDIENTS: [SERVES 3-4 GLASSES]

RAW MANGO 1
SUGAR 3-4 TBLSP
CRUSHED PEPPER 1/4 TSP
SALT A PINCH
CHAAT MASALA 1/4 TSP
CUMIN POWDER 1/8 TSP

METHOD:

  • Pressure cook the raw mango till 2 whistles.
  • You can cook it as it is. No need to cut.
  • Take out the skin and scoop the pulp of the mango.

  • Strain the excess water and add sugar, salt, chaat masala, jeera powder and crushed pepper to this.
  • Mix it well. I just pulsed in the mixer for even mixing.

  • You can freeze this concentrated pulp in the  refrigerator and serve it whenever u want.
  • I put a very small portion in the ice cube tray( 2 cubes) and mixed it with a 3/4 cup of water and had on the next day.
  • If using on the same day, add 2 tblsp of pulp mixture to a serving glass and add 1 cup of water and add ice cubes.
  • Mix it well before serving.

Note:

  • Sugar can be replaced with jaggery too.
  • The quantity of sugar depends upon the sweetness of the raw mango. If it is too sour add little extra sugar.
  • You can use semi ripe mango too.
  • You can add mint leaves before serving.
  • A dash of lemon juice can also be added while serving

MANGO SAGO PUDDING RECIPE | MANGO RECIPES

WITH EVAPORATED MILK

      This mango season i ate mangoes like anything and especially during the short visit to India we had mangoes after every meal as it is easily available everywhere, which is not possible here. So after putting few extra kilograms of  weight, i finally decided that i should put a full stop for buying mangoes and yesterday i got few Alphonso Mangoes and i made this easy pudding recipe. I have tried this pudding few times but every time i made with the Banganapalli mangoes as it won’t give nice vibrant color to the pudding, but no compromise on the taste.
   When i tried with Alphonso mangoes, it tasted so exotic and our friend’s family who joined us for dinner enjoyed this mango sago dessert. Check out my full collection of mango recipes.

INGREDIENTS:( 7-8 SERVINGS)
RIPE MANGOES 2 NO
EVAPORATED MILK 1/2 CUP
MILK 1 CUP
MANGO JUICE 1/4 CUP(OPTIONAL)
SAGO|JAVARISI 1/2 CUP
SUGAR 4-5 TBLSP

  • Wash and soak the sago in water for 1 hour.

  • Drain the water and cook it in 3 cups of water for 5-7 minutes till the sago pearls becomes transparent. When it is done drain the water and wash  the sago again in cold water.

  • Peel the skin of mangoes and make them into slices.
  • Reserve one big slice to for garnishing.

  • In a blender, blend the mango slices, evaporated milk, sugar,milk and mango juice(if adding) into a smooth paste.

  • Transfer the cooked sago to a big vessel.
  • when it is completely cooled add the mango milk mixture to this and mix well with a spoon.

  • Keep it in the refrigerator and serve chilled with finely chopped mangoes(which we reserved) on the top.

Note:
  1. If the pudding is very thick just add 1/4 cup of cool milk.
  2. Never add the mango mixture when the sago is warm, this will curdle the pudding.
  3. You can replace condensed milk for evaporated milk, in that case do not add sugar.

MANGO LASSI RECIPE | MANGO YOGURT SMOOTHIE

  Though i love to eat mango as it is, my kids wanted mango lassi after tasting many times in restaurants. So I made for them and i am sharing the  recipe of mango lassi.

INGREDIENTS:( FOR SINGLE SERVING)

MANGO PIECES 1 CUP
YOGURT 3 TBLSP
MILK 1/4 CUP
WATER 3-4 TBLSP
SUGAR 1-2 TBLSP
CARDAMOM POWDER A PINCH
MANGO LASSI
  • Blend all the ingredients in a mixer and serve immediately.
  • I used chilled milk. Always ensure that the milk should not be warm too.
  • This will make the lassi curdle.
  • Adjust the sugar according to the sweetness of the mango.
  • Never use sour curd.

MANGO SALSA RECIPE

      Mango salsa recipe is a easy recipe made basically with ripe mangoes . This can be had as a salad and also can be served as a starter along with  chips or nachos.I tried this with a couple times and even i tried with raw mango too. I loved that crunchiness too.

INGREDIENTS:

MANGO 1/2 NO
CAPSICUM 1/2 NO
ONION 1 NO
TOMATO 1/2 NO(DESEEDED)
MINT LEAVES FEW
CORIANDER LEAVES FEW
SALT TO TASTE
GREEN CHILLLI 1 NO
CHAT MASALA A PINCH
PEPPER POWDER A PINCH
LEMON JUICE FEW DROPS
SALSA

METHOD:

  • Peel the skin of the mango and cut it into cubes.
  • Chop the capsicum into small cubes.

  • Chop the onions finely. Deseed the green chillies and chop them finely.
  • Deseed the tomatoes and chop them finely.
  • Chop the mint leaves and coriander leaves finely

  • In a wide bowl mix all the ingredients and toss well.

  • Salsa is ready to serve.

Note:

  1. Finely chopped pineapple and pomegranate seeds can be added.
  2. Fresh corn kernells can also be added to the salsa.
  3. Red chilli flakes can be replaced instead of green chillis.
  4. Finely chopped strawberries , cucumber and avocado can be also be added.

EGGLESS MANGO CAKE RECIPE | VEGAN MANGO CAKE

     Few weeks back when i went to my grocery shopping the i picked the alphonsa mango pulp tin thinking that i will make the Mango ice cream again to surprise Varsha, my daughter. Since i made strawberry ice cream she told she wanted some cake from the mango pulp and when i  was searching  for a eggless mango cake in google  i came across this recipe in holy cow's space and this has been tried by many bloggers. Here is the recipe for soft and moist eggless mango cake.

INGREDIENTS:
ALL PURPOSE FLOUR 1 AND 1/2 CUP
BAKING POWDER 2 TSP
SALT 1/2 TSP
CARDAMON POWDER 1 TSP
MANGO PUREE 1 AND 1/2 CUP
OIL 1/3 CUP
SUGAR 2/3 CUP( APPROX. 11 TBLSP)
VANILLA ESSENCE 1 TSP

METHOD:
  • Sift the flour ,salt and baking powder along with cardamom powder.

  • Mix the oil, sugar, mango puree till the sugar dissolves.

  • Gently mix with the flour.

  • Transfer this to a a baking tin and bake in a 180 degrees preheated oven for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  • Cool it in a wire rack.

  • We had warm cake with vanilla ice cream.

Note:
  1. If using fresh mango peel the skin and chop the flesh of the mango into fine pieces and puree it in a blender.
  2. Do not over mix the batter.
  3. The cake turned out slightly dense .
  4. You can make it into cute cup cakes also instead of making into a cake.
