Overnight Savory oats recipe

Overnight Savory Oats recipes using quick cook oats, made in South Indian style curd rice. I have been eating Overnight Oats for the past few days. I am trying some combo of fruits everyday, but still after few days i craved for some salt version in the morning. So i tried the curd rice version and i shared that in Jeyashri's kitchen Instagram story too. It tasted so yum and i topped my Overnight oats with raw mango pickle and some pomegranates too. If you want to try a different version of oats do give it a try and i am sure you will love it. My next trial is with rasam and a cold rasam overnight oats😉. Also you can top it with vatha kuzhambu or some roasted crushed mor milagai too. Instead of pomegrantes you can add chopped grapes too.

Ragi rava dosa recipe, Instant rava dosa

Ragi rava dosa, crispy rava dosa recipe with ragi flour, rava and rice flour, apt for breakfast and dinner. Ragi | nachini | Finger millet is a healthy millet flour. Rava dosa rarely takes place in my kitchen as only me and Suresh likes it a lot. Ragi dosa is loved by every one at home and i make it almost every week. I have seen this Ragi rava dosa in Instagram, from Shanti aunty's post very long back and tried at home. Everyone loved it including kids. So i make this once in a while in my kitchen. Also i have posted in my Instagram stories too. I wanted to share this with everyone and made this ragi rava dosa today and took the video of the same too. Also you can make the potato masala and stuff inside to make ragi rava masala dosa. Do try this yummy Ragi rava dosa at home and let me know how it turned out.

Mango Masala poha recipe, Mango recipes

Mango masala poha, a mango based poha upma recipe, using fresh mango pulp, a super tasty masala poha upma recipe. Recently i went as a judge for a Mango Cookery competition organised by the Singapore Gujarati society. It was a treat for eyes and for the taste buds too. The creativity with which they cooked delicacies were awesome. I personally liked few recipes, though they didn't win the prize i want to try this out and post the recipe here. I tweaked the recipe to suit my taste buds. The Mango masala poha turned out so yum and we all loved it. Thanks to Mrs. Alpa for sharing this recipe. Mango Sandwich recipe, mango recipes

Mango Sandwich recipe, with fresh ripe mango and green chutney. When i got my first batch of ripe mangoes from India, the friend who brought it for me told that they make mango sandwich using ripe alphonso mangoes. She said it is very simple as just butter both sides of the bread and slit the mangoes into thin long slices and cover with another bread and serve. I was about to try this, but when i saw some left over green chutney in the refrigerator, i decided to try it along with green chutney. Mango pancake recipe, mango recipes

Mango pancake recipe with fresh mango puree, makes a perfect breakfast recipe for this mango season. Mangoes are in peak season now and being a mango lover, after tasting delicious organic mangoes, trying out some interesting recipes using mangoes for this season. Generally bananas are used in pancakes, but for a variation i tried pancakes with mangoes. It tasted too good and it's a sure treat for Mango lovers. Prep Time: 10 mins   |  Cook time: 10 mins serves: 1 | Author:
Mango pancake recipe with fresh mango puree, makes a perfect breakfast recipe for this mango season.
    Mango puree*  1/3 cup
    All purpose flour  1/2 cup
    Milk  1/4 cup
    Baking powder  1/4 tsp
    Butter  1 tsp
    Sugar  1 tsp (optional)
* I used fresh alphonso mango puree, you can use store bought puree too. In that case do not add  sugar.


Method:

  • Puree the mango, if using fresh mango.
  • In a wide bowl add all purpose flour. 
  • Add the mango puree, baking powder and butter.
  • Add milk to this.
  • Using a whisk blend this well into a lump free batter.
  • Add 1-2 tblsp of water if needed.
  • Keep this aside for 10 mins.
  • Heat a pan and add a ladle full of batter to make a pancake.
  • Once it is cooked on one side, flip on the other side.
  • Cook on both sides and take out from the pan. 
  • Repeat this for the rest of the batter. 
  • It yielded 3-4 pancakes for this recipe. 
  • Serve the pancakes hot. 
  • You can add few mango pieces on the top while serving.
Notes:
  • If making in bulk remaining batter can be kept inside the refrigerator .
  • You can use whole wheat flour or millet flour instead of plain flour.

Ragi Vegetable Kuzhi paniyaram recipe, South Indian breakfast recipe, using left over ragi dosa batter, serves a perfect snack or breakfast. Instant Cucumber Dosa recipe

Instant cucumber dosa | Southekayi dosa using rice flour and cucumber, super quick to make South Indian breakfast. Cucumber dosa is a popular North Karnataka recipe, i have heard about this a lot. Generally they make it using rice, the traditional way, by soaking, grinding and fermenting the dosa batter. But this cucumber dosa is made using rice flour and a super quick fix breakfast recipe. As cucumber has lot of water content in it this is a perfect recipe for this summer. Generally they grate the cucumber and add in the dosa, but i grind this along with other ingredients, so that the kids will eat without any fuss.

Ragi masala chaas recipe

Ragi masala chaas,prepared using ragi flour and spiced yogurt, a refreshing and filling summer coolant. Most of the summer day mornings, we don't feel like having breakfast and sometimes standing in the kitchen to an elaborate breakfast will be too tiring. This Ragi masala chaas can be made in 15 minutes and it's a quite filling drink too. You can pack this in a leak proof bottle to work also. You can adjust the consistency as per your preference. I have tried this few times but never get a chance to click the pictures. This morning, i made this for myself and finally had some time to click the pictures.

Moongil arisi dosai recipe , Bamboo rice dosa

Moongil arisi Dosa | Bamboo rice dosa ,South Indian Breakfast recipe,made using moongil arisi,a healthy and crispy dosa. Bamboo rice, has lots of health benefits. Traditionally payasam is made using Moongil arisi. I have come across this name many times but never seen this in the market. Recently when i saw this in Sri Murugan stores in Singapore,i thought i will give it a try. I have read about the health benefits of moongil arisi too. It is a high source of protein and very good for joint and rheumatic pains too. It helps in reducing Cholesterol levels too. For my readers in Singapore, you can find this Moongil arisi | Bamboo rice in  Sri Murugan stores, Singapore. Also this rice is available in small 250 gms packets too, so that it is easy for us to try out first and then buy in bulk. You can download their mobile app and order online too. Sri Murugan stores sells quality goods at affordable prices.
The dosa turned out so cripsy and the best part is kids loved it so much. When it is kids approved at home it is a bliss for mom. Go ahead and proceed to make this Moongil arisi dosa.

Sevai using Sevai nazhi | Idiyappam recipe

Sevai using Sevai Nazhi (சேவை நாà®´ி ,in tamil)Sevai | Idiyappam |String hoppers, is a popular South Indian breakfast or tiffin recipe. During my childhood days amma always makes sevai for tiffin and also it will be extended for dinner too. We never had idiyappam for breakfast. Sevai will always be done using sevai nazhi at out place. It is quite laborious but i still amaze at my mom as how she manages to do this tiring work even at this age with so much of enthusiasm. Though she was a working women, she used to make this sevai,after coming back from her work. Both mom and paati will sit together in the kitchen and do this 'Project Sevai'. this sevai takes place in my mom's kitchen especially when we have guests. Since many will not do sevai using sevai nazhi, she loves to serve them this rare tiffin for them. Recently my mom visited me and her 40 years old sevai nazhi is passed on to me. We are not a big fan of idiyappam or sevai but i wanted to try my hands on making this. Amma makes different varieties of sevai such as Lemon sevai, Thenga sevai, ulundu sevai, Thayir sevai and Vella sevai. When ever i wanted to make sevai, i use the instant ones available in the market.
 Though i helped my mom in making this many times, never tried on my own. I don't know how many of you will try this at home, but i want to post this recipe just for my memory and also to kindle the memories of many people reading this post.

Palak poori recipe | Spinach puri

Palak poori recipe is poori made with spinach puree. I have tried Palak poori once for my Kutties Kitchen cook book. Recently i got a box of baby spinach from the Fair price shop here in Singapore. I wanted to make Dal palak as kids love it very much. I was thinking of some other recipe using palak leaves then this palak poori recipe flashed my mind.I wanted to make a video of palak poori recipe but couldn't do it. We enjoyed the palak pooris with channa masala. You can make this pooris for kids lunch box too. Use a cookie cutter to shape the pooris and make it kids friendly.

Chilli cheese dosa | Cheese dosa recipe


Chilli cheese dosa is a delicious cheesy dosa made with easily available ingredients. When the kids are fussy about usual dosa and chutney varieties, make this Chilli cheese dosa and i am sure they will love this a lot. It is similar to the chili cheese toast which we make with bread. I made this Chili cheese dosa few days back and posted in my Instagram story. I wanted to make this post last week itself but somehow couldn't do. Maravalli kizhangu adai recipe| Tapioca adai

Maravalli kizhangu| mara seeni kilangu|மரவள்ளி கிà®´à®™்கு(in tamil) also called as Kappa in Kerala, Tapioca in English is a root vegetable. I have always eaten maravali kizhangu chips during my childhood days, fondly called as kuchi chips. I have never tasted maravalli kizhangu in any form. My sister was telling me from last year to try maravalli kizhangu adai. I am clueless of the recipe and didn't attempt to try at home. Last week while casually searching for something else in the book shelf, came across the recipe of Maravalli kizhangu adai, in Revathy shanmugam madam's cook book. Custard Powder banana pancake, Eggless pancake recipes

Custard powder pancake with banana puree, these soft fluffy eggless pancakes was my breakfast yesterday morning. I got the idea of  Custard powder pancake, i got after seeing this Instagram post. She used pumpkin puree in that and i replaced that with banana puree. It turned out so soft and tasted so yum. We have 2 pancake fans at our home, the moment i say pancake, the eyes will wide open with happiness, one is Varsha and another one is my helper. Somehow me, Suresh and Varun are not a great fan of pancakes but we still eat whenever we make it at home. This Custard powder pancakes were so flavourful and me being a big fan of fruit custard loved the pancakes. I used the measurements of my Eggless Whole wheat pancake recipe.

Ajwain paratha | Easy paratha recipes

Ajwain paratha, is made with whole wheat flour and ajwain | omam in Tamil |carom seeds. It is a very simple North Indian paratha, can be made for breakfast or lunch or even dinner too. A perfect one to pack for Lunch box too. Last week, while i was busy with Diwali preparations, saw this ajwain paratha in Veggie wok's Instagram story. It was super tempting and i decided to make this soon. Finally today before making this ajwain paratha, cleared my silly doubts with anamika and made the parathas. Me being a huge fan of parathas, loved it and the ajwain flavor complimented the paratha well. Check out my

  Preparation Time : 10 mins | Cooking Time : 20 Mins |Makes: 5

     Whole wheat flour| atta  1 cup
     Salt as needed
     Oil  few drops
     Ajwain  1 and 1/2 tsp
     Red chili powder  1 and 1/2 tsp
     Ghee or Butter   as needed (to make parathas)
Method:
  • In a wide bowl add the wheat flour and little salt. 
  • Add water little by little and make a soft dough.
  • Divide this into equal big lemon sized balls.
  • In a bowl mix the red chili powder with 2 pinches of salt and mix well.
  • Take one dough ball and dust it with dry flour.
  • Spread this into a roti.
  • Add few drops of ghee on this and spread it.
  • Sprinkle red chili powder and spread it on the rolled roti.
  • Sprinkle some ajwain on this and press it gently with your fingers.
  • Fold this into a semi cirlce and then bring both the edges together.
  • If you want to make it as a square paratha follow my masala square paratha recipe.
  • Dust this with atta and roll it into a triangle roti. 
  • Heat a pan and cook the rotis on both sides and drizzle with ghee or a dollop of butter.
  • Cook till you see nice golden brown spots on both sides.
  • Repeat this for the rest of the dough.
  • Serve with plain yogurt or some pickle.
  • You can have this ajwain paratha with tea /coffee too.

Notes:
  1. You can make this in any preferable shape of your choice.
  2. To make it very simple, knead ajwain and red chili powder to the dough and make the parathas.
  3. The parathas tasted very nice with plain yogurt.

Mint Coriander Chutney recipe for dosa, idli

Peanut flavored mint coriander chutney, goes well with idli and dosa. Last week while making puliyodarai for lunch box, the peanut box was kept on the kitchen counter. I was busy preparing chutney for dosa on the other side and instead of adding urad dal or channa dal for making the chutney, i added peanuts and turned out so well. Varsha, my daughter is a huge fan of green chutney, loved this peanut flavored mint chutney. Today i made this again to post the recipe of Kothamalli pudina chuntey. Masala dosa with video

Masala dosa,or Masal dosai is a popular south Indian breakfast recipe. I wanted to post masala dosa recipe when i posted Hotel Saravana bhavan style mini tiffin. But somehow missed it out. I got a tip of cooking onions in the pressure cooker along with the potatoes, from my suresh's chitti. Though i make masala dosa rarely at home but whenever i make i cook the onions along with potato. You can make it for poori masala too.
During my childhood days my grandmother makes yummy masala dosa. Once we had our friends who has come for night study to our house, when they are about to leave by morning 6.30, she was ready with dosa batter and potato masala. She didn't let anyone to go without tasting the masala dosa. Happily they all had the yummy dosa early in the morning.

Veg uttapam | uttapam is a South Indian breakfast recipe, generally made with left over idli|dosa batter. I have posted small uttapam recipe in jeyashri's kitchen inspired by Murugan Idli kadai. I actually wanted to try 5 taste uttapam but since i have already posted mini masala uttapam recipe, i thought i will make the normal veg uthapam. The uttapam was quite filling and loaded with veggies. You can serve this without any chutney or sambar too.

Ulundu Sevai recipe | Urad dal idiyappam

Ulundu sevai|urad dal idiyappam | paruppu sevai is a traditional sevai recipe made in our home using home made fresh sevai. We used to help out amma and patti, in making the sevai using sevai nazhi. I tried ulundu sevai with Instant sevai. Amma always used to make sevai especially when w have guests. She makes different varieties of sevai and this ulundu sevai is the classic among all. But during my childhood days i am not a big fan of this as i prefer coconut sevai very much. Yesterday when i had guests for dinner i made this ulundu sevai. Though i made this with Instant sevai, the tasted closely matched with of amma's. The urad dal mixture recipe is the same one we use for ulundu kozhukattai with video. Let's learn how to make ulundu sevai with step by step pictures.
